People be like "Russia is not imperialistic"🤡 - and then the most famous Ukrainian chef cannot open a restaurant of the most famous Ukrainian cultural food in Japan, because Japanese widely consider borscht a Russian dish and so would avoid the restaurant thinking it to be Russian🫤🫤🫤🤯🤯🤯

Do you have your own "spice"? And I mean not an intoxicating substance that you sometimes like to take more than other people do normally, for example when I was a kid I sometimes liked to eat a few fool small spoons of Nesquik powder and other like this milk flavoring cocoa, now I sometimes call pringle paprika seasoning my "spice" because of unique taste for me.
I put curry powder in nearly everything I cook.

Lunch at Kyoto Cuisine Ujigawa (京料理 宇治川)
I was absolutely starving at this point and decided an early lunch was definitely on the cards. I noticed that Kyoto Cuisine Ujigawa was opening at 11am, and there were already three people in line. Naturally, I joined them—no way was I risking missing out on food! I had my sights set on some matcha soba and tempura.
By some miracle, I managed to snag an amazing seat with a view of the river. The room filled up faster than a tube carriage at rush hour—packed with equally hungry people. The service was impeccable—quick, friendly, and clearly ready to handle a crowd of ravenous diners.
I ordered the tempura set (天丼セット) for 2,200 yen. Now, as someone on a budget, I don’t usually splurge on meals over 1,000 yen. But hey, I was on a seven-day break in Kyoto—no work, just me, food, and fun—so I thought, “Treat yourself!”
When the tempura bowl arrived, I was delighted—and slightly alarmed. Beneath the gloriously crispy tempura was a mountain of rice that could have rivalled Mount Fuji. I’d foolishly assumed it was just tempura, but no—it was a full-blown feast (packed with rice underneath).
Still, I dug in, determined to conquer this culinary Everest. Bite after bite, it was absolutely delicious—the tempura was golden, perfectly crispy, and the rice soaked up the sauce like a dream. By the end, I was stuffed to the gills, practically waddling out of the restaurant. But it was worth every yen—a true treat-yourself moment!

i need people to understand something being flavorful does not equate to it being spicy. you can spicy food that is otherwise very bland. you cannot use chili peppers to cover up a lack of balance or depth in a dish. a fuck ton of chili peppers will not disguise the fact you didn't use enough salt.

A year ago, I was taking off for Japan
No such five-week adventure this year, but I have the chance to relive the smell and taste of Japan courtesy of Yuki, Kazu, Asaka and Maiko who I met in Paris last month, and who gave me a lot to eat and drink! So, to mark the anniversary, I decided it was time to have nice things...
Tumblr media
Kitsune udon with nori, ebi and yuzu senbei
The kitsune udon floored me. The smell of the soup base was enough to transport me, I couldn't get enough of that savoury scent.

Matcha KitKat, dried nattô and konbucha
I hadn't tried nattô in Japan, but I'd read it had a bit of a reputation. So I was a little apprehensive trying the nattô morsels, but a little less so when I read that dried nattô is actually milder than the real thing. And I like it! And so do colleagues I've shared it with!
The konbucha is... interesting. First, do not confuse with kombucha. I know, I know, it's very confusing. This konbucha is kelp tea, a tea made with algae, combined with plum and extra salt. It kind of tastes like the sea, only milder... It's pleasant in its own way, though I'd probably make the next one less strong.
And if you want to run through last year's voyage, I did a travel blog here, but I'll also go through some places here at a leisurely pace (I've already reviewed Kushimoto, Hikone Sawayama and Nagahama -to name what I can remember- from that trip here).
