Almost sugar-free banana pudding 🍮
As a southerner I love banana pudding as much as the next person but I'm also trying to cut back on my sugar intake, so I've turned to the alternative. This is a recipe for a single serving of pudding, but you can always double it if you wanna meal prep or whatever. I consider banana pudding a recipe for love and luck, or luck in love if you will.
Bananas- Luck
Vanilla wafers- Love
Whipped cream- Love

Ingredients
1/2 a package of sugar free banana cream jello pudding
2 Tbsp sugar free whipped cream
Milk
Vanilla wafers
1/2 a banana (or more up to you)

Directions
In a small storage container mix together the whipped cream and half the banana cream packet. Slowly add in your milk a little at a time until everything is nice and smooth.
Break apart some banana slices and vanilla wafers and mix into the pudding. Garnish with more vanilla wafers or bananas.

Made some pancakes using my pancake recipe from YouTube. I did one blueberry and one regular pancake for myself and my friend. This pancake recipe is perfect for serve two people. 🥞🫐 I serve the pancakes with margarine from Land O'Lakes and my friend used maple syrup whereas I used maple syrup alternative cuz I'm supposed to eat less sugar from Lakanto

Strawberry Penna Cottas - 130 kcal/5g protein
Servings: 4 - 130 kcal/5g protein per serving
1-1/2 cups whole milk
1-1/2 teaspoons unflavored gelatin
1-1/2 pints strawberries, halved
2 tablespoons Splenda No Calorie Sweetener, Granulated
1 teaspoon vanilla extract
1 pint strawberries, sliced
Sprinkle gelatin over milk in a small saucepan; let stand 1 minute. Cook over low heat, stirring until gelatin dissolves (do not boil). Set aside to cool.
Process 1-1/2 pints strawberries in a food processor, or until pureed, stopping to scrape down sides. Press strawberries through a fine wire-mesh strainer into a bowl, discarding solids. Stir cooled milk mixture into strawberry puree. Add Splenda Granulated Sweetener and vanilla, stirring until Splenda Granulated Sweetener dissolves.
Coat 4 (6-ounce) ramekins with cooking spray. Divide strawberry mixture evenly among ramekins. Cover each ramekin with plastic wrap; refrigerate 4 hours or overnight until panna cottas are set.
Run a knife around the edge of each panna cotta and unmold onto serving plates. Serve with sliced strawberries.

No-sugar & No-flour Chocolate Cupcakes Recipe!
This is a very simple and easy recipe that does not contain added sugar and uses alternatives of flour!!
Ingredients:
2 eggs
1/4 (60g) plain yogurt
1/4 (85g) honey
1 tsp vanilla extract
1 cup (90g) almond flour/oat flour
3 tbsps (20g) cocoa powder
1 + 1/2 tsp (6g) baking powder
Step-by-step:
In a bowl, add the two eggs and beat until bubbles are formed
Add the rest of the wet ingredients and mix throughly
Slowly add your chosen flour and the cocoa powder (preferably 100% cocoa) and mix gently
Mix in the baking powder
You are free to add topping of your liking! (ex.: chocolate chips, nuts etc.)
Pour the batter into your tray and bake in preheated oven of 350°F (180°C) for about 20 minutes
Enjoy!

HEY!
Reminder
You need sugar to make use of electrolytes. You need fat to process vitamins/minerals out of your foods. You aren't just depriving yourself of the big nutrients you aren't utilizing the smaller ones.
Normal electrolyte mixes should have around 10g, 40cal of sugar. You should be eating your veggies with dip or following a meal that has some oil, even just a handful of nuts.
If you aren't going to eat enough, please at least plan carefully, do your research, you're worth it.
