Italian-style Eggs in Purgatory is a tasty and filling dish with poached eggs in a spicy tomato sauce. You can eat it for breakfast, brunch, or even a quick dinner.
Ingredients: 1 can 28 ounces crushed tomatoes. 2 cloves garlic, minced. 1/4 teaspoon red pepper flakes adjust to taste. 1 teaspoon dried Italian seasoning. Salt and pepper to taste. 4 large eggs. 2 tablespoons olive oil. 1/4 cup grated Parmesan cheese. Fresh basil leaves for garnish. Crusty bread for serving.
Instructions: Set a pan on medium heat and add the olive oil. Add the red pepper flakes and minced garlic. Saut for about one minute, until the garlic smells good. Put the crushed tomatoes in and season with dried Italian herbs. Add pepper and salt to taste. Let the tomato sauce simmer for 10 to 15 minutes, stirring it every now and then, until it gets a little thicker. Make four small holes or wells in the tomato sauce with a spoon. Slowly break an egg into each well. Put the lid on the pan and cook for 5 to 7 minutes, or until the egg whites are set but the yolks are still runny. If you want the yolks to be firmer, you can cook them longer. Grate some Parmesan cheese on top of the tomato sauce and eggs. Add some fresh basil leaves as a garnish. Hot bread to dip should be served with it.

Broke an entire yolk but i attempted making Eggs in Purgatory(but witchy tho), HIGHLY RECOMMEND MAN ITS THE BOMB
I didn't get a finished picture because I currently live w five people who eat my food before I get cute pics LOL but everyone said it was good, so here is my recipe :)
Eggs in Purgatory (For Love, Healing, & Protection)
Half of a large onion, diced(of your choice but I used red for prosperity, endurance, & protection)
3 cloves of garlic, minced (garlic brings strength & energy)
A whole sweet red pepper, diced small ( cleanses bad energy, evil eyes, it's literally a super food cleanser )
2 regular size cans of tomatoes, one diced & one crushed (for love, joy, & prosperity)
Tomato paste (which has the same magickal properties seen above in pink)
Crushed Red Pepper Flakes to taste(to ward off bad intentions and bad energy)
Pink Salt and White Pepper to taste( white pepper for protection, healing, & both the salt and pepper for purification)
5-6 eggs (healing and hex breaking)
Gruyere cheese($10 cheese tho)(it tasted great but you could sub in white cheddar/parm/or feta & those would all be great on this as well)
Some bread/crackers to dip in the leftover tomato sauce
Grapeseed oil & olive oil (simply bc we're tryna be healthy round here)
you put the finely diced red pepper & diced red onion in a frying pan on medium heat with enough grape-seed oil to coat the bottom of your pan. Ass your red peppers & onions cook, you should be stirring regularly until caramelized to your liking(i like mine soft)
Once soft, a teaspoon of olive oil in the middle of your pan with your garlic directly on top, stir and let cook for about two minutes (or until you garlic begins to toast and becomes a golden brown color).
Add in a tablespoon of tomato paste and thoroughly work the tomato paste into the rest of your ingredients until everything is evenly coated in the pan.
Lower the heat on your saucepan(hypothetically go from like a 6/10 heat wise to a 4/10 heat wise) & pour in both of your cans of tomatoes. Add in your spices as well,(my mix was about 2 teaspoons of red pepper flakes, a half teaspoon of white pepper and a little less than a teaspoon of pink salt). Mix together gently but consistently and then cover for about 5 minutes
In those 5 minutes, you need to crack your eggs into a measuring cup. I'm too hard on my eggs when i crack them so sometimes an egg shell gets in there. As internet mom Carla from bon appetite says, doing this is a "safety net". You can pick out shells or have more control when pouring the egg into your sauce(it's just very smart to me but if you wanna just crack your egg directly in your sauce man, go tf off, but I cannot 💀)
Uncover your sauce and stir, let it settle and spread it out into an even layer. With a spoon, make holes/gaps in your sauce and drop an egg in each hole. Spread these out well, your eggs cant really be touching so you need to insure the hole you made is deep enough/wide enough and far enough apart from the rest in your pan. Cover after all your eggs are in their place and cook as desired. Add cheese as desired and enjoy :)
The only footnote I have is it was more than wonderful on top some avocado toast :)
