Caramelized Onion Butternut Squash Soup Ingredients: 1 medium onion, diced 3 tablespoons extra virgin olive oil 4 cloves garlic, minced 2 carrots, diced 2 celery stalks, diced 4 cups unsalted bone broth (chicken or beef) 2 to 2 1/2-pound butternut squash, peeled and cut into 1 1/2-inch cubes (about 4 cups) 1/4-1/2 teaspoon black pepper Salt to taste (about 2 1/2 teaspoons Himalayan pink salt) Instant Pot Directions: With the lid off, press the sauté button on the Instant Pot and set to the normal level. Once hot, add olive oil and diced onion. Sauté, stirring occasionally, until onions start to brown on the edges, adjusting between less and normal levels as needed to prevent burning. Continue cooking until the onions are caramelized, about 45-60 minutes. Add garlic, carrots, and celery. Sauté for 3-5 minutes, stirring occasionally. Add the butternut squash and bone broth. Secure the lid and set the steam release valve to the sealing position. Select the pressure cook setting and cook on high pressure for 10 minutes. Once complete, manually release the pressure and remove the lid. Using an immersion blender, puree the soup until smooth. If using a regular blender or food processor, carefully transfer the soup to blend, then return to the pot. Simmer the soup on the less heat setting for 10-15 minutes. Season with salt and pepper to taste. Serve hot. Stovetop Directions: In a large pot, heat olive oil over low to medium heat. Add the diced onion and cook, stirring occasionally, until caramelized, about 45-60 minutes. Add the garlic, carrots, and celery. Cook for 3-5 minutes, stirring occasionally. Add the butternut squash and bone broth. Cover, turn heat to high, and bring to a boil. Reduce to medium-low heat and simmer until the squash is soft, about 15-20 minutes. Using an immersion blender, puree the soup until smooth. If using a regular blender or food processor, blend in batches and return the soup to the pot. Simmer over medium-low heat for an additional 30 minutes. Season with salt and pepper to taste. Serve hot. Pumpkin Apple Onion Chowder
I love the smell of canned pumpkin.  It brings up memories of Fall and pumpkin carving.  But, pumpkin doesn’t have to be relegated to just one time of year.  The coriander, cumin, turmeric, garam masala, and cilatro simmering in the pumpkin soup base send fragrant smells throughout your house.  See what you think...
2 T. margarine
2 lg. apples, diced, Granny Smith or Jonagold varieties
1 lg. onion, diced
3 c. milk
1 - 29 oz. can pumpkin - not pumpkin pie filling!
dash ground black pepper
1 t. salt
2 t. cumin
2 t. coriander
2 t. chili powder
2 t. garam masala
2 t. turmeric
1 T. garlic, diced
1/4 c. cilantro, chopped using kitchen scissors to speed the process
In a large fry pan, melt margarine then add apples and onion to caramelize.  In a large soup pot, add milk, pumpkin, pepper, salt, cumin, coriander, chili powder, garam masala, and turmeric whisking together well all ingredients.  Add cooked apple/onion, garlic and cilantro, stir together well.  Simmer 30 min. to blend flavors - enjoy...

I am sick so I made some soup. Didn’t have a chicken. Used what I had: 6 marrow bones, one package of Manischewitz vegetable soup mix, 1/2 cup dried green peas, 1/2 cup dried white beans, “some” barley and lentils, a few carrots, an onion, a cut up portobello mushroom and some shredded cabbage. Salt. Covered with water and let it cook all day, adding water when needed. This recipe is extremely forgiving. It may not look beautiful but it is filling, delicious and comforting. I’ve been a fan of Brussels sprouts ever since my mother introduced us to them at a very young age. It was a simple, down home meal and one I savor to this day. Pork chops with apple butter, baked sweet potatoes and Brussels sprouts. Every one of those little green morsels were fork-tender with just the right amount of butter, salt and pepper. The success to her turning out a great tasting meal was all about the seasonings. She always said, the sign of a delicious dish is one that is seasoned to taste! I would venture to say she had a knack for seasoning, rarely missing the flavor experience mark. Today is the first time I’ve added Brussels sprouts to soup and it won’t be the last. Roasted Feta Soup with Butternut Squash & Honey Ingredients: 5 cups butternut squash, cubed (about 1 medium squash or two 12 oz bags of frozen butternut squash) 1/2 bulb garlic (bottom half only) 1/3 cup olive oil 1/4 teaspoon kosher salt 4 sage leaves (or 1 teaspoon of herb of choice) 1 (8 oz) feta chunk (recommended brand: Athenos) 1 quart (32 oz) vegetable broth (4 cups) 2 tablespoons honey Directions: Preheat the oven to 400°F (200°C). In a braising pan or oven-safe cookware (like a Dutch oven), add olive oil, butternut squash, and salt. If using dried herbs, add them now and toss to coat the squash. If using fresh herbs, reserve for later. Place the feta chunk in the center of the pot and nestle the garlic bulb (cut side down) next to it. Cover and bake for 45 minutes to 1 hour until the squash is tender and feta is slightly melted. Remove the pot from the oven. Take out the roasted garlic bulb, squeeze out the softened garlic cloves into the pot, and add honey, vegetable broth, and fresh herbs (if using). Blend the soup until smooth and creamy using a blender, food processor, or immersion blender. Taste and adjust salt if needed. Serve each bowl with an extra drizzle of honey and enjoy with crispy feta toast on the side. Quick Summer Tomato Bean Soup 🍃 Summer is the time to make a quick refreshing soup. Nobody wants to be in the kitchen long, I know I don't. 🍃 Start with onions, bell peppers and garlic.
