Heart Healthy Almond Rice Crispy Treats β€οΈπŸ˜‹ RECIPE BELOW Happy Valentine’s Day! Enjoy this quick and easy heart conscious recipe to enjoy with your hubby. Unlike traditional rice crispy treats, these do not use marshmallows as the binding agent. Instead, a mix of almond butter, maple syrup, and honey keep these tasty sweets stuck together like glue, just like you and your special someone πŸ₯° INGREDIENTS 6 Β½ cups crispy rice cereal Β½ cup dried cranberries 1 cup creamy almond butter ΒΌ cup maple syrup ΒΌ cup honey 2 tbsp unsalted butter 1 tsp almond or vanilla extract Β½ tsp cinnamon ΒΌ tsp nutmeg METHOD Lightly coat a 13”x11” baking dish with cooking spray. In a large mixing bowl, mix together the crispy rice cereal and cranberries. In a microwave-safe bowl, combine the almond butter, maple syrup, honey, butter, and vanilla. Microwave on high in 15 second intervals for 60 to 90 seconds, stirring after each 15 seconds until melted and smooth. Stir in the cinnamon and nutmeg. Pour the almond butter mixture over the crispy rice cereal mixture. Stir to coat the cereal and cranberries using a spatula. Transfer the mixture to the prepared baking dish and press into an even layer. Cover with saran wrap and place in the freezer for at least 2 hours. Using a cookie cutter shape of your choice, cut out the treats. Transfer to an airtight container or serving dish, cover, and keep refrigerated until ready to serve. . . . Roasted sweet potatoes, roasted tomatoes, roasted garlic, and grilled onions on a bed of greens (baby spinach, baby kale, and micro-arugula). Sprinkled with paprika. Delicious with a giant dose of nutrition. I enjoyed most of my meals while on vacation mostly because someone else did all the work, but I also missed making my own dish. I threw this meal together with ingredients I had on hand. I was already grilling onions for the week, so I simply placed the potatoes, garlic, and tomatoes in my air fryer for 10 minutes, combined it all on some of my salad greens, and voila. What do you do when your best friend ( psst...that’s you @stephfelde ) is down in the dumps? You make her her favorite meal...and some dessert!! 2nd attempt at plant basing the Santa Fe pasta that I used to make. Along with the simplest of simple Tex mex bread. It has always been one of Steph’s favorites, and I want to make a version that we can both enjoy. Tonight wasn’t 100% so I still have some tweaking to do, but it was pretty good...I’d give it a solid 7 out of 10. Then for dessert I made some frozen plant based chocolate chip cookies, and topped them with some ice cream. Steph had regular ol mint chocolate chip topped with some Hershey syrup, and mine was a candy bar plant based ice cream.
