You should be starting a recipe book. I don't give a shit if you're only 20-years-old. The modern web is rotting away bit by bit before our very eyes. You have no idea when that indie mom blog is going down or when Pinterest will remove that recipe. Copy it down in a notebook, physically or digitally. Save it somewhere only you can remove it. Trust me, looking for a recipe only to find out it's been wiped off the internet is so fucking sad. I've learned my lesson one too many times.

Easy Healthy Greek Chicken Bowls
Ingredients: For the Chicken: 4 boneless, skinless chicken breasts or thighs 2 tbsp olive oil 1 tsp dried oregano 1/2 tsp garlic powder 1/2 tsp onion powder 1/4 tsp salt 1/4 tsp black pepper 1 tbsp lemon juice For the Bowl: 1 cup cooked quinoa or brown rice (or your choice of grains) 1 cucumber, diced 1 cup cherry tomatoes, halved 1/2 red onion, thinly sliced 1/2 cup Kalamata olives, pitted and sliced 1/2 cup crumbled feta cheese 1/4 cup tzatziki sauce (store-bought or homemade) Instructions: Cook the Chicken:
Preheat your grill or a large skillet over medium-high heat. In a small bowl, mix the olive oil, oregano, garlic powder, onion powder, salt, pepper, and lemon juice. Rub the mixture all over the chicken breasts or thighs. Cook the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is golden brown and cooked through. Remove from heat and let rest for a few minutes. Prepare the Bowls:
While the chicken is cooking, prepare the ingredients for the bowls. Cook quinoa or rice according to package instructions. Dice the cucumber, halve the tomatoes, and slice the red onion. Slice the Kalamata olives. Assemble the Greek Bowls:
In each bowl, start with a base of quinoa or rice. Arrange the cucumber, cherry tomatoes, red onion, olives, and crumbled feta cheese on top of the grains. Slice the cooked chicken and add it on top of the veggies. Drizzle with tzatziki sauce and serve.

More meal prep! I have lost 20lbs since the beginning of the year and feel very proud of my progress! I feel a lot healthier and have been able to exercise more without fatigue...and a lot less lethargic over all!
