This is #wintering …My nephew @mfleming818 sent a picture one day last week of Chianti braised short ribs that he was making. I haven’t been able to stop thinking about them since. So yesterday I made them in the #instantpot . OMG. So incredibly good. These are made with a big of cola and lots of Valpolicella and they only took an hour. So incredibly easy and I’ll have the recipe up on my substack soon! I served them with Parmesan polenta and steamed artichokes. As usual, I started focaccia for dinner without a plan for what we’d have with it. After poking around in my recipes, I found this one for street corn soup that I hadn’t tried yet. I had all the ingredients but a jalapeño (I subbed a poblano) and bacon crumbles (I used chopped vegetarian bacon). It turned out to be really delicious. Ingredients: 2 lbs grapes, stemmed. 1 cup sugar. 1 packet wine yeast. 1 gallon water.
Instructions: Wash and sanitize the Instant Pot. Place grapes in the Instant Pot and mash them lightly. Add sugar and mix well. Pour water over the grapes and sugar mixture. Sprinkle wine yeast on top and stir gently. Close the Instant Pot lid, set to sealing position. Select 'Pressure Cook' mode for 10 minutes. Once done, allow natural pressure release for 15 minutes. Ingredients: 1.5 lbs pork tenderloin. 1/4 cup soy sauce. 1/4 cup honey. 2 tablespoons rice vinegar. 2 tablespoons sesame oil. 2 cloves garlic, minced. 1 tablespoon fresh ginger, grated. 1/2 teaspoon red pepper flakes optional. 1 tablespoon cornstarch optional, for thickening. 1 tablespoon water optional, for cornstarch slurry. Sesame seeds and green onions for garnish.
Instructions: If you want to use red pepper flakes, mix soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and red pepper flakes together in a bowl. Put the pork tenderloin in the Instant Pot. Make sure the pork is well covered by the honey soy mixture as you pour it over it. Put the lid back on the Instant Pot and turn the vent all the way down to seal it. Put the food through 25 minutes of high pressure. After the food is done cooking, let the pressure drop naturally for 5 minutes and then quickly. If you want a thicker sauce, you can make a slurry by mixing cornstarch and water. Set the Instant Pot to Saute mode and stir the slurry into it. Keep cooking until the sauce gets thick. Take the pork tenderloin out of the Instant Pot and cut it into quarter-inch thick slices. You can serve the Instant Pot Honey Soy Pork Tenderloin with rice or any other side dish you like. Before serving, top with chopped green onions and sesame seeds. This honey soy pork tenderloin is easy to make in the Instant Pot and tastes great.

Then put the shredded chicken back in the pot. Plug the Instant Pot in and set it to "Manual" mode for 3 minutes at high pressure. Then add the egg noodles and close the lid. After the cooking cycle is over, let the pressure drop naturally for 5 minutes. Then, quickly let go of any remaining pressure. Add salt and pepper to taste, and serve the soup hot.

After you're done, let the pressure drop naturally for 5 minutes and then quickly let it go. Take off the lid, use a fork to fluff up the quinoa, and add some fresh coriander leaves on top.
