Delight in these fluffy vegan pancakes, adorned with juicy raspberries, perfect for a cozy breakfast or brunch.
Ingredients: 1 cup flour. 1 tablespoon sugar. 2 teaspoons baking powder. 1/4 teaspoon salt. 1 cup almond milk. 2 tablespoons vegetable oil. 1 teaspoon vanilla extract. 1 cup fresh raspberries.
Instructions: Put flour, sugar, baking powder, and salt in a bowl and mix them together with a whisk. Mix the dry ingredients together with the almond milk, vegetable oil, and vanilla extract. Don't overmix; just stir until everything is mixed. Warm up a griddle or skillet that doesn't stick over medium heat. For each pancake, put 1/4 cup of batter on the pan. Once the pancake starts to bubble on top, flip it over and cook the other side until it's golden brown. Put the pancakes on a round wooden plate and put raspberries on top of and between each one. Enjoy while hot!

These vegan chocolate protein waffles are a delicious way to enjoy chocolate without feeling bad about it. They make a tasty and healthy breakfast or brunch choice because they are full of plant-based protein and have a strong cocoa flavor.
Ingredients: 1 cup whole wheat flour. 1/2 cup vegan protein powder. 1/4 cup cocoa powder. 1 tablespoon baking powder. 2 tablespoons maple syrup. 1 1/2 cups almond milk. 2 tablespoons melted coconut oil. 1 teaspoon vanilla extract. Vegan chocolate chips optional, for topping.
Instructions: Put vegan protein powder, cocoa powder, baking powder, and whole wheat flour in a large bowl. Mix the dry ingredients together with the almond milk, vanilla extract, maple syrup, and melted coconut oil. Mix until everything is well mixed and a smooth batter forms. Warm up the waffle iron and, if needed, lightly grease it with coconut oil. Spread the batter out evenly on a waffle iron that has already been heated, and cook it according to the directions on the package until it is golden and crispy. If you want, you can serve it warm with vegan chocolate chips on top. Have fun!

Vegan pistachio muffins that are moist and tasty, great for breakfast or a snack. Everyone, vegan or not, will love these muffins because they taste so good with nuts.
Ingredients: 1 3/4 cups all-purpose flour. 1/2 cup sugar. 1/4 cup brown sugar. 1/2 cup shelled pistachios, finely chopped. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1 cup non-dairy milk. 1/4 cup coconut oil, melted. 1 tbsp apple cider vinegar. 1 tsp vanilla extract.
Instructions: Warm the oven up to 190C 375F. Put paper liners in a muffin tin or grease the cups a little. Put flour, sugar, brown sugar, chopped pistachios, baking powder, baking soda, and salt in a large bowl. Don't use dairy milk. Instead, melt coconut oil and mix it with apple cider vinegar and vanilla extract in a different bowl. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Do not mix too much. Fill up about two thirds of the way to the top of each muffin cup with batter. Put it in the oven and bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. Take the muffins out of the oven and let them cool for 5 minutes in the pan before moving them to a wire rack to cool all the way through.

🇺🇸 Plant-based breakfast scramble 🍳Ever since I turned to a predominantly plant-based diet, I’ve been looking for alternatives to scrambled eggs I used to eat for breakfast every now and then. While tofu does seems like a better option (I’ll share the recipe later), I think I prefer chickpea scramble more. All I did was mash 1/2 can of chickpeas, mix it with a pinch of salt, cumin and about 1 tsp of nutritional yeast, and fry it on medium heat. I then added a couple of cherry tomatos (because I need veggies, duh), and a bit of @rudolfsorganic beetroot and horseradish spread (this goes so well with bread and different grains too) for some extra crunch and spice. . . . 🇱🇻 Turku zirņu omlete 🍳Kopš pārgāju uz primāri augu valsts uzturu, visu laiku meklēju alternatīvas iepriekš iecienītajai omletei. Lai gan tofu šķistu kā labāka izejviela šī ēdiena pagatavošanai tieši konsistences dēļ (ar šo recepti dalīšos vēlāk), pēc garšas man labāk patīk turku zirņu versija. Lai to pagatavotu, es saspaidīju 1/2 bundžu turku zirņu un sajaucu to ar šķipsnu sāls, kumīnu un aptuveni 1 tējk rauga pārslu. Visu maisījumu apcepu un pasniedzu ar pāris tomātiņiem (jo dārzeņus vajag visur) un dažas ēdk @rudolfsorganic biešu un mārrutku krēmu papildus kraukšķim un asumiņam.
