Hodgepodge Potato Leek Soup

Also known as, I bought leeks and red potatoes but then decided to try to use up some stray odds and ends of other veggies I had kicking around while I was at it. And then it was tasty enough for me to want to record it. 😂

Ingredients

Two large leeks, darkest green sections trimmed away, sliced lengthwise, cleaned, and chopped.

One large onion

A large chunk of cauliflower, trimmed, cleaned, and broken into chunks (~1/4th to 1/3rd of a full head)

One sweet potato, washed, peeled, and chopped into ~1 inch chunks

Five red potatoes, washed and chopped into ~1 inch chunks

6 tbsp butter

2 tbsp flour

2 to 4 cloves of fresh garlic, minced

Enough stock or broth to cover the other ingredients (I used water and vegetable better than bullion for this round)

2 bay leaves

Salt and pepper to taste

1/2 cup sour cream

Instructions

In a large stock pot, sauté the butter, leeks, and onions until soft. Add the flour and stir until fully incorporated into the butter as a roux; cook for a minute or two.

Add the cauliflower, garlic, potatoes, broth, bay leaf, and black pepper. Bring to a boil, reduce heat, and simmer until potatoes are done. Remove from heat.

Fish out the bay leaves and discard. Fish out 1 or 2 cups of the red potatoes and set aside. Blend remaining ingredients in the pot with an immersion blender until smooth. Add sour cream and blend until incorporated. Return red potatoes to the pot and stir.

Fairly tasty plain, but also good with cheddar cheese, additional sour cream, and crackers. Would probably be good with other typical potato soup toppings like chopped green onions or chives as well!
