Maple Pear and Hazelnut Cake
This Thanksgiving, I am also baking a cake. Not just any cake, though! A moist and light Maple Pear and Hazelnut Cake that celebrates this year's harvest in the garden, and is a delicious mouthful of Autumn comfort! Happy Thanksgiving, friends!
Ingredients (6 to 8):
1 ½ tablespoon unsalted butter
1/2 cup hazelnuts
1 cup Pears in Whisky Syrup + 1/4 cup of the Whisky Syrup
2 cups plain flour
1 teaspoon baking powder
½ teaspoon bicarbonate of soda
¼ teaspoon salt
¼ cup caster sugar
4 eggs
1/3 cup hazelnut milk
1/4 cup pure (Grade A) Canadian Maple Syrup
Preheat oven to 160°C/320°F. Butter a 20cm/8” cake tin; set aside.
In a small saucepan, melt butter over a low flame. Once melted, remove from the heat. Set aside.
Toast hazelnuts in a small frying pan over a high flame, a few minutes until just fragrant. Remove from the heat and allow to cool.
Save four beautiful Pear halves, and place them, cut side down at the bottom of prepared cake tin. Dice the rest of the Pear halves; set aside.
Blitz toasted hazelnuts in a food processor, until you have a fine enough powder (resembling coarse meal).
In a large bowl, combine flour, ground hazelnuts, baking powder, bicarbonate of soda, salt and caster sugar. Give a good stir with a wooden spoon.
Dig a well in the middle of the dry ingredients, and break in the eggs. Give a good and gentle stir, gradually adding hazelnut milk, melted butter, Maple Syrup and Whisky Syrup until just combined.
Then, gently fold in Diced Pears, until just combined.
Gently spoon batter evenly over the Pear halves. Place cake tin in the middle of the oven, and bake, at 160°C/320°F, 45 minutes, until a toothpick inserted in the middle of the cake comes out clean.
Remove from the oven, and allow to cool in the tin, about 15 minutes, before turning out onto serving plate.
Generously brush with Maple Syrup.
Serve Maple Pear and Hazelnut Cake warm or at room temperature, with glass of chilled Champagne.

Any recommendations for cruelty-free Xmas lunch options?
Oh, sure! For which hemisphere? What I recommend for Australia would be pretty different for what I'd recommend elsewhere, haha.
For the northern hemisphere, you have a cavalcade of dishes involving baked and roasted veggies, stews, showstopping pumpkin and squash dishes, stuff like that. I'd recommend making one or two 'main' dishes, then having a whole host of fun sides. Root veggies and mushrooms are all seasonal and super filling.
Main dish suggestions: Mushroom wellington, stuffed butternut roast, shepherd's pie. Nice and wintery, all have protein. For a less-protein-y option, this cauliflower is pretty cool-looking!
Side dish suggestions: Aside from all the roast veggies and delish cool-weather salads with grains and stuff, here's a recipe for vegan Yorkshire puddings! You can use the chickpeas for another dish, too - maybe a topped hommus?
Dessert suggestions: While there are always cakes and puddings and the like, stuffed baked fruits are always pretty funky-looking too. Here are some stuffed apples and stuffed pears.
The southern hemisphere is a little trickier! Our Christmas dishes do sometimes resemble northern hemisphere ones, but sometimes it's 35 C and the idea of putting the oven on makes you want to die, and also seafood is pretty traditional. I've always been partial to just taking advantage of the fact that summer is fantastic for abundant fresh produce, and making an absolute ton of different dishes. No actual Main Dish(tm), but lots of smaller ones that people can pick and choose from.
We're having a more casual thing this year - tomorrow, actually! - because my brother and SIL are taking nibling down to SIL's family in the country for actual Christmas, so what we're doing is my favourite loaded potato salad (you can add protein in the form of vegan deli slices, or marinated tofu or tempeh, or beans, or honestly anything you like), homemade sushi rolls (tofu and veggies), and breads and dips, although that's admittedly just a small casual menu for a small casual thing. Here's what we did a few years back, though, and that has a bunch more stuff, including an admittedly store-bought vegan roast, haha.
