Rather than mayo, this tuna salad with Greek yogurt and avocado is made with less fat. Together, the creamy texture of Greek yogurt and the richness of avocado make a tasty and filling meal. It's a great quick lunch or light dinner choice.
Ingredients: 2 cans of tuna, drained. 1/2 cup Greek yogurt. 1 avocado, diced. 1/4 cup red onion, finely chopped. 1/4 cup celery, finely chopped. 2 tablespoons lemon juice. 1 tablespoon Dijon mustard. Salt and pepper to taste. Optional: fresh herbs such as parsley or dill, for garnish.
Instructions: The drained tuna, Greek yogurt, diced avocado, chopped red onion, and celery should all be put together in a large bowl. Lemon juice and Dijon mustard should be put in the bowl. Add pepper and salt to taste. Mix the ingredients together by gently tossing them together. You can serve it right away, with fresh herbs on top if you want, or put it in the fridge to enjoy later.
