Garlic Herb Roasted Potatoes, Carrots, and Zucchini 🌱
Ingredients:
Vegetables:
• Nutritional yeast seasoning
• 1 pound Potatoes (baby potatoes or Yukon gold), washed and diced
• 3-4 medium Carrots, peeled and sliced into sticks
• 2 Zucchinis, sliced into rounds
• 3 cloves Garlic, minced
• 1 teaspoon Dried thyme
• 1 teaspoon Dried rosemary
• 1 teaspoon Dried oregano
• Salt and Pepper, to taste
Instructions:
1. Preheat the Oven: Preheat your oven to 425°F (220°C).
2. Prepare the Vegetables: Wash and dice the potatoes into bite-sized pieces. Peel the carrots and slice them into sticks. Slice the zucchinis into rounds.

unbelievably easy plant-based meal #4: harissa sweet potato & cucumber salad pitas
does this photograph well? not really! but is it unbelievably delicious and almost criminally easy to prepare? yes x 10000!!! this is an old hello fresh recipe that my bff liz recently made for me and it is soooo good and so low effort.
what you need: one sweet potato, one cucumber, some plain Greek yogurt or mayo, dill if you like it, white wine vinegar, whole wheat pita pockets (my store didn’t have pockets so I’m just doing pitas), and harissa (kinda hard to find sometimes but you can buy a giant thing of it on amazon)
what you do:
preheat the oven to 450. chop the cucumber and the sweet potato into half moons that are like… idk… a quarter inch thick. put the sweet potatoes only on a baking sheet, drizzle with olive oil, sprinkle with salt pepper and harissa, and pop it in the oven for 18-20 min.
put the chopped cucumber into a bowl. dump in some white wine vinegar (doesn’t have to be a ton but you’re gonna let the cucumbers kinda marinate in there while the sweet potatoes cook. add a little olive oil, salt and pepper, and some chopped dill if you like it.
make your sauce in a small bowl—the tastiest combo is mayo + garlic + salt pepper + lots of harissa, but I sometimes do plain Greek yogurt instead because I like the tanginess of the yogurt and it’s a bit healthier. both good! once I’ve done this step I usually pause to clean up everything else (it’s minimal mess).
when the potatoes are close, lightly toast your whole wheat pitas and get stuff ready.
enjoy!!! keeps well in the fridge for a couple days too—just cover or wrap everything and then you can pop the sweet potatoes in the microwave & toast a new pita for lunch.
additional thoughts:
this one is fun because it’s INTERACTIVE (you get to make your own pita with your desired proportions) and it’s virtually no prep apart from easy slicing and a little mixing.
clean up is super easy especially if you use foil on your baking sheet and clean up as you go
#for portion sizes I usually do one pita piled high with stuff & cut in half#but you do you it’s very yummy#i do recommend whole wheat pita over white/regular pita though#i think it’s tastier and it’ll keep you full longer#more fiber + a lower glycemic index value which is good if you have pcos or are watching blood sugar#recipe book tag#unbelievably easy plant based meals#food

Whatever is triggering my inflammation I don't know, but at this point it seems inflammation is the source of my headache in some way. So I did a bit of a dive into supplements and discovered I probably have not been getting ideal amounts of the best anti-inflammatory omega-3 fatty acids for years because of my vegetarian, and let's be honest, not always nutrtionally complete, diet. So I started fish oil supplement but I also ordered a vegan one made from algae.
There was a supplement called sulforaphane that seemed really great for inflammation, but it's really hard to keep in its active form and was expensive enough that instead my next project is going to be figuring out how to like raw broccoli because apparently it's full of it.
#I'm thinking food processor and mix it into hummus maybe?#I swear I'm skeptical of the supplement industry as a whole because it's so poorly regulated by any medical authority#and so easy to break into and start selling for exorbitant prices with claims that aren't super well backed up#but I checked everything I bought had actual robust data from human studies and didn't base any decisions based on internet listicles#that were written by AI#Also feeling more interested in cooking and eating real meals lately so I'm going down a gradual path to overhaul basically my whole diet#I stumbled on Rainbow Plant Life recipe videos at just the right time#while I will not be doing anything nearly as elaborate as her recipes I could see myself enjoying a lot of modified versions

Cauliflower Recipe -Wholesome bellies
Now, how good does this look? ?
What I love about cauliflower is how versatile it is, and this dish not only looks impressive. It tastes incredible ?
I start by par-boiling the entire cauliflower for about 10 minutes, head down.
Then, I make a marinade using yoghurt (vegan or dairy works), and I mix it with salt, paprika, cumin powder, and coriander powder.
Rub it all into the cauliflower and top with lemon zest and panko breadcrumbs. Touch salt and peper.
Bake at 180 degrees, about 30 to 40 minutes.
Serve plain or make a cashew of cream or spicy tomato sauce to sit it on.
