Mum defrosted the Hokkaido scallops, blanched them in boiling water and diced up the shellfishes for this deluxe Scallop Omelette. For the Leafy Cabbage Stir-Fry, she opened a can of mini abalones, sliced the char siu and added minced pork. There you have it, my home-cooked dinner.

Lotus Root Stir-fry

Sauce
2 tbsp soy sauce 2 tbsp vegan fish sauce 2 tbsp pure maple syrup 2 tbsp rice wine vinegar 1 tbsp sesame oil 1 tsp ginger paste 1 tsp garlic paste 1 tsp salt 1/4 tsp black pepper
1 tbsp olive oil 2 leeks, tops and bottoms removed, chopped 1 red pepper, cored and chopped 1 green pepper, cored and chopped 1 pack (454 g) frozen lotus root, defrosted and chopped
2 cups white mushrooms, chopped 2 packages (160 g each) bean curd, chopped (or 1 block extra-firm tofu)
1/2 cup toasted pumpkin seeds 1/4 cup toasted black sesame seeds 6 green onions, chopped
In a small glass bowl, whisk together the sauce ingredients. Set aside. Heat olive oil in a large saucepan over medium-low heat. Sauté leeks for several minutes, stirring frequently. Add the green pepper, red pepper and lotus root and sauté for about another 5 minutes, stirring frequently. Add the mushrooms, bean curd and sauce and continue to cook for about another 5 minutes, stirring frequently. Remove from heat.
Stir in the pumpkin seeds, sesame seeds and green onions.
Serve over black or white rice.

Crispy tofu and empty-the-fridge stir-fry! Bean sprouts, carrot, bell pepper, spinach, and onion, seasoned haphazardly with dashi, mentsuyu, ponzu, oyster sauce, chili flakes, and sesame seeds. Turned out great! Also we have to eat at the table now, like grownups, because we have a dog :) It’s wonderful :)

Made an Orange Chicken Stir-Fry for dinner. Kinda like how tangy it turned out.
Ingredients
1 lb. chicken breast
2 medium stalks celery
1 navel orange
1 lime
1 tsp. soy sauce
5 oz. can bamboo shoots
5 oz. can water chesnuts
4-5 oz.* crimini mushrooms
Olive oil
Directions
Dice the chicken and place in a skillet on the stovetop. Drizzle olive oil and stir to coat chicken. Turn stovetop heat to medium-high and cook the chicken until browned (~5min).
Juice the orange and the lime and combine their juice in a single container. Add the soy sauce to the juice. Turn heat to medium-low and add the juice mixture.
Chop and add the celery, the mushrooms, the bamboo shoots, and the water chesnuts. Cover and cook for ~10min, stirring occasionally.
Remove from the heat and let stand for 3min to cool. Serve with a side of rice (the rice shown here is Lotus Foods' White Jasmine + Forbidden Rice)
*For the crimini mushrooms, I did not measure out the number exactly. I just estimated the number I needed based on what "felt right" for this recipe.

Pork and pak choi stir-fry with herbs de Provence flavor (prose, cooking)

A dish using the French spice compound herbs de Provence. Fry half an onion in a frying pan with olive oil until soft, add chopped pork and fry until no longer red, add pak choi and fry until heated through. Finally, add commercially available herbs de Provence (a blend of nine herbs), homemade lavender flowers, and grated garlic, and remove from heat. The Herbs de Provence flavor is striking.

Mum bought Roasted Duck (烧鸭) from Chong Pang during her morning outing to the market. She prepared this Spicy Tiger Prawns using our own blend of chilli and spices mix. For the vegetable, a Garlic Chives with Minced Pork stir-fry to give the daily plant fibres.