But yeah, lots of salads, lots of fresh veggie dishes. Desserts can really focus on amazing fresh fruits, like mangoes and cherries. For hot dishes, using a barbeque is a great option; here are recipes for portobello mushrooms, veggie skewers, and corn ribs. Pasta salads can be made ahead of time and left to cool - if you don't mind using the oven, one of my favourites has pasta, spinach leaves, roasted pumpkin, sundried tomatoes, capers, and pine nuts, with a maple mustard dressing (if it's just too damn hot, you can do the pumpkin on the stove, but roasting does add lovely depth of flavour). Bean salads are great too, they work very well with fresh tomatoes (especially if you get a bunch of different colours). Stuffed veggies are great too, capsicum and eggplant in particular hold their shapes well.
For dessert, focus on dishes using fresh fruit, and stuff you can make ahead. You can make mini-pavlovas using meringue made with aquafaba, trifles (most custard powder mixes are already vegan, and there are a lot of jellies that can be made with things like agar, including commercially-available ones), ice creams (including commercially-available ones - if you can get a reasonably-priced vanilla, which Coles has if you're in Australia, you can make that into a huge variety of different flavour combinations, including an extremely nice rocky road using chocolate chunks, nuts, and Turkish delight - just make sure it's the proper stuff and not the cheap shortcut type that uses gelatin and cochineal), I really enjoy medjool dates stuffed with marzipan and dipped in chocolate...

I actually tend to do not much of anything for my birthday, in my experience it doesn't go well and it's not worth celebrating.
I stayed up late last night baking a chocolate cake, so my boys woke me up this morning with cake for breakfast. I got a present (that I bought for myself - a foot spa with heating and foot shower function), and then I dropped them off at school and went to work. Yay?
I took a box of gourmet flavoured giant marshmallows to work to share (strawberry and passion fruit pavlova, raspberry lamington, lemon merengue pie, mint choc slice, sticky date pudding, and fairy bread... they were Aussie flavours, and SO DELICIOUS).
Then I came home. The original plan was to go out to dinner, but I wasn't really feeling up to it. So we Uber-ed in and we're now watching Buffy.
Sounds like a good day to me.

Honestly, all the places that do gluten free fruit cake, Christmas pudding & mince (fruit, sultanas/raisins) pies, makes me wish I liked any of the above. I’m on board with raisin bread, I’m on board with hot cross buns but Christmas takes that concept & takes it to the extreme. 99% dried fruit, .9% miscellaneous spices & .1% dough. I just can’t do it. At least the woolies ginger bread people are delicious & pavlova is always gluten free ☺️

Rosie Berry Angel Food Cake
I made this beautifully floral and fruity Rosie Berry Angel Food Cake for Mother's Day, but it is so good, so gorgeously light, so flavourful, it might actually become a Summer favourite!
Ingredients (serves 4):
half a dozen Garden Strawberries
2 tablespoons Rosie Gin Liqueur
1/3 cup plain flour
2 tablespoons caster sugar
4 large egg whites
½ teaspoon salt
½ teaspoon cream of Tartar
1/3 cup Rose Sugar
1/2 teaspoon Rose Bitters
1/3 cup Dried Rose Petals
4 fresh raspberries, quickly rinsed
a teaspoon Rosie Gin Liqueur
a small bunch sweet william flowers, shaken and dusted (or other edible flowers from your garden)
Rinse Garden Strawberries under cold water and pat them dry. Save the two largest for later, and dice remaining Strawberries.
Place diced Strawberries into a small bowl. Drizzle generously with Rosie Gin Liqueur, and toss gently to combine. Chill in the refrigerator, at least, a couple of hours.
Preheat oven to 190°C/375°F. Butter a deep round cake pan. Set aside.
In a medium bowl, sift flour and caster sugar together. Set aside.
In another medium bowl, beat egg whites, gradually increasing speed to high until soft peaks form. Add salt and cream of Tartar, and continue beating, gradually adding Rose Sugar, until stiff peaks form. Gently fold in Rose Bitters with a rubber spatula. Then, gently fold in flour mixture, in three times, adding the Dried Rose Petals with the last of the flour mixture, until completely blended.
