Some more assorted meals I've had over this past while (at least the pretty ones, they aren't always this photogenic). Mostly dinners and breakfasts.

Low-Carb Spinach & Feta Muffins
79cals each, take 39 mins
These little snack muffins with spinach and feta are the perfect addition to your lunchbox! They're not heavy on your stomach and contain plenty of vitamins and protein. Plus, they require very few ingredients and are super quick to make! Tip: You can also use frozen spinach for this recipe.
Ingredients for 6 servings
• Fresh Spinach (9 oz)
• 2 Eggs (5 oz)
• Salt and Pepper (to taste)
• Feta Cheese (3 oz)
Instructions for 6 servings
1. Preheat the oven to 160°C / 320°F.
2. Heat the spinach in a large pan over medium heat until it collapses.
3. In the meantime, combine the eggs, feta, salt and pepper in a bowl.
4. Next, mix in the spinach.
5. Fill the wells of a muffin tin with the spinach and egg mixture and bake for approx. 30 minutes.
6. Enjoy!

So I panicked when I binged yesterday. But in reality I stayed under 1,400 calories. (That’s WAYYYY too much for my disordered brain 🙃) But to other people, that’s still considered calorie restricting and healthy dieting. I have to remind myself of that so I don’t lose motivation. I’ve dropped a pound and the month isn’t over yet. It’s only just started. It’s the first week. If I keep this up by summer next year, I’ll be so thin 🥰

my problem is that I really fcking love cooking
like..
REALLY LOVE COOKING
so.. I figured I could post some recepies here
starting with some cream soup I made yesterday
Tumblr media
the recepie is simple, all you need is some vegetables, water and salt (I'm gonna put here a recepie for 1 serving)
broccoli (25g)
half a stick of celery
carrots (~35g) (35.83g for the crazy bitches)
cauliflower (~30g) (30.83g)
potato (peeled) (20g)
water (115ml)
salt (about 0.5tsp) (put more or less depending on your preference)
basil (1 leaf) (0.5tsp flakes) (preferably fresh but if you don't have fresh you can use dried leaves or flakes)
stock cube (a small piece) (for half a pot of soup (about 6 servings) i used half a cube)
☆instruction timee☆
cut the vegetables into cubes (besides celery)
boil water, put the vegetables into the boiling water, add salt, stock cube and basil
boil for about 25 minutes (with the lid) , (for the whole pot I boiled it for about 30-40minutes)
take out the celery stick and let boil for another 5minutes without the lid
take off from the stove and put aside to cool down a little
use a hand blender to blend everything into a cream (or a normal blender)
taste and add salt and pepper if needed
enjoy!! :)

⋆˚。୨୧˚。⋆ Chocolate Almond Milk ⋆˚。୨୧˚。⋆
(I know there are some low cal brands of chocolate almond milk out there, I've seen Blue Diamond Almond Breeze has a 40 cal one), but this is for if you want to make it yourself! :)
.₊˚⚘·₊˚ Ingredients ˚₊·⚘˚₊·.
1 cup low cal almond milk ≈ 30-35 cal (depending on what brand you use)
2 teaspoons cocoa powder ≈ 8 cal
1-2 packets zero cal sweetener (I used 1 sugar twin)... or... If you only have regular white sugar.... 1 teaspoon ≈ 15 cal
Small splash vanilla extract ≈ 4-6 cal
.・。⋆·₊˚₊·⋆。⋆·₊˚・。⋆·₊˚₊·⋆。⋆·₊˚・。⋆·₊˚₊·⋆。⋆·₊˚・。⋆·₊˚₊·⋆。⋆·₊˚.
Mix everything together in a blender or shake thoroughly in a bottle with a secure lid.
1 cup serving can be on a range of 42-64 calories at most, depending on the ingredients you have.
I've been enjoying it quite a bit lately, especially with the summer weather. I really like the almond flavour with chocolate, and it's not too sweet! :) Though I will say, I have gotten a few small bits of unmixed cocoa powder when I've made it, but they don't affect the final result to me! :3
