Ingredients: 4 biscuits, split in half. 8 slices of bacon. 4 large eggs. 4 slices of cheddar cheese. Salt and pepper to taste. Cooking spray or butter for grilling.
Instructions: Preheat a panini press or grill pan over medium heat. Cook the bacon slices in a separate skillet until they are crispy. Remove and drain on paper towels. While the bacon is cooking, toast the biscuit halves in the panini press or on the grill pan until they are lightly browned. In the same skillet used for bacon, remove most of the bacon grease, leaving a thin layer for cooking the eggs. Crack one egg into the skillet for each sandwich and cook to your desired level of doneness. Season with salt and pepper. Place a slice of cheddar cheese on the bottom half of each toasted biscuit. Top the cheese with 2 slices of cooked bacon on each biscuit. Place a fried egg on top of the bacon and cheese, then cover with the remaining biscuit halves. Lightly grease the panini press or grill pan with cooking spray or butter. Place each assembled biscuit sandwich in the press or on the grill pan and cook until the cheese is melted and the biscuits are golden brown. Remove from heat, let cool slightly, and serve hot.

Ingredients: 1 ripe banana, mashed. 1 cup plant-based milk. 1 tablespoon maple syrup. 1 teaspoon vanilla extract. 1 cup all-purpose flour. 1 tablespoon baking powder. Pinch of salt. Cooking spray or oil for greasing the pan.
Instructions: Plant-based milk, maple syrup, vanilla extract, and mashed banana should all be mixed together in a bowl. Add all-purpose flour, baking powder, and a pinch of salt to another bowl and mix them together using a whisk. Slowly add the dry ingredients to the wet ones while stirring them together. Watch out not to mix too much; it's okay to have some lumps. Place a nonstick griddle or skillet over medium-low heat and lightly coat it with oil or cooking spray. For each pancake, put about 1/4 cup of batter on the pan. Once the top starts to bubble, flip it over and cook until the other side is golden brown. Do it again with the rest of the batter, making sure to grease the pan as needed. Top it with your favorite things, like fresh fruit, maple syrup, or dairy-free whipped cream, and serve it warm.
