Another super healthy meal that takes less than 10 minutes to prepare: grilled onions, purple sweet potato, spinach, and beans. Yum! 馃構 I ate a piece of fruit with this meal too; the Vitamin C allows my body to absorb the iron. Alternatively, I often add tomatoes to this dish. I eat a big salad almost every single day. They provide most of my daily nutrition, and the starches keep me full and happy. Today鈥檚 #salad has #spinach, baby #arugula, broccoli, cauliflower, radishes, #flaxseed and pumpkin seeds. My yummy starches are beans, corn, and potatoes. 馃尳 馃 I mixed in a bit of some oil-free dressing (balsamic vinegar+lime juice+Dijon mustard) and topped it with salsa. I welcome the cooler weather the rain has brought to Houston. I made some chunky, hearty veggie soup to celebrate and enhance the transition. 馃構锟斤拷锟斤拷 #VegetableSoup 1 yellow onion, chopped 4 carrots, chopped 4 celery ribs, chopped 2 cups mushrooms, chopped 6 garlic cloves, minced 6 cups water 2 pounds potatoes, chunked 6-ounce can of tomato paste 2 tsp oregano 2 tsp basil 2 tsp paprika 1 tsp rosemary Black pepper, to taste 3 cups frozen veggies, like peas, corn, and green beans Optional: cooked beans and/or whole grain pasta Stovetop #Recipe 1. Saut茅 the onion, garlic, mushrooms, carrots, and celery in a large pot, adding water as needed. 2. Stir in the water, potatoes, tomato paste, and seasonings. 3. Bring to a boil, and cook for 30 minutes, stirring occasionally. 4. Remove and blend 2 cups of the soup, then add it back to the pot. 5. Add the frozen veggies and cook 5 more minutes. #InstantPot #Recipe 1. Saut茅 the onion, garlic, mushrooms, carrots, and celery, adding water as needed. 2. Stir in the water, potatoes, tomato paste, and seasonings. 3. Cook on high pressure for 8 minutes with slow release. 4. Remove and blend 2 cups of the soup, then add it back to the pot. 5. Roasted sweet potatoes, roasted tomatoes, roasted garlic, and grilled onions on a bed of greens (baby spinach, baby kale, and micro-arugula). Sprinkled with paprika. Delicious with a giant dose of nutrition. I enjoyed most of my meals while on vacation mostly because someone else did all the work, but I also missed making my own dish. I threw this meal together with ingredients I had on hand. I was already grilling onions for the week, so I simply placed the potatoes, garlic, and tomatoes in my air fryer for 10 minutes, combined it all on some of my salad greens, and voila.
