Since it is one of those days where I am unable to cook. I thought I would share one of my favorite recipes, not vintage exactly, but a family recipe, one of my moms. Unless is the 90s vintage now?
Anyway this one freezes well and makes idk 4 or 5 servings.
I like to prep a few things ahead on the days I feel well to have on days like today.
Enchilada Soup
1 can cream of chicken
2 cans of chicken broth, I used one bigger container of low sodium
1 can cream corn
1 big can of green enchilada sauce
1 can green chiles
1 can of diced chicken, or a small amount of rotisserie etc.
Half an onion sliced or diced, idc
Bring to a boil then add:
4 or 5 flour tortillas cut with scissors into tiny strips and boil 5 minutes.
Add lots of cheddar cheese
Sour cream if you like, but I didn't use any last time.
It's like a spicier chicken noodle, comfort food, not healthy.

I want to believe that the neighbors do a sort of apartment potluck and they all bring their things. Nacha might be the apartment complex's chef but I think all neighbors have their specialty dishes.
I don't really see any of them being completely hopeless at cooking 😅 even those who aren't the best still manage to bring a decent dish
Here's a list of what they would bring:
Roman Stilnsky: Borscht or stroganoff with the help of Lois, of course, since he tends to wander off and forget about the kitchen altogether lol
Lois Stilnsky: Either knoephla soup or gooey butter cake. Midwestern classics!
Robertsky Peachman and Albertsky Peachman: They often bring potato stew or peach pie (sometimes with ice cream to serve a la mode). Albertsky dreads making the pies every time.
Angus Ciprianni: Since he knows that the foods will often be heavy/filling he opts for the simplest option of pasta with tomato and basil sauce (plus some cheese) to cut the richness.
Elenois Sverchzt and Selenne Sverchzt: They either bring varenki or chicken kyiv. Coincidentally, their childhood favorites.
Arnold Schmicht and Gloria Schmicht: Arnold is a simple man, he knows that you can't go wrong with hush puppies! Gloria, on the other hand, makes some collard greens because she thinks her neighbors need to eat vegetables. Sometimes, for christmas dinner, they take care of the mac and cheese.
Izaack Gauss: Knowing him, he probably was going on his way to home when he had The Realization™ that the potluck is the next day, so he runs to the store and grabs all the ingredients needed to make schnitzel, something easy but not any less welcome.
Margarette Bubbles: Tater tots casserole, because again #midwestern
Nacha Mikaelys: She ALWAYS brings something new, so everyone is always at the edge of their seats trying to guess what she will bring. The big hits during this event have been: Pot roast, Tortilla chicken soup, Oven baked baby back ribs (even recieving Mclooy's approval), and Mashed potatoes. She also makes baklava, but that's a christmas exclusive!
Anastacha Mikaelys: Anastacha is still learning how to cook and while she doesn't often bring something, she makes a KILLER dip for chips* and sometimes brings appetizer-sized burritos.
Mia Stone: She likes to bring some roasted brussel sprouts but she also likes to make Shepherd's pie. At times, she brings marbled cake.
Dr. W. Afton: Like Anastacha, doesn't always bring things, but when he does, he opts of soup dumplings or spring rolls. Sometimes likes to make rice pudding.
Francis Mosses: He makes a good potato salad, he adds some apple to his, but always leaves a small container without apples for Anastacha.
Steven Rudboys: He likes to bring baked beans. He's not the best at baking but his biscuits are always welcome. And also brings beer, of course.
Mclooy Rudboys: His brisket is unparalleled, that's all you need to know.
Alf Cappuccin: Just like Anastacha and Afton, he doesn't bring food often but he likes to bring crumpets with a jar of jam and some butter.
Rafttellyn Cappuccin: She often complements to what Alf brings so she tends to cook fish and chips, other times she brings some goulash. Raffie sometimes brings some berry crumble.

