Grilled Salsa Verde Pepper Jack Chicken Ingredients: 1 1/2 pounds thin-sliced boneless, skinless chicken breasts (about 4 breasts) 12 ounces salsa verde (Trader Joe聮s recommended) 3 tablespoons olive oil 2 tablespoons lime juice 1 teaspoon cumin 1 teaspoon salt (or more, to taste) 1 teaspoon freshly ground black pepper 4 slices pepper Jack cheese (or as desired) Fresh cilantro, finely minced (optional, for garnish) Lime wedges (optional, for serving) Directions: In a large zip-top plastic bag, combine the chicken breasts, salsa verde, olive oil, lime juice, cumin, salt, and pepper. Seal the bag and gently mix everything together to evenly coat the chicken. Place the bag in the refrigerator for at least 30 minutes, or up to overnight, to allow the flavors to meld. Lightly oil the grill grates and preheat the grill to medium-high heat. Place the marinated chicken on the grill, close the lid, and grill for about 5 minutes on the first side. Flip and grill for an additional 4 minutes on the other side, or until the chicken is thoroughly cooked. Reduce the heat to medium-low, add a slice of pepper Jack cheese to each chicken breast, close the lid, and let the cheese melt for about 1 minute. Garnish with fresh cilantro and serve with lime wedges if desired. Adjust seasoning with additional salt, pepper, or salsa to taste. Enjoy the flavors of Peru with this succulent roast chicken infused with aromatic spices, accompanied by a vibrant green sauce.
Ingredients: 1 whole chicken, about 3-4 lbs, cleaned and patted dry. 1 tablespoon olive oil. 1 teaspoon ground cumin. 1 teaspoon smoked paprika. 1 teaspoon dried oregano. Salt and black pepper to taste. 4 cloves garlic, minced. 1 cup chicken broth. 1/2 cup white wine vinegar. 1/4 cup soy sauce. For Green Sauce:. 1 cup fresh cilantro, chopped. 1/2 cup fresh parsley, chopped. 1 jalapeo pepper, seeded and chopped. 2 cloves garlic. 1/4 cup mayonnaise. 2 tablespoons olive oil. Salt and black pepper to taste.
Instructions: In a small bowl, mix cumin, smoked paprika, dried oregano, salt, black pepper, and minced garlic to create a spice rub. Rub the spice mixture over the whole chicken, ensuring it's well-coated. Select the 'Saute' function on the pressure cooker. Heat olive oil and sear the chicken on all sides until golden brown. Add chicken broth, white wine vinegar, and soy sauce to the pressure cooker. Secure the lid and set the pressure cooker to 'Poultry' or 'Manual' for 25 minutes. Once cooked, allow natural pressure release for 10 minutes, then quick-release any remaining pressure. While the chicken is cooking, prepare the green sauce by blending cilantro, parsley, jalapeo, garlic, mayonnaise, olive oil, salt, and black pepper until smooth. Serve the Peruvian-style roast chicken with the green sauce on the side.

Ingredients: 2 boneless, skinless chicken breasts, sliced thinly. 2 cups snow peas, trimmed. 1 red bell pepper, thinly sliced. 1 small onion, thinly sliced. 3 cloves garlic, minced. 1 tablespoon ginger, minced. 2 tablespoons low-sodium soy sauce. 1 tablespoon oyster sauce. 1 tablespoon rice vinegar. 1 teaspoon cornstarch. 1 tablespoon vegetable oil. Salt and pepper to taste. Sesame seeds for garnish optional.
Instructions: Combine the soy sauce, oyster sauce, rice vinegar, and cornstarch in a small bowl. Put aside. In a big skillet or wok, heat the vegetable oil over high heat. While the chicken is still pink, add the slices and stir-fry for 34 minutes. Take out of the pan and place aside. Add a little extra oil to the same pan and add the minced ginger and garlic. Stir-fry until fragrant, about 30 seconds. Add the red bell pepper and onion slices. Cook for two to three minutes, or until they begin to soften. Stir-fry the snow peas for an additional two minutes after adding them. Place the cooked chicken back in the pan and cover everything with the sauce mixture. Stir-fry for a further two to three minutes, or until the sauce gets thicker and covers every component. To taste, add salt and pepper for seasoning. If desired, top hot dish with sesame seeds for garnish. Savor your delicious, healthful food!

Quick and easy chicken dish that tastes great and is spicy!
Ingredients: 1 lb chicken thighs, diced. 1/4 cup soy sauce. 2 tbsp hoisin sauce. 2 tbsp rice vinegar. 2 tbsp honey. 2 cloves garlic, minced. 1 tsp ginger, grated. 1/4 cup peanuts. 2 tbsp vegetable oil. 1 bell pepper, diced. 2 green onions, sliced for garnish.
Instructions: In a bowl, mix soy sauce, hoisin sauce, rice vinegar, honey, garlic, and ginger. Heat vegetable oil in a skillet over medium-high heat. Add diced chicken and cook until browned. Add diced bell pepper and peanuts, cook until peppers are tender. Pour the sauce mixture over the chicken and vegetables. Cook until sauce thickens and coats the chicken. Garnish with sliced green onions before serving.

Ingredients: 4 chicken breasts, boneless and skinless. 1 cup shredded coconut. 1/2 cup breadcrumbs. 1/4 cup flour. 2 eggs, beaten. Salt and pepper to taste. Cooking oil spray.
Instructions: Get the oven ready by heating it up to 400F 200C. Shred the coconut and mix it with the breadcrumbs, flour, salt, and pepper in a shallow bowl. Dip each chicken breast in eggs that have been beaten, and then cover it all over with the coconut mixture. Line a baking sheet with parchment paper and put the chicken breasts on it. Spray a little cooking oil spray on top of each chicken breast. After the oven is hot, bake the chicken for 25 to 30 minutes, or until it is fully cooked and the coating is golden and crispy. Enjoy while hot!

Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165F 75C when tested with a meat thermometer.
