Looking for an extra special vegan surprise meal? Here is a recipe on how to make vegan fish and chips. This delicious treat calls for banana blossoms, which are big, tear shaped flowers that grow at the end of a banana fruit cluster.
🌱 Heat 1 liter (4 cups) of vegetable oil in a large saucepan (180˚C). 🍌 Split banana blossoms from two cans, add juice of half a lemon, 20-30g of seaweed flakes, and sprinkle with salt. 🍲 In a large bowl, mix 200g (1⅔ cups) plain flour, 7g (1½ tsp) baking powder, and 6g (1 tsp) salt. Add 275ml (1⅛ cups) sparkling water or vegan alcohol-free beer; stir. 🌾 Coat banana blossom pieces in extra plain flour, then dip in batter. 🔥 Fry battered flowers until golden and crisp. 🍋 Squeeze fresh lemon, serve with baked wedges or fries.

This Vegan Pumpkin Soup is thick and creamy, and it's great for cold days. It's easy to make, tastes great, and is rich.
Ingredients: 1 small pumpkin, diced. 1 onion, chopped. 2 cloves garlic, minced. 4 cups vegetable broth. 1 can 14 oz coconut milk. 1 tsp ground cumin. 1/2 tsp ground nutmeg. Salt and pepper to taste. 2 tbsp olive oil. Fresh parsley for garnish.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Put in the garlic and onions, and cook until the onions become clear. Salt and pepper should be added along with the diced pumpkin. Mix well. Add the coconut milk and vegetable broth. Bring to a low boil. For 20 to 25 minutes, or until the pumpkin is soft, let it simmer. Blend the soup until it's smooth with an immersion blender. Check the seasoning and make changes if needed. Serve hot with fresh parsley on top.

These Soft Vegan Peanut Butter Cookies are a tasty treat that's great for any event. Making them is simple, and they taste great and melt in your mouth. Plus, they're good for vegans!
Ingredients: 1 cup peanut butter. 1/2 cup maple syrup. 1/4 cup coconut oil, melted. 1 teaspoon vanilla extract. 1 1/2 cups all-purpose flour. 1/2 teaspoon baking soda. 1/4 teaspoon salt.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Put peanut butter, maple syrup, melted coconut oil, and vanilla extract in a large bowl. Mix everything together well. Mix in the salt, baking soda, and flour with the peanut butter. Mix it together until a soft dough forms. Scoop out dough with a spoon or cookie scoop and roll it into balls. Leave space between each cookie as you put them on the baking sheet that has been prepared. Use a fork to gently flatten each cookie and make a cross pattern on top of them. After the oven is hot, bake for 10 to 12 minutes, or until the edges are just beginning to turn golden. After taking the cookies out of the oven, let them cool for 5 minutes on the baking sheet before moving them to a wire rack to cool all the way down. Serve these soft peanut butter cookies without milk with a glass of almond milk.

Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup powdered sugar. 1/2 cup vegan butter, softened. 1 cup granulated sugar. 2 tablespoons cornstarch. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 3/4 cup lemon juice. Zest of 2 lemons. 1/2 cup unsweetened almond milk. 1/4 cup almond flour. 1 tablespoon coconut oil. 1 teaspoon vanilla extract. Additional powdered sugar for dusting.
Instructions: Warm the oven up to 350F 175C and grease a 9x13-inch baking dish. Put flour, powdered sugar, and softened vegan butter in a bowl and mix them together. Press it into the bottom of the baking dish that has been greased. For 20 minutes, or until just barely golden brown, bake the crust. Get the lemon filling ready while the crust is baking. Granulated sugar, cornstarch, baking powder, and salt should all be mixed together in a different bowl using a whisk. These are the things you need to add to the dry ingredients: almond milk, almond flour, coconut oil, lemon juice, and lemon zest. Mix everything together with a whisk. Put the baked crust back in the oven and add the lemon filling on top. After that, bake for another 20 to 25 minutes, or until the filling is set. Let the bars cool all the way down on a wire rack in the baking dish. After the bars have cooled, sprinkle powdered sugar over the top of them. Cut into bars and serve. Have fun!

🍋Lemon Dill Hummus | Creamy, zingy, + irresistible! Recipe Below ↓
* 1 (15.5oz can) garbanzo beans drained and rinsed
* ½ teaspoon baking soda
* ⅓ cup tahini
* ½ teaspoon grated lemon zest
* Juice from 1 lemon
* 2 tablespoon extra virgin olive oil
* 2 garlic cloves
* ¾ teaspoon cumin
* 1 teaspoon salt plus more to taste
* 1/3 cup fresh dill
* 1/4 cup ice water
Method
1. In a pot, combine garbanzo beans and baking soda. Cover with 1 inch of water. Boil, then reduce heat to medium-high and simmer for 12-15 minutes until chickpeas are soft and thoroughly cooked. Drain.
2. In a food processor, add tahini, lemon juice, and lemon zest. Blend for 30 seconds, scrape the sides, then blend for another 30 seconds to form a thick paste.
3. Add extra virgin olive oil, garlic, cumin, and salt. Blend, scraping the sides as needed.
4. Add half of the cooked chickpeas and blend. Scrape the sides, then add the remaining chickpeas and dill. Blend until smooth and creamy, approximately 30 seconds.
5. While the processor is running, gradually pour in ice water until the hummus becomes creamy & smooth.
6. Season with salt to taste.
