Thought I'd share my favorite bread recipe and storage method :) I make 2-3 boules every couple of weeks and eat a slice as toast with an over-easy egg for breakfast every day. Love that it's easy to make and there's no sugar.

No-knead Artisan Bread
Tools Dutch oven (preferably cast iron or coated cast iron) Mixing bowls & ramekins Working surface Oven
Ingredients 3 cups bread flour 1.5 t of salt 1 egg white 2 egg yolks 2 T melted butter ¾ cup milk Barm or barm substitute- - ½ cup warm water - ½ t yeast - 1 T bread flour Handful of cornmeal
Method Combine barm sub ingredients in a cup and set aside to let the yeast activate. It should turn frothy after a few minutes.
Combine flour and salt in a medium mixing bowl. In ramekins, separate egg yolks from the one egg white. Slowly whisk the melted butter together with the yolks. Use a small mixing bowl to heat the milk to lukewarm in the microwave, then add egg white and milk, then barm sub.
Make a well in the dry ingredients, then add wet and mix thoroughly with hands for a few minutes so that plenty of air enters the dough. The dough will be sticky. Shape into a ball, cover the bowl and dough with a damp cloth. Set aside for 12 - 24 hours at room temp to rise (the longer it proofs, the stronger the flavor). It should be doubled in size by the end. After resting, preheat the oven to 450 with the dutch oven inside.
Turn out the dough onto a floured working surface; the dough should be spongy. Gently shape into a boule. Try not to work too much flour into the dough, you don’t want to knead it. Lightly score the top of the boule with a bread knife. Sprinkle a thin layer of cornmeal in the bottom of the preheated dutch oven, and place boule into the dutch oven and cover. Bake for 30-35 min, or until the crust is deep golden brown.

Almost sugar-free banana pudding 🍮
As a southerner I love banana pudding as much as the next person but I'm also trying to cut back on my sugar intake, so I've turned to the alternative. This is a recipe for a single serving of pudding, but you can always double it if you wanna meal prep or whatever. I consider banana pudding a recipe for love and luck, or luck in love if you will.
Bananas- Luck
Vanilla wafers- Love
Whipped cream- Love

Ingredients
1/2 a package of sugar free banana cream jello pudding
2 Tbsp sugar free whipped cream
Milk
Vanilla wafers
1/2 a banana (or more up to you)

Directions
In a small storage container mix together the whipped cream and half the banana cream packet. Slowly add in your milk a little at a time until everything is nice and smooth.
Break apart some banana slices and vanilla wafers and mix into the pudding. Garnish with more vanilla wafers or bananas.

Made some pancakes using my pancake recipe from YouTube. I did one blueberry and one regular pancake for myself and my friend. This pancake recipe is perfect for serve two people. 🥞🫐 I serve the pancakes with margarine from Land O'Lakes and my friend used maple syrup whereas I used maple syrup alternative cuz I'm supposed to eat less sugar from Lakanto

These look so yummy! I would recommend for anyone who either is diabetic or just wants to cut down on their sugar to substitute the regular pie filling with sugar free filling. I wonder what other pie themed taquitos you could make.

Strawberry Penna Cottas - 130 kcal/5g protein

Servings: 4 - 130 kcal/5g protein per serving
1-1/2 cups whole milk
1-1/2 teaspoons unflavored gelatin
1-1/2 pints strawberries, halved
2 tablespoons Splenda No Calorie Sweetener, Granulated
1 teaspoon vanilla extract
1 pint strawberries, sliced
Sprinkle gelatin over milk in a small saucepan; let stand 1 minute. Cook over low heat, stirring until gelatin dissolves (do not boil). Set aside to cool.
Process 1-1/2 pints strawberries in a food processor, or until pureed, stopping to scrape down sides. Press strawberries through a fine wire-mesh strainer into a bowl, discarding solids. Stir cooled milk mixture into strawberry puree. Add Splenda Granulated Sweetener and vanilla, stirring until Splenda Granulated Sweetener dissolves.
Coat 4 (6-ounce) ramekins with cooking spray. Divide strawberry mixture evenly among ramekins. Cover each ramekin with plastic wrap; refrigerate 4 hours or overnight until panna cottas are set.
Run a knife around the edge of each panna cotta and unmold onto serving plates. Serve with sliced strawberries.