forrest!! SOS!! i have no good food to eat!! ik u can cook so can u tell us some yummy recipes?
oh god i feel like senshi because im so so very late to this ask because ive been in a slump with cooking myself and youve definitely eaten by now. BUT i have a few that i make either when i want comfort food that still checks some boxes of being kind of nutritious or that are just fast
i. spam musubi but its not actually
spam musubi are these awesome hand held things. sometimes they have egg sometimes they dont but i will eat a whole can worth in one go. so i do it as a bowl instead

i start jasmine rice in our rice cooker and chop the spam into cubes vs slices like it would be for musubi. fry them on medium high until theyre crispy. then ill julienne an onion and add it to the spam. once the onion is starting to soften ill add the sauce. the recipe i saw was 2tbsp soy sauce, 1 tbsp mirin with like a spoon full of sugar (honestly it was probably just under a tbsp) but ive been cheating recently and using a japanese bbq sauce i found at our local asian grocery store. once everything is coated i cook it a few mins so the sauce thickens up. by then the rice should be done and then you just take a scoop of each and i add seaweed on top
i know its not proper but since will doesnt like the sweet savory combo and im the only one eating it this way is easier for me to handle. i can store the rice and spam separately so nothing gets mushy and even refry the spam when i want to heat it back up
ii. black bean, pepper and cheese quesadilla
this is actually how i got will to try beans. i just take a can of black beans and dump the whole thing into a pot and cook on medium until i can smash them. ill also fry peppers and onions on medium until they have a little char. spices are honestly up to you and how spicy you want it. i usually put salt, pepper, cumin, paprika, chili powder and garlic in with the beans. once the beans are mostly smashed and the peppers cooked ill throw them together and smash them more just so everything is easier to spread onto a tortilla. that plus you can add your cheese. ive shredded my own and used grocery store mixes so its up to you!
iii. spicy garlic tofu
almost no notes on this. i use less maple syrup than the recipe calls for so 1tbsp of everything in the sauce. and instead of gochujang i use a chinese chili paste, imo it ends up less ketchup flavored but if you like ketchup then just use gochujang

i dont make this as often but this is a recipe i use as a base and then cheat. i swap in frozen veggies and it speeds everything up
v. hotpot
i love making hotpot at home. its super easy skill wise it just takes some time. you can buy premixed hot pot bases from the grocery store if you have an asian grocery store near you and you just dunk stuff in the soup until its cooked. you just need to watch out for the spice level of the broth
will and i will usually get thinly sliced beef, rice cakes, udon noodles, fish cakes, bok choy and mushrooms. all you do is bring the broth to a boil and cook your ingredients. sometimes i dunk with chopsticks other times i cook with a small strainer lol

Two favorite soups and three I'm going to try (once it gets below 80 here):
I substitute spinach for the escarole lettuce and a friend of mine loves kale.
I add more green chiles than this calls for because I'm not that white. Perfect crockpot recipe.

