Tofu scrambled eggs with spicy edamame
Recipe for spicy edamame from Just One Cookbook.
See previous post for recipe for tofu scrambled eggs.
Taste
The tofu scrambled eggs weren't as good this time. However, still enjoyable. The edamame tastes good but not spicy enough.
Notes
When making the tofu scrambled eggs, I browned the tofu for longer, resulting in a slightly firmer tofu. I also forgot to put in the garlic and soy sauce prior to adding eggs, which meant the tofu didn't get to absorb the flavours. Today's iteration wasn't as flavourful as my first attempt.
For the edamame, I followed the recipe almost exactly (only difference was that I used Vietnamese sate rather than sambal oelek). This is the first time I've ever cooked with miso and mirin; it was an interesting and pleasant taste.
Next time
I'll remember to add the sauce first. Maybe try softer tofu too.
For the edamame, I will add more sate next time and reduce the oil. I might also try salt and dried chilli for something simpler.
