As usual, I started focaccia for dinner without a plan for what we’d have with it. After poking around in my recipes, I found this one for street corn soup that I hadn’t tried yet. I had all the ingredients but a jalapeño (I subbed a poblano) and bacon crumbles (I used chopped vegetarian bacon). It turned out to be really delicious. Hiii!! Yes!! Not to be boring but I do just love a classic chocolate chip <33 I enjoy any other chocolate variations too like white chocolate/macadamia, or double chocolate, or peanut butter chocolate, etc… I’m a bit of a chocoholic LMAO but i have been known to enjoy a snickerdoodle or one of those cute frosting cookies from the supermarkets that are soooo tasty to me :-)

I have been super hooked on this GF peanut butter oatmeal cookie recipe and wanted to share. It is 1 cup PB, 1/2 cup oats, 1/2 cup sugar and 1 egg. Mix, plop onto a baking sheet at your preferred cookie size and bake at 350 until the top starts to look dry (for my oven and the size I make the cookies usually lile 12 to 15 minutes). They come out immediately deliciois but structurally unsound but if you let them cool they are a super soft and tasty treat :)
