A Thai-style salad that is cool and colorful, made with spiralized zucchini, bright vegetables, and a tangy dressing.
Ingredients: 2 large zucchinis, spiralized. 1 red bell pepper, thinly sliced. 1 carrot, julienned. 1/4 cup fresh cilantro leaves, chopped. 1/4 cup fresh mint leaves, chopped. 1/4 cup roasted peanuts, crushed. 2 tablespoons sesame seeds. 2 tablespoons soy sauce. 2 tablespoons lime juice. 1 tablespoon honey. 1 tablespoon sesame oil. 1 teaspoon grated ginger. 1 clove garlic, minced. 1 red chili, thinly sliced optional. Salt and pepper to taste.
Instructions: In a large bowl, combine the spiralized zucchinis, sliced red bell pepper, julienned carrot, chopped cilantro, chopped mint, crushed peanuts, and sesame seeds. In a small bowl, whisk together soy sauce, lime juice, honey, sesame oil, grated ginger, minced garlic, and sliced red chili if using. Season with salt and pepper to taste. Pour the dressing over the zucchini noodle mixture and toss until well combined. Serve immediately or refrigerate for 30 minutes to allow flavors to meld. Garnish with additional chopped cilantro, mint leaves, and crushed peanuts before serving, if desired.

Ingredients: 2 cups cooked chicken, shredded. 4 cups mixed salad greens. 1 cup red cabbage, thinly sliced. 1 cup carrots, julienned. 1/2 cup edamame beans, cooked. 1/4 cup red bell pepper, thinly sliced. 1/4 cup cucumber, thinly sliced. 1/4 cup green onions, chopped. 1/4 cup cilantro leaves, chopped. 1/4 cup chopped peanuts. 1/4 cup crispy wonton strips.
Instructions: Put the red cabbage, carrots, edamame beans, red bell pepper, cucumber, green onions, and cilantro leaves in a large salad bowl. Place the chicken shreds on top of the salad ingredients. For the dressing, mix the ingredients in a small bowl with a whisk. Pour the dressing over the salad, then toss it all together to cover it all. Put chopped peanuts and crispy wonton strips on top of the salad. Serve right away and enjoy!

Ingredients: 250g halloumi cheese, sliced. 4 cups mixed salad greens. 1 cup cherry tomatoes, halved. 1/2 cucumber, thinly sliced. 1/4 red onion, thinly sliced. 1/4 cup Kalamata olives, pitted. 2 tablespoons olive oil. 1 tablespoon balsamic vinegar. 1 teaspoon dried oregano. Salt and pepper to taste.
Instructions: Preheat your grill or grill pan to medium-high heat. In a small bowl, mix the olive oil, balsamic vinegar, dried oregano, salt, and pepper to create the salad dressing. Brush both sides of the halloumi slices with a little olive oil to prevent sticking to the grill. Grill the halloumi slices for 2-3 minutes per side, or until grill marks appear and the cheese is softened. While the halloumi is grilling, prepare your salad greens, cherry tomatoes, cucumber, red onion, and Kalamata olives in a large salad bowl. Once the halloumi is done, remove it from the grill and let it cool for a minute. Cut the grilled halloumi into bite-sized pieces and add it to the salad bowl. Pour the prepared salad dressing over the salad and toss gently to combine. Serve the gluten-free grilled halloumi salad immediately and enjoy!
