Ingredients: 4 cups coconut water. 1/2 cup sugar. 1/4 cup shredded coconut. 2 tablespoons lime juice.
Instructions: In a saucepan, combine coconut water and sugar. Heat over medium heat, stirring until sugar dissolves. Remove from heat and let cool completely. Stir in shredded coconut and lime juice. Pour mixture into an ice cream maker and churn according to manufacturer's instructions until it reaches sorbet consistency. Transfer sorbet to a container and freeze for at least 4 hours before serving.

Ingredients: 1 large head of broccoli, chopped. 2 celery stalks, chopped. 1 small onion, chopped. 2 cloves garlic, minced. 1 can 14 oz coconut milk. 4 cups vegetable broth. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Put in the garlic and onion, and cook them until they get soft. After you add the broccoli and celery, cook for 5 minutes. Add the vegetable broth and bring to a boil. Then lower the heat and let it simmer for 15 to 20 minutes, until the vegetables are soft. Blend the soup until it's smooth with an immersion blender. Add the coconut milk and heat it all the way through. Add pepper and salt to taste. Serve hot, and if you want, drizzle some coconut milk on top.

Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 teaspoons baking powder. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 1/2 teaspoon coconut extract. 1/2 cup coconut milk. 1/2 cup shredded coconut sweetened. For Cream Cheese Frosting:. 8 oz cream cheese, softened. 1/2 cup unsalted butter, softened. 4 cups powdered sugar. 1 teaspoon vanilla extract. 1/2 cup shredded coconut, toasted for garnish.
Instructions: Start by heating the oven to 350F 175C. Use cupcake liners to line a cupcake tin. Mix the flour, baking powder, and salt together in a medium-sized bowl using a whisk. When the butter is soft, put it in a separate large bowl and mix it with the sugar until it is light and fluffy. Add the eggs one at a time and beat well. Then add the vanilla extract and coconut extract and mix well. Mix the dry ingredients in slowly, adding the coconut milk in between each addition. Start with the dry ingredients and end with the coconut milk. Don't mix any further than that. Add the coconut shreds and mix them in. Fill up each cupcake liner about two thirds of the way to the top with batter. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. After taking the cupcakes out of the oven, let them cool for a few minutes in the pan. Then, move them to a wire rack to cool all the way down. To make the cream cheese frosting, put the softened cream cheese and butter in a bowl and beat them together until the frosting is smooth and creamy. If you want to make it fluffy, add the powdered sugar and vanilla extract and beat them together well. Once the cupcakes are cool enough to handle, use a knife or a piping bag to frost them with the cream cheese frosting. Add toasted shredded coconut to the top of each cupcake to make it look nice. Spray a little cooking oil spray on top of each chicken breast. After the oven is hot, bake the chicken for 25 to 30 minutes, or until it is fully cooked and the coating is golden and crispy.
