(If you are of drinking age, a bottle of vodka plus a pack of ten ish grade b vanilla beans, plus at least a year sitting, and occasional shaking, makes an incredible vanilla extract.)
You can absolutely use it sooner but I found it prefer mine well aged.

Baking for dummies: Recipe to make the BEST brown butter chocolate chip cookies.
chocolate chip cookies (Gluten free friendly)
~INGREDIENTS~
unsalted Butter
Brown Sugar
White Sugar
2 Eggs
Vanilla Extract
All Purpose Flour/GF flour
Baking Soda
Salt
Chocolate Chips
~RECIPE~
(3/4cup) or 2 sticks of butter in a pot on medium heat until its golden or tastes slightly BURNT😊😁 (its okay if the butter is severely bubbling while you cook it)
while you wait for the butter to turn golden brown, add 1 Cup of brown sugar AND 1/4 Cup of white sugar into a big bowl
Take butter off the heat when it looks golden brown and add it into the bowl. Mix it all until combined.
Then add 1 egg YOLK!, 1 WHOLE egg, and 1 TBSP of vanilla extract, then mix. Yes, it should have a weird consistency, maybe..
Finally add in 1 3/4 cups of all purpose flour (for measuring dummies, it’s 1 cup + a 3/4 cup 😯🤦♂️🤔)
Then mix in 1/4 tsp of baking SODA, and 1 tsp salt. (You can always add more baking soda, but for me it has made my cookies turn out a little too ‘cakey’ for my liking)
Then add as many chocolate chips as you want, i don’t measure it 💀 AND NOW ROLL YOUR COOKIES INTO BALLS, put them in your FRIDGE for like 30 MINS. (i do 20 cuz i dont care🙏)
take them out and put in oven at 350F for 11-12 minutes, or until they have a golden brown to them. AND GUYS, I recommend cooking like a couple cookies first because the first batch turns out different than the second.
As they cool, sprinkle sea salt on them for extra flavoring (THE SALT MAKES IT 100x YUMMIER) and then YOUR DONE!! enjoy [tiktok proud emoji]

Breakfast with Cordelia #15 Carrots with a Side of Cake
Sul Sul, Gerbits. You may be wondering to yourself “Why does Cordelia have a bag over her head?” The answer is pretty easy, I don’t feel like I can show myself when doing this recipe. This recipe will “haunt” me for the rest of my life. And I am never going to hear the end of it.
I made this recipe over the weekend and I wanted to share with you what happened.
I guess this recipe needs a name so I am going to call it “Carrots with a side of the cake.”
Thought I would be cute, and make another cake mix. But this time add some carrots to it. I grabbed a bag of carrots from the fridge and processed them all. Didn’t even think about how many carrots were in the bag. I just um… processed the carrots.
Made the cake according to the box that I had. Adding the eggs, water, and oil. However, lately, I have been using milk instead of water in my cakes and they have been tasting well.
Drained the carrots.
Added some cinnamon to the cake, and then… I added… 3lbs…or … 10.8 cups… of… carrots.
Didn’t think anything about it. Yeah. Baked it according to the box. It came out well. It smelled really good.
But the best thing was the reaction of everyone in the house.
I brought out the cake, and I just heard silence. Maybe even a few giggles. Then I come into the living room where we have the cake. I take a bite, and everyone just starts laughing.
Bonehilda turned to me and asked “ Cordelia… hun, how many carrots did you put in this?” Without even thinking about it I stated “a whole bag!” With this Cain started howling “you put 3 lbs of carrots in this cake.” I almost died of laughter that night.
Despite it having so many carrots. It was edible. And everyone, even the kiddos liked it. I am just like this is such a fun recipe. I need to share it with everyone and anyone who will listen to this.

Hello nutrition focused friends.
I wanted to take time to post an update since I've been absent from this platform for far too long. I let life discourage me from what I love but I want to spend the next few weeks getting back into the nutritional swing of things; especially as holiday time approaches.
I'd love your feedback, but I think I'm going to continue diving into plant based holiday themed meals as well as grab and go foods. It has been my ultimate frustration in life trying to grab a quick bite from a grocery store (or anywhere really) only to find a sad peanut butter and jelly sandwich or an overpriced veggie sandwich as my options if I'm lucky. Seriously friends, have you seen the veggie sandwich offered at Whole Foods? It's $6.99 for a few thin slices of cucumber, tomato, lettuce and some sort of spread of on floppy wheat bread. Don't even get me started on their big salads. $16.99 for a big bowl of lettuce with a few sad toppings. In a world full of revolutionary plant based products, I feel like the grab and go crowd should have a few more options. Even Costco brings the disappointment as their grab and go prepped foods are almost entirely meat and dairy based. Sure, Costco had a quinoa salad for a while, but that's not a very exciting entree for a plant based person now is it? I will say, They do have a Mediterranean salad that's pretty decent though in size and price. Though I wish stores would figure out we can't live on salad alone. I would really love to see more ready to eat meals that aren't just over priced frozen entrees. Many of us spend all day running from responsibility to responsibility, it'd be nice to have some satisfying, nutritionally dense, options.
What frustrates you when trying to find grab and go foods for your busy plant based life? Are you dreading the holidays because your dietary choices aren't always respected or accommodated? Or maybe you just need some inspiration on what to make this year. Let's explore our options this season.

also, here is a medieval dessert i made with the roses i recently picked! it is quite interesting, it is something akin to a rice pudding although served cold and firmer. (it also uses rice flour and almond milk with ground almonds still intact)
it’s called rosee, the recipe can be found in the forme of cury which is a late 14th century cookbook
#interestingly it only uses 1.5 tbsp of sugar but there are dates in it#i think as far as dessert it is something the modern palate is a bit unused to but i do quite like it#something about it is very refreshing#i think the best way to adapt this to modern tastes may be to sweeten it a tad bit more#and maybe throw in some vanilla and cardamom#there is cinnamon and ginger though#surprisingly no nutmeg or mace despite so many medieval recipes containing nutmeg or mace#journal

i feel bad bc i think my dad was disappointed in the schaum tortes... they were something his grandma used to make and we used her recipe but she probably knew a lot more things that were just common sense to her so she didn't write them down. but we looked up some stuff online and i think we can get it right next time
#for one thing i didn't know the egg whites should be room temp#and they needed to be whipped to more than just frothiness BEFORE the sugar and vanilla get added#and i really had no idea what the dessert even was lol#i only met his grandma once when i was really little. she lived to be like a hundred#but he was really happy when i made her fruit salad recipe (ambrosia salad) for thanksgiving#i like it even more than his mom's recipe which is what i always had growing up but it's more complicated bc it uses lemon curd#and my parents and i are not the world's best cooks lmao#i mean i can follow a recipe but real cooking is like. a skillset.

im back from the vread festival it was like an expensive grocery run with free samples tho
#i got full just from the samoles#then we got a kirean style corn dog#and i bought pineapple carolina reaoer sauce#got armenian style coffee (kinda gritty)#got a loaf of good toast bread#and devoured a cherry cinnabon as soon as i got home#now im drinking the rootbeer i fished out of a wooden tub#got mire stuff but that's the highlights#bread soup gelato was very good#bread soup is like a common school dessert#and i like it many don't#oh and we got to vote on the best school sandwich#got the recipe might try making it at work#also i saw a regular there algkdlj#let me rest!
