Casseroles are good common ground in our house, and this one seemed easy and delicious!

I made this in full, serving with the optional avo and chipotle mayo. The veggie broth mixture got to a boil more quickly than I expected; I thought I would have some time to prep the other ingredients while that was going, but, once again, I underestimated the power of the gas stove. As a result, I think I lost a little bit of the liquid, so this turned out a tad drier than it was perhaps supposed to, but this was fortunately not a devastating error.

Overall, this was good, but definitely not the best dish I've made recently. Could definitely have been the liquid issue, but I wasn't overly impressed by this I would say.

Slow Cooker Sausage & Potato Casserole

Hey wacky question but I want to put it out there:

I have a friend going through a rough time and I want to make them some kind of casserole dish that they can freeze and reheat, so they don't have to worry too much about cooking for the next few days.

My go-to tends to be lasagna but that's pretty common I think? I want to avoid them ending up with multiple lasagnas. Does anyone have any recommendations for an alternative that reheats well?

Cheesy chicken and rice bake

Tonight's concoction in the making!

Basically just fixing a little fried cabbage with plenty of onion, sweet red pepper, and an extremely Swedish take on chorizo that I had to try.

"A SPICY AND WELL SEASONED SAUSAGE. FREE FROM MILK AND GLUTEN.

RED PEPPER & CAYENNE"

This reminds me more of a cross between kielbasa and bockwurst with a little chili heat, but it is pretty good stuff. Probably worth trying in some red beans and rice.

But, on that note tonight, I decided to throw some in with the cabbage and some of the Creole seasoning I finally mixed up more of recently. Because I had an urge for cooked cabbage.

To go with that, I was originally thinking of some kind of potatoes. But, I have one good helping of a cheesy asparagus rice casserole to get out of the fridge, and that's also less work. It'll do.
