🌱 Orecchiette con le cime di rape.
Un piatto della mia tradizione pugliese facilmente veganizzabile, infatti basterà eliminare le acciughe dal soffritto e il piatto sarà interamente vegetale.
Per 4 persone serviranno:
320 gr di orecchiette
1 kg di cime di rapa
50 gr di pan grattato
3 spicchi di aglio
5 pomodori secchi
Olio evo q.b.
Peperoncino q.b.
Lievito alimentare q.b. (facoltativo)
Procedimento:
In una padella riscaldate l'olio e fate rosolare l'aglio e il peperoncino, mentre in una pentola fare cuocere in acqua bollente le cime di rapa per circa 5 minuti.
Passati i 5 minuti di cottura delle cime, aggiungete nella stessa pentola le orecchiette e fate cuocere tutto per altri 5 minuti.
A questo punto scolate le orecchiette con le cime di rape e fate saltare il tutto con il soffritto, se è necessario aggiustate di sale.
Per impreziosire il piatto potete aggiungere del pan grattato precedentemente tostato in padella con olio, pomodori secchi sott'olio e lievito alimentare.

This katsu was SO good and simple I gotta give you the recipe:
Ingredients:
Golden curry
Vegetable stock cube
Potatoes
Carrots
One onion
Method:
Dice one onion and chop potatoes and carrots (You figure out how many) I like chopping the veg all asymmetrical and chunky so it looks all ghibli
Heat olive oil in saucepan and put the onions, potatoes and carrots for five minutes
Fill about 2/3 of the pan with water a with a vegetable stock cube and boil for 15 minutes
Throw in about 3 golden curry cubes until they've dissolved and it's the thickness that you like.
That's it!
Eating this SO MUCH lately I heckin’ love katsu but usually make it differently, this is way simpler and there’s always too much so I’ve been putting it in the fridge and heating it up with a bit of water again the next day.

As it’s veganuary and I’ve somehow successfully been about 90% vegan for three years now after my OH and I started veganuary and never felt the need to stop, I’m contributing our easy cauliflower tacos recipe on here.
- Take ready-bought fajita mix from the shops, add olive oil, garlic, salt, pepper, and a handful of fresh herbs plus some lemon juice and mix into a paste. With a brush, paste it onto some torn-off bits of cauliflower that you put into a roasting tin, and stick it in an oven at gas mark six for half an hour.
- Take taco shells and line them with rocket lettuce, and add a couple of jalapeños and a couple of home-made pickled onions, or some vegan cheese. It’s entirely what you would normally like to have in tacos.
- The cauliflower takes about 30 minutes to roast. After about 20 minutes, take a roughly chopped onion and a red or yellow pepper. Take the rest of the packet of fajita taco mix you’ve bought from the shops and mix it up again into the same paste, brush the veg with it and throw them with a little bit of extra oil in a frying pan for the vegetables. Stir-fry them up.
- Then after half after half an hour take out the cauliflower, mix it with the veg and spoon into the taco shells. Simples!
He does the majority of the cooking because I’m usually too fatigued these days. From someone who barely ate vegetables when we got together, long years ago in the Second Age of Middle Earth 😜I’m incredibly proud of him and the skills he has developed.

Hey! I know this is early lol, but I was wondering whether you or your followers have any ideas for workplace initiatives for Veganuary? I've been vegan for years myself and I want to encourage others to take part in Veganuary. I'll likely share some websites with recipes and maybe other resources, but it would be great to do something a bit more engaging. Any suggestions would be appreciated!
I've managed a few activities like this as part of my job, so I can definitely offer some tips on what has worked for me! Firstly, you should speak to management about getting some sort of budget. You can do much more if you have some money to throw at it, even if its just £100 of petty cash or something, that can fund prizes and giveaways which will increase engagement every time. Every company pretends to be big on employee engagement and environmental responsibility, so pitch it on that basis.
Some of the things I have found really popular:
Food giveaways - get a vegan food truck on site if you have budget, or just give away vegan goodies for people to try. People won't care that it's vegan so long as it's free.
Bakeoff competitions, either in person or through photos
Vegan potluck at lunch for work, encourage people to take part with a competitive element
Ask people to share their best plant-based recipes, randomly select an entry to win a prize like a vegan hamper, cookbooks, an air fryer etc.
Promote sign-up to Veganuary through their website, offer incentives for sign ups or just open a discussion thread for people to share their experiences/difficulties
Share resources through email on the benefits of plant-based food, focusing on the environmental aspect is something nobody will shout at you for, but if you bring animal ethics into it, you're much more likely to get pushback.
Sharing a daily recipe for people to try, if you have some sort of internal social media people can post on, ask them to submit pictures of their attempts and get people to rate them, like ratemyplate.
These are just a few of the things I have had success with, but you'll know your own workplace and it's culture better than I do. If you want to run anything by me closer to January, feel free to send me a message, I'd be happy to weigh in on it.