Spoon batter carefully into prepared cake pan. Level well with rubber spatula, to avoid air pockets.
Place in the warm oven, and bake at 190°C/375°F, 20 to 25 minutes, until just golden brown and sponge springs back when lightly touched. Let cool slightly, then turn over onto serving plate. Let cool completely.
Before serving, spoon Rose Liqueur Strawberries on top. Halve remaining Strawberries, and place them in a small bowl with the raspberries. Drizzle with Rosie Gin Liqueur, tossing gently, to coat, and arrange them onto the cake. Finally, garnish with sweet william flowers.
Serve Rosie Berry Angel Food Cake with chilled Champagne.

What even is Australian Christmas like???
very hot. i’ll give like a detail of what happens in my family since idk what other families really do but i think ours is pretty stereotypical. many families involve swimming in christmas is what i know. we have a massive christmas dinner on christmas eve and opening presents from extended family (it’s ALWAYS hand creams and perfumes from aunts and uncles and books from my grandad) in summer dresses and formalwear at my cousins place usually involving a dip in the pool (it’s basically aussie tradition). christmas day usually involves opening presents (we don’t really use stockings though we did when i was younger) and then we go to my grandads in whatever dress we get for christmas for tea, mince pies, and pudding. we go home and host a christmas lunch with my mums side of the family and this is what is peculiar for the rest of the world i think- what we eat. we have:
king prawns
turkey
cold ham + cold meats
roasted vegetables
pavlova (it’s like a meringue cake and it’s the highlight)
more pudding (it’s a different kind to before)
cabanossi
dips and crackers
potato salad
its just a lot of summer-y food idk lmao, i know some houses do barbecues to be extra australian
more mince pies
also we have bonbon crackers i don’t know if that’s universal, but you pull them with another person and whoever pulls the bigger half gets the cheap prize inside (usually a keychain, a paper hat and a joke lmao)
then we open more presents, maybe go for a swim, some of my family watches tv and then they go home and we relax and watch carols or whatever christmas special is on.
i should add!! many people go on walks around their communities to look at christmas lights and such in the weeks leading up to christmas, my family does it too and it’s very fun. we don’t have mistletoe though that’s another thing that’s different

❄️Headcanons for Feanorian Brothers Favorite Christmas Dessert❄️
Hi! Christmas is getting closer and this idea came to my mind since this year I’m taking charge on making desserts for Christmas Dinner. I hope you like it!🎄💖
🎄Maedhros Candy canes/ Apple pie -I don’t know why but when I think about Maedhros and Christmas candy canes instantly appear on my mind.
-I imagine little Maedhros searching for candy canes in his Christmas boot near the tree.
-“Yes I have CANDY CANES!” ( little him after he found candy canes)
-I also imagine Maedhros going around the palace humming a Christmas tune and eating some delicious candy canes. This earn a few smiles from the ones who work at the palace.
-I also think he often probably bring some of candy canes wherever he goes. He just need to take them out of his pocket.
-I think Maedhros likes Apple pie and especially eating it after the Christmas dinner. 🎁Maglor Gingerbread men cookies / Pumpkin pie -Maglor is a sweetheart and that’s why I think he may like some delicious gingerbread cookies
-I imagine Maglor when he was younger preparing some of them with Nerdanel’s help and later he would give some to his uncles and cousins
-I also think Maglor would actually like pumpkin pie. I picture him writing a song near the cozy fire of his chambers eating some pumpkin pie
-I also think Maglor would be happy to eat some pumpkin pie alongside his brothers company. ❄️Celegorm Christmas Pavlova/ Meringues -Christmas pavlova may not be a common Christmas treat for some people and that’s why Celegorm likes it so much, he likes to try new things!
-I imagine little Celegorm during Christmas dinner with his family and wondering what the pavlova tastes like and when he actually tasted it he loved it
-I also think Aredhel might share his liking for it and both eating alone the whole Christmas pavlova
-I imagine that Celegorm might like meringues, and he would adore for them to have a touch of peppermint just to make the flavor different. ☃️Caranthir Chocolate Cake / Brownies -Caranthir “the dark” might also reflect that dark personality on his goodie likings.
