NYT Cooking: Café Brûlot

Ingredients

⅓ cup Cognac or brandy

1 tablespoon Grand Mariner or Cointreau

Zest of ½ orange, removed with a vegetable peeler

Zest of ½ lemon, removed with a vegetable peeler

2 tablespoons light or dark brown sugar, plus more to taste

4 whole cloves

1 (2-inch long) cinnamon stick

1 cup strongly brewed coffee

Ground cinnamon and whipped cream, for serving

Preparation

In a small saucepan, combine the Cognac, Grand Mariner, orange and lemon zest, sugar cloves and cinnamon stick. Heat over low, stirring, until the sugar dissolves, about 1 minute.

Turn off the heat. Using a stick lighter or long match and standing back a bit, carefully set the Cognac on fire. Let it burn for 30 seconds to 1 minute to singe the citrus peels and cinnamon, then pour the coffee into the pan to douse the flames. Stir well, then taste and add more sugar, if you like.

Strain the coffee into mugs and serve topped with whipped cream and ground cinnamon.

Warm Spiced Pear Juice

Preparation Time: 10 minutes Cooking Time: 20 minutes Servings: 4

Ingredients:

Pear juice: 4 cups (32 fl oz / 950 ml), unsweetened

Cinnamon stick: 1

Whole cloves: 3

Star anise: 1

Fresh ginger: 1-inch piece, sliced

Honey: 2 tbsp (optional)

Directions:

Introduction:

A warm and comforting beverage, perfect for cooler weather and suitable for a low-sodium diet.

Preparation:

Gather all the spices.

Prepare the ginger by slicing it into thin pieces.

Cooking:

In a medium saucepan, combine the pear juice, cinnamon stick, whole cloves, star anise, and sliced ginger.

Bring the mixture to a gentle simmer over medium heat.

Reduce the heat to low and let it simmer for 15-20 minutes to allow the flavors to infuse.

Remove from heat and strain the mixture to remove the spices and ginger slices.

Serving:

Stir in honey if desired for additional sweetness.

Pour into mugs and serve warm.

Chilled Strawberry Bisque

3 lbs. fresh strawberries or unsweetened frozen strawberries (thawed)

1 cup sugar

3 cups vanilla yogurt

1 cup half and half or light cream

¼ cup Grand Marnier

2 cups whipped cream for garnish

mint sprigs for garnish

Roughly cut fresh strawberries and place in the bowl of a food processor. Process until strawberries are pureed, about 5 minutes.  Add sugar and process again until thoroughly mixed. Place a sieve over a large bowl and pour mixture through to remove seeds.

Add the yogurt, half and half and Grand Marnier to the mixture. Whisk together until completely blended. Cover and place in the refrigerator to chill, at least 1 hour. Pour 1/2 cup servings into small bowls or teacups and top with whipped cream and mint sprigs.
