Thought I'd share my favorite bread recipe and storage method :) I make 2-3 boules every couple of weeks and eat a slice as toast with an over-easy egg for breakfast every day. Love that it's easy to make and there's no sugar.

No-knead Artisan Bread
Tools Dutch oven (preferably cast iron or coated cast iron) Mixing bowls & ramekins Working surface Oven
Ingredients 3 cups bread flour 1.5 t of salt 1 egg white 2 egg yolks 2 T melted butter ¾ cup milk Barm or barm substitute- - ½ cup warm water - ½ t yeast - 1 T bread flour Handful of cornmeal
Method Combine barm sub ingredients in a cup and set aside to let the yeast activate. It should turn frothy after a few minutes.
Combine flour and salt in a medium mixing bowl. In ramekins, separate egg yolks from the one egg white. Slowly whisk the melted butter together with the yolks. Use a small mixing bowl to heat the milk to lukewarm in the microwave, then add egg white and milk, then barm sub.
Make a well in the dry ingredients, then add wet and mix thoroughly with hands for a few minutes so that plenty of air enters the dough. The dough will be sticky. Shape into a ball, cover the bowl and dough with a damp cloth. Set aside for 12 - 24 hours at room temp to rise (the longer it proofs, the stronger the flavor). It should be doubled in size by the end. After resting, preheat the oven to 450 with the dutch oven inside.
Turn out the dough onto a floured working surface; the dough should be spongy. Gently shape into a boule. Try not to work too much flour into the dough, you don’t want to knead it. Lightly score the top of the boule with a bread knife. Sprinkle a thin layer of cornmeal in the bottom of the preheated dutch oven, and place boule into the dutch oven and cover. Bake for 30-35 min, or until the crust is deep golden brown.

Я решила вновь вернуться к сахарному детоксу .
Множество статей и передач, где авторы пугали диабетом и называли сахар «‎белой смертью», никогда не производили на меня пугающего эффекта. «‎Со мной этого не произойдёт», думала я, наблюдая какое разрушительное воздействие оказывает шоколад, булочки с корицей или раф с карамельным сиропом, если ими злоупотреблять.
Когда я чувствую упадок сил, то пью кофе с шоколадом. Если мне становится грустно, я ем конфеты или большой кусок торта «‎Наполеон». Спойлер: усталость и грусть я чувствую постоянно. Быть может, всё дело в витаминах? Я пью витамин D, B12, Омегу и Магний, но чувствую себя всё также — с вечным пониженным давлением и совершенно упадническим настроением, близким �� депрессии.
Конечно же, живя в Белгороде, я испытываю стресс и апатию. Но всё же корень зла — неправильный образ жизни, полностью разрушенный режим сна и переизбыток углеводов в моём организме.

Вчера зашла в аккаунт известного нутрициолога и поразилась тому, что каждый симптом, сигнализирующий о больших проблемах, можно с легкостью применить и ко мне. Просыпаюсь уставшей? Да. Ломкие ногти и сухие волосы? Да. Отечность и серый цвет лица? Да. Зуд кожи головы, постоянная перхоть и невозможность найти подходящий шампунь? Да. Вечером чувствую себя выжатой как лимон, хотя ничего не делала? Да. Заедаю стресс сладким и мучным? Да. Стремительно растущий лишний вес? Да. Пугающая частота положительных ответов.
Знаю, что будет сложно. На протяжении многих лет мой организм «‎сидел на углеводах» как на наркотиках и я не строю иллюзий, что с легкостью откажусь от любимых шоколадок без всяких последствий. Был в моей жизни период, когда я принимала антидепрессанты — всего месяц, но синдром отмены накрыл меня с головой. Быстрые углеводы — та же «пилюля», вызывающая привыкание. Ожидаю, побочных эффектов, но я готова.

Almost sugar-free banana pudding 🍮
As a southerner I love banana pudding as much as the next person but I'm also trying to cut back on my sugar intake, so I've turned to the alternative. This is a recipe for a single serving of pudding, but you can always double it if you wanna meal prep or whatever. I consider banana pudding a recipe for love and luck, or luck in love if you will.
Bananas- Luck
Vanilla wafers- Love
Whipped cream- Love

Ingredients
1/2 a package of sugar free banana cream jello pudding
2 Tbsp sugar free whipped cream
Milk
Vanilla wafers
1/2 a banana (or more up to you)

Directions
In a small storage container mix together the whipped cream and half the banana cream packet. Slowly add in your milk a little at a time until everything is nice and smooth.
Break apart some banana slices and vanilla wafers and mix into the pudding. Garnish with more vanilla wafers or bananas.

Made some pancakes using my pancake recipe from YouTube. I did one blueberry and one regular pancake for myself and my friend. This pancake recipe is perfect for serve two people. 🥞🫐 I serve the pancakes with margarine from Land O'Lakes and my friend used maple syrup whereas I used maple syrup alternative cuz I'm supposed to eat less sugar from Lakanto