-I imagine Caranthir often going to the palace kitchen in the middle of the night and serving himself a big slice of chocolate cake .
-I also think sometimes he is spotted by one of his brothers and he might invite them to eat some with him .
-“Caranthir what’s wrong with you?! It’s 3 am and your are eating cake?”
-“Do you want some?”
-I also think Caranthir might like to eat some Brownies, and he will love them if they are made of dark chocolate .
-And we can add an extra point to the brownies if they have some Christmas decorations on them
🎅🏻Curufin Fruit cake / Christmas pudding -I often picture Curufin as a traditionalist, just as his father
-I imagine little Curufin making some fruit cake with his mother and when cutting a slice to directly deliver this to his father’s workplace.
-“Curufinwe this is delicious! Thank you” (Feanor after eating some fruit cake)
-I also imagine Curufin eating some Christmas pudding after dinner and he will serve at least 3 times. The twins might tease him for doing this.
-When he really likes something, he really likes it 🌟Amras Hot cocoa / Christmas candies -I also don’t know why but when I imagine Amras and Christmas hot cocoa comes to my mind
-I picture little Amras playing with his toys and his big brother Maedhros coming to his room and giving him some delicious hot cocoa
-Amras would also like some Christmas candies, and I mean every sweet he finds
-From chocolates to sweet caramels, he likes them all!
-I also picture little Amras and Amrod going to the market with their mother and sweet candy catching the attention of both
✨Amrod Sugar cookies / Christmas cookies -I imagine often Amrod as the type of brother who would obsess with something
-I think Amrod would be obsessed with cookies, in this case Christmas cookies!
-Sugar cookies, chocolate cookies, oatmeal cookies, chocolate chip cookies...
-I think he might share Maglor’s liking for gingerbread cookies
-I imagine Maglor with little Amrod preparing Christmas cookies and eating all of them after they are ready
-I also imagine Amrod having a “Secret compartment” somewhere in his room where he stores all his cookies so Celegorm wouldn't steal them

#4 “Every time I think I’m close to finally figuring you out you end up surprising me.”
“Matt, what are we doing?” Sylvie asked as she stumbled a little in her steps.
“I wouldn’t be covering your eyes if I was just going to tell you when you asked.” He reminded her, his hands lightly covering her eyes as he led her out of his bedroom. It was their first Valentine’s Day together and Matt insisted that they do something nice for it – but he also insisted that she let him plan it entirely.
Sylvie was a planner and she liked being in control, but she also appreciated a surprise and Matt was clearly excited by whatever he had up his sleeve. He’d been sneaking around all day preparing for tonight and Sylvie was excited. She’d been camping out in his room for the last little while as he got everything ready and when he came in and told her to close her eyes, she knew she was in for a treat.
“Ok, stand there.” He said as he stopped her in her steps and released his hand from her waist and moved up to her blindfold. “Happy Valentine’s Day” he said quietly as he removed it, watching expectantly for her reaction.
Sylvie’s face immediately lit up at the scene in front of her. He’d set up an indoor picnic in the middle of the practically bare living room of the house he’d recently bought. He’d hung fairy lights off the fireplace, there were candles everywhere and blankets and pillows littered the floor, creating what looked like an impossibly comfortable sitting place.
“An indoor picnic?” she asked excitedly, a bright smile on her face as she turned her head and looked up at him as he stood behind her.
“Well the other day when we were in at that dessert shop downtown you were having a horrible time picking what dessert you wanted” he said as he stepped in front of her, took her hands and led her towards the blankets.
“It all just looked so good.” She said with a groan. She hated that she could only pick one.
“They did – so I thought why not indulge for a night?” he said as Sylvie took a closer look at what was sitting on the blanket and saw a whole pile of desserts. Everything that Sylvie had toyed with getting that afternoon – chocolate cake, cheesecake, pavlova, fudge pudding, apple pie – everything was there.
“You bought all of them?” she asked in disbelief.
“Yeah. I figured we’d eat what we can, send ourselves into a food coma and then take the rest to 51 tomorrow. But you deserve to indulge in your sweet tooth for tonight.”
