After leaving the Renaissance Center yesterday, I enjoyed some writing in Grand Circus Park before another meeting in The District. It truly felt like summer!
I stopped at home before heading back out to Midtown for a vegan cone at Cold Truth, one of my favorite spots in the neighborhood.
El Moore Gardens was bustling with activity (not shown, since I always respect the privacy of other people), so I sat in the shade while finishing my ice cream.

Enjoy how creamy and rich this vegan pumpkin ice cream is. It's a great treat any time of the year because it's made with healthy foods.
Ingredients: 2 cups canned pumpkin puree. 1 can 13.5 oz full-fat coconut milk. 1/2 cup maple syrup. 1 teaspoon vanilla extract. 1 teaspoon ground cinnamon. 1/2 teaspoon ground ginger. 1/4 teaspoon ground nutmeg. Pinch of salt.
Instructions: In a blender, combine all ingredients until smooth. Pour the mixture into an ice cream maker and churn according to manufacturer's instructions until it reaches desired consistency. Transfer the churned ice cream into a freezer-safe container and freeze for at least 4 hours or until firm. Serve scoops of vegan pumpkin ice cream and enjoy!

Ingredients: 3 cups coconut milk. 1 cup fresh mint leaves. 1 cup dairy-free chocolate chips. 1/2 cup maple syrup. 1 tsp vanilla extract.
Instructions: In a blender, combine coconut milk and fresh mint leaves. Blend until smooth. Pour the mixture into a saucepan and heat it over medium heat until it starts to simmer. Remove from heat and let it cool for 10 minutes. Strain the mixture to remove mint leaves, then pour it back into the saucepan. Add maple syrup and vanilla extract to the saucepan, stirring until well combined. Transfer the mixture into a bowl and refrigerate for at least 4 hours or until completely chilled. Once chilled, pour the mixture into an ice cream maker and churn according to manufacturer's instructions. During the last few minutes of churning, add in the dairy-free chocolate chips. Transfer the churned ice cream into a freezer-safe container and freeze for an additional 2-3 hours until firm. Serve and enjoy!

Enjoy these tasty ice cream sandwiches that are vegan and gluten-free. They are made with almond and coconut flour. It's the perfect treat for a cool day!
Ingredients: 1 cup almond flour. 1/4 cup coconut flour. 1/4 cup cocoa powder. 1/4 cup maple syrup. 1/4 cup coconut oil, melted. 1 tsp vanilla extract. Pinch of salt. 1 pint vegan ice cream of choice e.g., coconut-based.
Instructions: Put cocoa powder, maple syrup, melted coconut oil, vanilla extract, and a pinch of salt in a bowl. Mix them together until a dough forms. Spread out each piece of dough on a baking sheet lined with parchment paper so that it is about an inch thick. Freeze the dough on the baking sheet for about 30 minutes, or until it is firm. Take the dough out of the freezer when it's firm and use a cookie cutter to cut rounds out of it. Let vegan ice cream soften a bit while it's out in the open air. Once the ice cream is soft, put a scoop on one round of dough and then put another round of dough on top of it. Do it again with the rest of the dough and ice cream. After putting the ice cream sandwiches together, freeze them for about an hour, or until they are firm. When it's firm, serve and enjoy!
