A refreshing and flavorful couscous salad with a Mediterranean twist. This Salade de Couscous is perfect for a light and healthy meal.
Ingredients: 1 cup couscous. 1 1/4 cups boiling water. 1/4 cup olive oil. 2 tablespoons lemon juice. 1 teaspoon ground cumin. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1 cup cherry tomatoes, halved. 1 cucumber, diced. 1/2 red bell pepper, diced. 1/2 yellow bell pepper, diced. 1/4 cup red onion, finely chopped. 1/4 cup fresh parsley, chopped. 1/4 cup fresh mint leaves, chopped. 1/2 cup feta cheese, crumbled. 1/4 cup Kalamata olives, pitted and sliced.
Instructions: Put the couscous in a bowl that can handle heat. Cover and let the couscous sit for 5 minutes while the water boils. Use a fork to fluff up the couscous and separate the grains. Get a small bowl and mix the olive oil, lemon juice, cumin, salt, and black pepper with a whisk. Coarsely chop the cucumber, red and yellow bell peppers, red onion, parsley, and mint and put them in a large salad bowl. Pour the dressing over the salad and mix it all together. Add the crumbled feta cheese and sliced Kalamata olives slowly. Put it in the fridge for at least 30 minutes to let the flavors mix. Serve cold, and if you want, add more mint leaves to the top.

The chicken Provencal dish is delicious. It has soft chicken breasts cooked with bright Provencal vegetables like cherry tomatoes, zucchini, bell peppers, and eggplant. This dish brings the tastes of the Mediterranean to your table with herbs like oregano and thyme that smell great.
Ingredients: 4 chicken breasts. 2 tablespoons olive oil. 1 onion, thinly sliced. 2 cloves garlic, minced. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. 1 zucchini, sliced. 1 eggplant, diced. 1 cup cherry tomatoes. 1 teaspoon dried thyme. 1 teaspoon dried oregano. Salt and pepper to taste.
Instructions: Warm the oven up to 190C 375F. Use salt, pepper, thyme, and oregano to season chicken breasts. Warm up the olive oil in a big pan over medium-low heat. It will take about 34 minutes per side for the chicken breasts to get brown on both sides after you add them. Take it out of the pan and set it aside. If you need to, add more olive oil to the same pan and then add the onion and garlic. About 2 minutes of cooking will soften the food. Put in eggplant, zucchini, and bell pepper. For about 5 to 7 minutes, or until the vegetables are soft, cook. Add the cherry tomatoes and cook for two more minutes. Place the vegetable mix in a baking dish. On top, put the chicken breasts that have been browned. Put it in an oven that's already hot and bake for 25 to 30 minutes, or until the chicken is fully cooked. If you want, you can serve it hot and top it with fresh herbs.

Mix the olive oil, red wine vinegar, dried oregano, salt, and pepper in a different small bowl using a whisk. Pour the dressing over the salad ingredients in the large bowl, and then toss everything together well. Put the Greek Rice Salad in the fridge for at least 30 minutes before you serve it so that the flavors can mix. It can be a light main course or a cool side dish. Have fun!

Instructions: Follow the directions on the package to cook the pasta until it is al dente. Run cold water over the drain and rinse. Put the cooked pasta, cherry tomatoes, cucumber, Kalamata olives, red onion, feta cheese, dill, and parsley in a large bowl. To make the dill pesto dressing, mix the olive oil, lemon juice, garlic, salt, and pepper in a small bowl with a whisk. Add the dressing to the pasta salad and mix it all together until it's well covered. Put the pasta salad in the fridge for at least 30 minutes before you serve it. If you want, you can add more fresh herbs as a garnish. Serve chilled.
