Caper Hollandaise Sauce

This simple Caper Hollandaise Sauce is nonetheless moreish, and a delight on poached fish or eggs. Happy Friday!
Ingredients (makes about 1 ¾ cup):
a large lemon
3 large egg yolks
2 heaped teaspoons Dijon Mustard
2 ½ tablespoons cold unsalted butter, cut into small chunks
half a dozen large capers
Thoroughly squeeze the juice of the lemon.
Fit a small bowl over simmering water, and whisk mustard, egg yolks and lemon juice to blend. Without stopping whisking, gradually add butter chunks to the yolk mixture, one at a time. Whisk until butter is fully incorporated and Hollandaise is smooth, shiny and slightly thickened.
Finely slice capers, and stir into the Hollandaise. Keep warm.
Serve Caper Hollandaise Sauce with fish or Eggs Benedict.

With the shittiest filleting I’ve ever done I made salmon with asparagus and hollandaise (I’m going to wait until dad’s not sick and has more of an appetite again before making lemon caper sauce salmon) and it’s really good :) (even though I left the salmon in the oven for longer bc I was still needing to whisk the hollandaise)
I got the brown free range eggs (still on sale thankfully) specifically to make hollandaise with 😌
Now to. Devour the flesh that remains on the bones (mum will Eviscerate the poor fish to make sure there are no bones so this part’s for me!) (the plate shown is mum’s bc she’s still on the phone and I’m nearly finished my plate portion)
Ah yes and now that I have a bunch of egg whites (and some uh. Mixed egg oops. I’ll probably try to make meringues or marshmallows or something?)

we went to the beach to eat burritos and watch the sunset, I am so grateful to live in a place where I can just decide to go to the beach and then 15 minutes later I'm there
finished getting my new desk and chair and all my equipment ready, I'm really happy with the whole setup
there was a puzzle-themed thing at work and at like midnight the night before I had an idea for a puzzle I could make for it and I managed to pull it off in like an hour and a half, pretty proud of myself for that
rewatched Cinderella (2021) and confirmed that Billy Porter as the fairy godmother was exactly as incredible as I remembered

BV!Kylo's favorite breakfast is hands down eggs benedict. But specifically, lobster eggs benedict. He's been known to get restaurant staff fired if the Hollandaise sauce breaks! He'll pair it with a mimosa, because he's a fancy sonofabitch.

Steamed Lemon Dogfish

A simple yet tasty recipe, this Steamed Lemon Dogfish makes an excellent Friday dinner. Have a good one!
Ingredients (serves 4):
610 grams/1.35 pound dogfish (prepared by your fishmonger)
1/2 teaspoon fleur de sel or sea salt flakes
1/2 teaspoon freshly cracked black pepper
1 large lemon
Fill a large pot to three-quarters with water, and fit a steaming basket onto it.
With a sharp knife, cut dogfish into thick slices.
Arrange dogfish pieces in a layer in the steaming basket. Season with fleur de sel and black pepper.
Cut half of the lemon into slices, and scatter them onto dogfish pieces. Thoroughly squeeze the juice of the remaining lemon halve over the fish. Cover with the lid, and place on the stove-top, over medium-high heat.
Once the water is boiling, reduce heat to medium, and steam, 25 minutes, until the fish is cooked through.
Serve Steamed Lemon Dogfish hot, generously drizzled with Caper Hollandaise Sauce, and with a side of fluffy rice, boiled potatoes or quinoa.

There are two famous streets in Savannah, one is Jones Street which is considered to be the prettiest street in Savannah and in the United States. It is a charming street with a canopy of trees, brick streets and historical homes. The second is Broughton Street, which is full of shops, art galleries, Cat Cafes, bars and restaurants. My favorite shop ended up being The Savannah Bee Company that sells delicious honey, mead and other honey products.
In Savannah I was surprised at how much the community revolved around the local college, Savannah College of Art and Design. Many locals loved the college and the students that go there and it sounds like they have a great relationship with the community. SCAD as the locals call it have restored many of the historical buildings, such as the armory and a local apothecary that was turned into a restaurant.
The Chive Seabar and Lounge is located on Broughton Street and is a nice restaurant for great food or drinks. It was a fancy lounge that reminded you of being at the ocean. I went for brunch and loved the atmosphere, service, cocktails and food. I liked the atmosphere because it was a little more intimate than a crowded tourist restaurant and it was quiet. The Crab Cake Benedict was the best brunch I have had in a long time. I love eggs benedict and then they add a crab cake to it and it makes the dish ten times better! The crab cake itself was delicious, it was full of crab meat and fried perfectly where you could still taste the crab. The pairing with the green fried tomato gave it a very southern feel. Topped with the poached egg this dish blended very well together with the sweet, savory and crunchy and it melted in your mouth. This dish is everything you want in a breakfast. This might have been my favorite dish I tried in Savannah. When I go back to Savannah I will be visiting the Chive Seabar & Lounge again for brunch and dinner!
Based on presentation and taste of the Chive Seabar & Lounge Crab Cake Benedict I would rate this brunch a 10 out of 10.
