Ingredients: 3 cups coconut milk. 1 cup fresh mint leaves. 1 cup dairy-free chocolate chips. 1/2 cup maple syrup. 1 tsp vanilla extract.
Instructions: In a blender, combine coconut milk and fresh mint leaves. Blend until smooth. Pour the mixture into a saucepan and heat it over medium heat until it starts to simmer. Remove from heat and let it cool for 10 minutes. Strain the mixture to remove mint leaves, then pour it back into the saucepan. Add maple syrup and vanilla extract to the saucepan, stirring until well combined. Transfer the mixture into a bowl and refrigerate for at least 4 hours or until completely chilled. Once chilled, pour the mixture into an ice cream maker and churn according to manufacturer's instructions. During the last few minutes of churning, add in the dairy-free chocolate chips. Transfer the churned ice cream into a freezer-safe container and freeze for an additional 2-3 hours until firm. Serve and enjoy!

Ingredients: 3 cups semi-sweet chocolate chips. 1 can 14 ounces sweetened condensed milk. 1/4 cup unsalted butter. 1 teaspoon vanilla extract. 1 cup chopped pecans. 1/2 cup caramel sauce.
Instructions: Line an 8x8-inch square baking pan with parchment paper, leaving some overhang for easy removal later. In a microwave-safe bowl, combine the chocolate chips, sweetened condensed milk, and butter. Microwave in 30-second intervals, stirring each time, until the mixture is smooth and fully combined. Stir in the vanilla extract and chopped pecans. Pour half of the fudge mixture into the prepared pan and spread it evenly. Drizzle half of the caramel sauce over the fudge in the pan. Add the remaining fudge mixture on top and spread it out. Drizzle the remaining caramel sauce on top, creating a swirl pattern with a toothpick or knife. Refrigerate the fudge for at least 2 hours, or until it's set. Once set, use the parchment paper overhang to lift the fudge out of the pan and place it on a cutting board. Serve these tasty and speedy Stir-Fry Fajitas in tortillas or wraps for a quick and satisfying meal. Dinner is delicious when bell peppers are colorful, the chicken is tender, and the seasoning is zesty.
Ingredients: 1 lb boneless chicken breast, thinly sliced. 1 red bell pepper, sliced. 1 green bell pepper, sliced. 1 onion, sliced. 2 cloves garlic, minced. 2 tbsp vegetable oil. 2 tsp fajita seasoning mix. 1 lime, juiced. Salt and pepper to taste. Flour tortillas, for serving. Sour cream, salsa, and guacamole for toppings.
Instructions: In a large skillet, heat vegetable oil over medium-high heat. Add sliced chicken and cook until browned and cooked through, about 5 minutes. Remove from skillet and set aside. In the same skillet, add more oil if needed. Add sliced peppers and onions, and saut until they begin to soften, about 3 minutes. Add minced garlic and saut for another 30 seconds until fragrant. Return the cooked chicken to the skillet and sprinkle with fajita seasoning mix. Stir-fry everything together for 2-3 minutes. Squeeze lime juice over the stir-fry and season with salt and pepper to taste. Serve the stir-fry mixture on flour tortillas and top with sour cream, salsa, and guacamole. Roll up the tortillas, and enjoy your delicious Stir-Fry Fajitas!

The Tequila Lime Chicken Burgers are a tasty change from the usual burger. The chicken is grilled after being marinated in a tasty tequila lime sauce. With avocado, fresh vegetables, and a hint of sour cream on top, these burgers will be a hit at your next family get-together.
Ingredients: 4 boneless, skinless chicken breasts. 1/4 cup tequila. 1/4 cup fresh lime juice. 2 cloves garlic, minced. 1 teaspoon cumin. 1 teaspoon chili powder. Salt and pepper to taste. 4 hamburger buns. 4 slices Monterey Jack cheese. 1 avocado, sliced. 1/2 cup shredded lettuce. 1/2 cup diced tomatoes. 1/4 cup red onion, thinly sliced. 1/4 cup fresh cilantro leaves. Sour cream for topping.
Instructions: In a bowl, combine tequila, lime juice, minced garlic, cumin, chili powder, salt, and pepper. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes, or up to 4 hours. Preheat your grill to medium-high heat and oil the grates to prevent sticking. Remove chicken breasts from the marinade, allowing excess to drip off, and grill for about 6-7 minutes per side or until cooked through. During the last minute of grilling, place a slice of Monterey Jack cheese on each chicken breast and close the grill lid to melt the cheese. While the chicken is grilling, lightly toast the hamburger buns on the grill until they're slightly browned. To assemble the burgers, place a grilled chicken breast on the bottom half of each bun. Top with avocado slices, shredded lettuce, diced tomatoes, red onion slices, and fresh cilantro leaves. Spread a dollop of sour cream on the top half of each bun and place it on top of the burger.
