The Tequila Lime Chicken Burgers are a tasty change from the usual burger. The chicken is grilled after being marinated in a tasty tequila lime sauce. With avocado, fresh vegetables, and a hint of sour cream on top, these burgers will be a hit at your next family get-together.
Ingredients: 4 boneless, skinless chicken breasts. 1/4 cup tequila. 1/4 cup fresh lime juice. 2 cloves garlic, minced. 1 teaspoon cumin. 1 teaspoon chili powder. Salt and pepper to taste. 4 hamburger buns. 4 slices Monterey Jack cheese. 1 avocado, sliced. 1/2 cup shredded lettuce. 1/2 cup diced tomatoes. 1/4 cup red onion, thinly sliced. 1/4 cup fresh cilantro leaves. Sour cream for topping.
Instructions: In a bowl, combine tequila, lime juice, minced garlic, cumin, chili powder, salt, and pepper. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes, or up to 4 hours. Preheat your grill to medium-high heat and oil the grates to prevent sticking. Remove chicken breasts from the marinade, allowing excess to drip off, and grill for about 6-7 minutes per side or until cooked through. During the last minute of grilling, place a slice of Monterey Jack cheese on each chicken breast and close the grill lid to melt the cheese. While the chicken is grilling, lightly toast the hamburger buns on the grill until they're slightly browned. To assemble the burgers, place a grilled chicken breast on the bottom half of each bun. Top with avocado slices, shredded lettuce, diced tomatoes, red onion slices, and fresh cilantro leaves. Spread a dollop of sour cream on the top half of each bun and place it on top of the burger. Serve the Tequila Lime Chicken Burgers hot and enjoy!
