Ingredients
3 Capsicum
2 cups Cooked Rice
5-6 Garlic
1 Onion
3 Cloves
2-3 Cinnamon
1/4 tsp Pepper Corns
3 tbsp Bengal Gram
2 tbsp Coriander Seeds
Red Chilies
1 tsp Cumin Seeds
1 tsp Mustard Seeds
1/2 tsp Turmeric Powder
1/2 cup Curry Leaves
2 1/2 tbsp Oil
Salt
Instructions
To start, heat a pan and add 3 cloves, 2 to 3 cinnamon pieces, 1/4 tsp of pepper corns and 3 tbsp of bengal gram dal.
Roast these ingredients on a low flame until they change color, then add 2 tbsp of coriander seeds and continue roasting for a while.
Next, add red chilies as per your taste and a tsp of cumin seeds.
Stir everything together and put off the flame.
Once the mixture has cooled down completely, grind it into a fine powder and keep it aside for a while.
In a separate pan, heat 1 1/2 tbsp of oil and add a chopped onion.
Saute it until it turns transparent, then add 5 to 6 garlic cloves cut into pieces.
Once the garlic is fragrant, add 3 finely chopped capsicum and saute everything well.
Add 1/2 tsp of turmeric powder and salt to taste, and mix everything together.
Cook the mixture until the capsicum pieces turn soft.
Next, add the ground powder mixture to the capsicum mixture, and mix everything together.
Finally, add the cooked rice to the mixture and mix well.
Heat another pan with a tbsp of oil, and add a tsp of mustard seeds and 2 reeds of curry leaves.
Once they start spluttering, add the rice mixture to the pan.
Place a lid on top and let it cook on low flame for a while.
Alternatively, place a pan on the stove, cover the rice pan with a lid, and cook for 10 minutes on low heat with no steam coming out.
After 10 minutes, put off the flame and open the lid.
Mix everything together and add a dash of lemon juice for some tanginess.
If you wish, you can also add some roasted peanuts for a crunchy texture.
Your delicious and flavorful Capsicum Rice is now ready to be served. Enjoy!

Fondant au Chocolat

It's rather difficult to try to explain what exactly is the beautifully soft texture of a Fondant au Chocolat, thus I won't endeavour it. It is much easier to bake one and indulge in its deliciousness, thus I invite you to do it! Happy Sunday!
Ingredients (serves 4 to 6):
200 grams/7 ounces very good dark chocolate (at least 75% cocoa)
6 tablespoons unsalted butter
4 large eggs
1/2 cup caster sugar
3/4 cup plain flour
1 tablespoon cocoa powder
1/4 cup cocoa nibs
Preheat oven to 190°C/375°F.
Butter a pie plate or cake tin generously, and dust lightly with flour. Set aside.
Break dark chocolate into a medium bowl. Add butter, cut into chunks, and fit the bowl over a small saucepan of simmering water over medium-high heat (the bottom of the bowl should not touch the water).
Melt chocolate and butter together, stirring with a spoon until smooth, silky and shiny. Remove from the heat; set aside.
Break the eggs in a large bowl. Add caster sugar, and whisk energetically until pale yellow and fluffy, and the mixture falls from the whisk like a ribbon.
Sift in flour and cocoa, and give a good stir until well-blended.
Then, gently fold in melted chocolate and cocoa nibs, until completely combined.
Pour batter into prepared pie plate or tin, levelling with a spatula.
Place in the middle of the warm oven, and bake, at 190°C/375°F, for 25 minutes.
Remove from the oven and let cool slightly or completely.
Serve Fondant au Chocolat warm or cooled, with a glass of chilled Champagne!

Blueberry Galettes

These simple Blueberry Galettes make a more-ish and deliciously comforting dessert to your weekend lunch, especially on a grey and rainy day! Happy Sunday!
Ingredients (serves 3):
1 1/3 cup frozen blueberries
4 tablespoons caster sugar
2 tablespoons coarnflour (starch)
1/2 lemon
415 grams/14.6 ounces Almond Pastry 
1 egg
Icing Sugar, for sprinkling
Preheat oven to 200°C/395°F. Line a baking tray with baking paper; set aside.
In a medium bowl, combine frozen blueberries, caster sugar and cornstarch. Thoroughly squeeze in the juice of the lemon halve. Give a good stir until perfectly combined. Set aside.
Divide Almond Pastry into three equal portions, and roll each onto a lightly floured surface, into a circle, not too thinly. Trim the edges, and gently place Almond Pastry circles onto prepared baking tray.
Arrange blueberry mixture in a heap onto the centre of the Pastry circles. Fold the edges of the galettes, slightly on top of the blueberries.
Break the egg in a small bowl, and beat it lightly.
Brush the edges of the galettes with egg wash.
Place in the hot oven, and bake, at 200°C/395°F, 25 to 30 minutes, until pastry is a nice golden brown colour.
Remove from the oven, and let cool slightly. Then, sprinkle lightly with Icing Sugar.
Serve Blueberry Galettes, warm or cooled, with or without a scoop of Whisky Ice Cream or a dollop of crème fraîche, and a glass of chilled Champagne!