Sylvie laughed before leaning up and kissing him soundly, “I love you.”
“I love you” he replied before giving her another quick kiss.
“Every time I think I’m close to finally figuring you out, you end up surprising me. Who knew you were such a romantic?” she teased as she pulled him down to sit on the blankets.
“Hopelessly so.” He joked. He could be a real romantic when he wanted to be, especially with the right person. Admittedly, however, Sylvie was the person he’d been the most romantic with. He couldn’t help but want to spoil her and shower her with everything he could give to her – himself included. “And you cannot talk about surprising people.”
Sylvie quirked a brow, “What do you mean?”
“A few years back, I thought I had a pretty good idea of who Sylvie Brett was – I didn’t appreciate there was so much more to learn.” He revealed as he handed her a fork and allowed her to take her pick of the desserts in front of her. "Every day feels like a surprise with you."
“Oh yeah? And what have you learned about me?” she asked curiously.
Matt looked thoughtful for a moment before saying, “I knew you were a great paramedic, but I never realised how much of a stone-cold slayer you could be – Sylvie Brett two ts.” He joked. She’d told him that story recently and it left him feeling immensely proud – but also in fits of laughter. It was just further affirmation of what he already knew – she was completely and utterly brilliant. “There are very few things you dislike in life, but your dislike of Halloween, clowns and cantaloupe is somehow unbearably sweet. There isn’t a cheesy romance novel you haven’t read, and they have made you into a hopeless romantic too, and despite any personal setbacks, that’s never changed. You’ll always believe in love and romance.”
Sylvie bit her lower lip as she took his words in. Nobody had ever taken the time to know her like he had. No one had ever wanted to know her like this. All of her little quirks, everything that made her, her – he knew and he loved.
“One thing I have always known, however, is that you are incredibly kind and generous with everyone in your life – even when people take it for granted or try to take advantage of it. I’ve always known it, but I can safely say experiencing it is one of the best feelings in the world. Talking to you or even seeing you smile is like coming up for air. I don’t know how I ever went without you.” He confessed. She was everything to him and he would happily shout it from the rooftops.
Sylvie grinned at him, “You’ve got me all figured out, huh Captain?” she teased.
“Back then I knew Brett – my colleague and friend. Now I know Sylvie – my colleague, my best friend, my love. And there’s no better person in this world.” He told her as he knocked his nose against hers before giving her a soft and lingering kiss. “… you taste like chocolate cake.”
Sylvie giggled, “This is the best chocolate cake I’ve ever had. Probably the best Valentine’s Day I’ve ever had too. Thank you for all of this… thank you for knowing me.”
Matt grinned, “Thank you for knowing me back.” She never failed to amaze him with how well she understood him.
“Best thing I ever did was getting to know you Matt Casey. My generous, sensible, courageous, loving, goofy man” she said as Matt let out a breathy laugh, smiling against her lips as she kissed him.
"I do have one more Valentine's surprise for you." he said as he reached into his pocket and held up a key. "I know we've talked about you moving in here when I actually get a working fridge and a couch..." he said as he screwed up his nose.
Sylvie chuckled, "I don't know, I could get used to this blanket and pillow set up..."
Matt smiled, "either way... giving you a key makes this feel more real." He wanted nothing more than to start their lives together in this dream home, and any steps he could take to making that a reality he would take. "So what do you say Brett? Will you move in with me?"
Sylvie beamed before holding his face in her hands and giving him three quick, solid kisses. "Absolutely." she said with a whisper. “Happy Valentine’s Day Matt – here’s to many more.” She said as she sat back and held up her fork with a piece of cake on the end, prompting Matt to do the same by way of cheers.
“Happy Valentine’s Day.” he said with a grin, clicking his fork against hers.
As much of a surprise as Sylvie Brett was to his life, it was safe to say that she was best surprise he'd ever had.

The book hasn't been released yet but I've already formed some thoughts based on what we can see previewed on Amazon.
Cover: As I mentioned before and with the UNO cards, it would have made more sense for Maryellen to be on the cover, rather than Julie. That being said, Julie is still my favorite of those four girls.