My Easy Go-TO ADHD/Depression Meals
I was telling my friend abt my depression meals and she said i should post them on my blog abt food and i went wow yeah maybe i should
this is part a recipe list for me, but you can use it too if u want mmmmm yeah veg i table
Shitty Poke Bowl
Microwaved rice (this is like $0.98 at my local grocery store)
Bag steamed veggies/canned veggies (these are generally pretty cheep all round, canned is cheaper obv but the frozen ones taste better imo)
microwaved chicken nugs
sawce (soy sauce, oyster sauce, spicy sauce, chicken sauce, idk bro go wild)
Microwave all, combine in bowl, sauce, enjoy
Frozen pizza obv
go for veggie ones, they're more filling and get a good amnt of vitamins and minerals you're probably lacking
Yogurt parfait
melt frozen fruit
low fat yogurt
add something cruncy like cereal
Veggies and hummus
not technically a full meal
cut up veggies, precut is nice but that shit is expensive, so either buy it that way or precut your shit literally as soon as you get home, like don't even sit down, wash and cut that shit
hummus of your choice
maybe a cracker can join the party to round things out
Chicken Wrap
this takes a little more effort but it's nice
air fry/bake/microwave some chicken nugs/strips
put that shit on a tortilla
add lettuce (i can but just a bag/box of lettuce from the grocery store for like 2.87)
add cheese (sandwich cheese (like the flat ones) works well (i use colby jack because i like it))
sauce that shit, ranch, buffalo, mystery, i don't give a shit just add a liquid
frozen dumplings + veg
go for the frozen dumplings that have veg and meat, preferably ones without chicken because everything else is so chicken heavy and you need the nutrients from other meats that chicken doesn't provide
frozen edamame is a good veg for this one
Snacks:
pickles, just like straight out of the jar
same with kimchi
handful of goldfish, i got individually packaged ones from costco for like $9 and the box has lasted me almost two months so far
cereal, maybe a bowl, maybe just a hand full
hand fruit (like bananas, apples, peaches, oranges) shit you just eat and hold in your hand and don't really have to think about prepping
instant soup
hummus, again
cheese sticks
a piece of whole wheat bread, toasted if you're feeling fancy (i buy the enriched shit because i need all the help i can get)
carrots, baby carrots are nice to snack on, but i won't like there's something satisfying about biting a chunk out of a whole carrot
bell peppers, i genuinely just eat these like apples sometimes
the flavored tuna sachets from blue fin
instant mac n cheese pots

a simple tip that’s a favorite of mine is getting plain, cooked chicken from the store (rotisserie, chicken fajita from to-go menus, hot bars at the grocery store, etc) and dressing it up or adding it to other recipes at home. it may seem obvious, but I want to make sure more people know it’s an option. as a disabled person, cooking chicken takes a while and requires a lot of care to make sure it’s fully cooked. sometimes I don’t have the energy or patience for that! so pre-cooked chicken it is. I also love the security from knowing I don’t have to risk undercooking and that it’s more cost effective in some cases.
other times, like today, I got a plain chicken taco, chopped the chicken to be a bit finer, tossed it in the pan for a little with butter and barbecue sauce, then put it back in the tortilla it came in. chopped some veggies on the side, poured a cup of iced tea, and I got a meal! easy peasy for a low spoon day.
other ideas include cutting up a rotisserie chicken for easier soups, curries, stir fries, tacos, rice bowls, etc. I like to put chicken in my pasta instead of meatballs, for example. plus, you can save the bones to boil along with a couple veggies for broth later on!
protein is important! even if you’re not a meat eater, it’s essential for your foods. please be sure to get it in however you can! make things easier for yourself! you deserve healthy, filling meals that makes you happy.

Soon, a bouncy salsa started playing.  Trent wiped his hands on his apron and pulled Santana into an impromptu dance.  She laughed and played along for a few seconds only.

"My pozole," Santana said, smacking him on the arm as she pulled away to return to the stove.  "Don't you dare make me ruin my Abuela's recipe.  Find another dance partner."
Santana's pozole, the recipe of which was handed down to her by her beloved abuela, was simmering on the stovetop.  That was to be partnered with her father's cochinita pibil.  Warm hand-made tortillas sat folded carefully in a towel, ready to be brought to the once dinner was about to be served.
Trent had a Caprese salad in the refrigerator, prepped and ready to serve.  He was putting the finishing touches on an impressive charcuterie board, abundant with tidbits that made even Kurt's mouth water.  Trent had also just taken out some herb parmesan biscuits out of the oven that he had baked.  Kurt had been particularly eying Trent's appetizer version of his parent's boxty recipe that was laid out on a silver serving tray.
As for dessert, that, of course, was left to Kurt.  His addition to the meal were the apple hand pies that were his mother's own recipe and his father's favorite dessert ( when he was allowed to have a treat from his usual heart-healthy diet), an assortment of cookies, as well as some mini dark chocolate tartlets sprinkled with sea salt.

