Tofu pizza
I used this recipe and leftovers from my mochi pizza (except instead of diced bacon, I'd used ham). Ingredients and notes under the read more.
Ingredients
300g firm tofu
Potato starch
Neutral oil
Tomato paste
Mushrooms, chopped
6 ham, stacked on top of each other and quartered
Cheese, shredded
Tomato, chopped
Method
Press tofu for about 15 mins, then slice into four thinner slices
Thinly coat each slice of tofu with potato starch
Heat oil in pan and fry tofu until top and bottom are golden
Place tofu on wire rack to cool a bit
Put tomato paste on each slice, then your preferred toppings
Put each slice into the air fryer for about 5-7 minutes or until cheese is golden (can also use oven)

I had two yesterday when it was fresh out of the air fryer - the topping was delicious and the base was crispy. It was basically a pizza... Just with a tofu base. It was so good! Today I had the leftovers at work and just heated it in the microwave. Still delicious.
Notes
I enjoyed this better than the mochi pizza I made the day before. It was also filling and kept me full for about 5 hours. This dish will certainly be on my regular rotation and next time I would like to use two blocks of tofu (600g).
Next time
I'll add chilli flakes or cayenne pepper either into the tomato paste or sprinkle on top. I'll also try other toppings like spinach, sun-dried tomato, and maybe other proteins.

Mochi pizza
This dish was made on episode 11 of She Loves to Cook and She Loves to Eat.
On the show, the characters used whatever they had in their pantry. With the exception of having to buy kiri mochi, I also used whatever was in my pantry!

Ingredients I'd used from my pantry:
Bacon, diced
Tomato paste
Corn kernels
Tomato, diced
Cheese
Mushrooms, chopped
Taste
It tasted like a normal pizza. Which is to say it tasted good, hehe. Unfortunately, I had forgotten to add the water in the pan for it to steam/fry... So I was actually pan-frying the mochi for 10 mins before I'd remembered the water! So the base of the mochi was crispy and hard to chew through, rather than chewy and gooey, as its meant to be.
Notes
I'd never cooked kiri mochi before so this was a fun experience!
Next time
I'll be sure to add water in earlier! And more cheese! And greens! I have a slab of firm tofu so I might make pizza with a tofu base later (recipe here).
Make again?
Maybe. I'm more interested in making the dessert version that Kasuga and Nomoto made with cream cheese and honey!

Tofu scrambled eggs with spicy edamame
Recipe for spicy edamame from Just One Cookbook.
See previous post for recipe for tofu scrambled eggs.
Taste
The tofu scrambled eggs weren't as good this time. However, still enjoyable. The edamame tastes good but not spicy enough.
Notes
When making the tofu scrambled eggs, I browned the tofu for longer, resulting in a slightly firmer tofu. I also forgot to put in the garlic and soy sauce prior to adding eggs, which meant the tofu didn't get to absorb the flavours. Today's iteration wasn't as flavourful as my first attempt.
For the edamame, I followed the recipe almost exactly (only difference was that I used Vietnamese sate rather than sambal oelek). This is the first time I've ever cooked with miso and mirin; it was an interesting and pleasant taste.
Next time
I'll remember to add the sauce first. Maybe try softer tofu too.
For the edamame, I will add more sate next time and reduce the oil. I might also try salt and dried chilli for something simpler.

Tofu with scrambled eggs
Ingredients
6 eggs, loosely scrambled
2 packs firm tofu, pressed and cubed
Minced garlic
Soy sauce
Method
Cook tofu until golden in oiled pan
Add mixture of soy sauce and minced garlic
Add scrambled eggs
Taste
It was delicious and kept me full from noon until 6pm, which was amazing. I had planned to have it with frozen peas or corn but forgot to add them.
Notes
Initially I had planned to make tofu version of Oyakodon (chicken and egg rice bowl). However, I didn't have any dashi, mirin, or sake! I also can't eat onions.
So... This dish was nothing like Oyakodon. I have now bought mirin, sake, rice vinegar, and shoyu! Once I get dashi ingredients, I can make a proper Oyakodon.
Next time
Brown the tofu more and add coriander on top for colour.
