I made super easy vegan nut cheese today, so I thought I’ll share the recipe here! I kind of went on a quest this week to make all sorts of creamy dips and cheeses using different nuts and seeds. This one is made of cashews, but I prefer using nuts or seeds that are regional and more sustainable. My favorite replacement for cashews has always been sunflower seeds. So I’ve got some of those soaking in water for the next one. But I’ll also try using walnuts and hazelnuts - let’s see 🤪 I spent a looooot of time in the kitchen the last weeks, so o thought I’ll start sharing some of my recipes here again.. it’s been a while ;) For this one you’ll need 2 cups (200g) of cashews, soaked over night and rinsed 2 cloves of garlic, minced 4 tbsp of nutritional yeast 1 lemon, juice and zest 1/2 cup water 2 tbsp olive oil Salt + pepper 1 bunch of chives Place all ingredients except the chives in your food processor and blend until very smooth. Chop half a bunch of chives and blend just quickly to mix it well. Add salt and pepper as you like it, i added quite a bit of pepper. Place a clean kitchen cloth into your strainer and scoop the cashew mix into it. Wrap the cloth above it and squeeeeeze the liquid out of your cashew cheese. Repeat a couple of times. Carefully unwrap your cashew cheese ball, place on a plate or a bowl and cover with the rest of the chives. Your cashew cheese should be creamy and soft. Day 93 in my 100-day project, Imaginary Places. This night I had a lucid dream. And it was a wonderful experience. Because it turned into a dinner with my father, who passed away 12 years ago. In the dream he came to my home, a bit sad and hungry. I told him to sit down while I prepared a stew for him with his favourite ingredients – manyok, carrots, garlic, potato, green pepper, big chunks of ginger, parsley, and green lentils. I served the stew with some brown rice. When the dinner was ready I suddenly realized it was a dream, so I took the opportunity to talk with my him while we enjoyed the food. I told him how everyone was doing, sent their regards, and shared my love for him. We had a beautiful moment. About the art: Yes, I know that Adobe Fresco has a perspective grid and also I know how to use it. However, I do think my wonky freestyle perspective works better for my imaginary places.