Mushroom Recipes:
Certainly! Here are some delicious mushroom recipes that showcase the versatility and flavor of mushrooms:
1. Classic Sautéed Mushrooms
Ingredients:
2 cups of button or cremini mushrooms, sliced
2 tablespoons olive oil
2 cloves garlic, minced

1 cup mushrooms (shiitake, cremini, or a mix), sliced
1 small onion, finely chopped
2 cloves garlic, minced
1/2 cup grated Parmesan cheese
2 tablespoons butter
2 tablespoons olive oil
Salt and pepper, to taste
Fresh parsley, chopped (optional)
Instructions:
Heat olive oil and 1 tablespoon of butter in a large pan over medium heat.
Add onion and garlic, cook until translucent.
Add mushrooms and cook until softened.
Stir in arborio rice and cook for 2 minutes.
Add white wine and cook until absorbed.
Gradually add warm broth, one ladle at a time, stirring frequently until the rice is creamy and cooked through.
Stir in the remaining butter and Parmesan cheese. Season with salt and pepper.
Garnish with parsley before serving.
Serving Suggestion: Enjoy as a main course or side dish.
3. Stuffed Portobello Mushrooms
Ingredients:
4 large portobello mushrooms
1 cup cooked quinoa or rice
1/2 cup chopped spinach
1/2 cup diced tomatoes
1/4 cup feta cheese, crumbled
2 cloves garlic, minced
2 tablespoons olive oil
Salt and pepper, to taste
Instructions:
Preheat oven to 375°F (190°C).
Remove the stems from the portobello mushrooms and scoop out the gills.
In a bowl, mix quinoa or rice, spinach, tomatoes, feta cheese, garlic, olive oil, salt, and pepper.
Stuff the mushroom caps with the mixture.
Place mushrooms on a baking sheet and bake for 20 minutes, or until the mushrooms are tender.
Serving Suggestion: Serve as an appetizer or a light main course.
4. Mushroom Soup
Ingredients:
1 lb (450g) mixed mushrooms (cremini, shiitake, etc.), sliced
1 small onion, chopped
2 cloves garlic, minced
4 cups vegetable or chicken broth
1 cup heavy cream or coconut milk
2 tablespoons olive oil
1 tablespoon fresh thyme leaves
Salt and pepper, to taste
Instructions:
Heat olive oil in a large pot over medium heat.
Add onion and garlic, cook until translucent.
Add mushrooms and cook until they release their moisture and start to brown.
Add broth and thyme, bring to a boil, then reduce heat and simmer for 15 minutes.
Use an immersion blender to blend the soup until smooth. Alternatively, blend in batches using a stand blender.
Stir in the cream and season with salt and pepper.
Serving Suggestion: Serve hot with crusty bread.
5. Mushroom and Spinach Quesadillas
Ingredients:
1 cup mushrooms (button or cremini), sliced
1 cup fresh spinach
1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
1 tablespoon olive oil
4 tortillas
Salt and pepper, to taste
Instructions:
Heat olive oil in a skillet over medium heat.
Add mushrooms and cook until softened.
Add spinach and cook until wilted. Season with salt and pepper.
Heat a separate skillet over medium heat. Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
Spoon half of the mushroom and spinach mixture over the cheese, then fold the tortilla in half.
Cook until the tortilla is golden and the cheese is melted, flipping once.
Repeat with remaining ingredients.
Serving Suggestion: Cut into wedges and serve with salsa or sour cream.

1. pho, very simply the best soup ever invented
2. this food and wine magazine chicken soup. super versatile and always delicious. i usually make it with bone-in chicken thighs that i sear beforehand in the same pot i cook the soup to get even more flavour
3. gumbo. it’s good in all forms but controversially i love when it’s got okra in it because okra is one of my fave veggies
4. french onion soup. i don’t say this often but you do have to hand it to the french for that one
5. tortilla soup, this is my fave recipe. easy delicious and cheap :)
special mentions to: the seafood chowder from fishhook in victoria and the khao soi from pai in toronto (i wouldn’t necessarily call khao soi a soup but i have seen it called that so i’m including it here because either way it’s one of the best things i’ve ever eaten)
