Nursing School is no Joke!
Hey guys all I can say is wow nursing school is kicking my butt!! However I did just finish my 3rd semester!! So my next semester will be my last and I can wait to be finished! I’m hoping and praying after this semester that maybe I’ll be able to get back to blogging as it is something that I love to do but nursing school right now just requires so much of my time. I can’t wait to get back to sharing recipes with everyone and more about my life! I hope you guys are doing well.

I can’t tell you guys how amazing a feeling it is that I have finished my first half marathon! This is something that I have wanted to accomplish for a very long time. This January I started my second semester of nursing school and I met my now best friend. I was tying my shoe in the hallway one day and we started talking about how we ran and then planned to run and it has all been awesome since. We trained from January until Saturday. I’m truly am so glad that God has brought us together. She has been my grounding person through school and I don’t know what I would do without her. God has blessed me with an amazing best friend.
The morning of my half I had to get up at 4am to be sure I could eat in enough time for my food to digest before the half. For my pre race breakfast I had two packets of Aldi organic maple spice oatmeal, a banana, and a spark to get me going. I thought I was going to have trouble getting up but it actually wasn’t hard at all become I immediately got anxious.
When we got to the building where the half was going to start Brianne and I made sure to use the bathroom twice and we made sure to walk around the parking lot to warm up before we got started. This was a pic we took right before the race started.
Garrick snapped this right as we started to run there were a lot of people. I didn’t realize how many would be running.
I had planned on taking shots of the area we were running in as we were running but I didn’t want to be getting my phone in and out of my running belt. I haven’t mastered doing that yet. Brianne is really good at it though.
Garrick and Brianne’s husband went and cheered us on. This was between miles 9 and 10. We were so excited because we really needed the boost. I was really fun doing this half looking back now. I felt as though it was pretty hilly. We went up and down several times and about at mile 7 we had an uphill run of about 3/4 of a miles. That took a lot out of me to finish that. I have also been trying to rest my knee because it has been hurting some. The knee brace I wore really helped throughout the half marathon. In my training I had only ran 11 miles so my half was the furthest I have ever run. At mile 11 I really started slowing down. It really took everything I had to finish. I made Brianne leave me because she had a goal to reach of finishing in 2 and a half hours and I didn’t want her to not finish because of me. She finished in 2 hours and 27 minutes and I finished in 2 hours and 28 minutes.
It started to rain the last mile so I did pick my pace up a bit because I wanted to finish. You can tell I was struggling to finish.
We were both so excited to have finished and under our goal. For a few minutes after I was kind of wobbling.
They were super generous at the finish, I had a banana and chocolate milk after we finished. They also had peanut butter and jelly sandwiches and sausage biscuits.
I didn’t look the best after but I wanted to take a pic for after finishing.
Along with Brianne being my biggest supporter I am so lucky to have a husband how is so supportive. He followed me around and did everything I needed him to all weekend. I’m so blessed to call him mine.
After we treated ourselves to lunch at barbecue and these amazing donuts.
Now I am in recovery mode. I have a blister on my foot that I am hope heals within the next few days so I can do my recovery run and I have been stretching and taking epson salt baths to help with the sore muscles.

Let’s back back up for a minute
Wow. I can’t believe it has been so long since I’ve blogged. I miss it so much! So much has happened since I last made a post and I can’t wait to catch you all up on it!
First of all as you can tell from the above photo, school has pretty much consumed my life since I started it. It was really hard to find the time to do anything not school related, I’m not saying it couldn’t be done, it just was for me because I was working during school as well. I love nursing and I can’t wait to see where this journey takes me. I studied my butt off all year and was rewarded by passing my classes and receiving a compliment from one of my professors who was very hard to get compliments from. I can post more about school if its something everyone would like to know about.
I have met some of the most amazing people at school and I’m so thankful. My friend Brianne is now my best friend. I just love her so much. My clinicals have been awesome and I have truly learned so much. I kind of miss school in a way and can’t wait to go back and learn more.
I have been keeping up with eating healthy and I have lots of recipes I can’t wait to share with you guys! I have become even more focused now that I am out of school.
One of the most exciting things I have been doing is training for a half marathon that I just actually completed this morning. I can wait to share it with you guys! The above photos are from a 5K that Garrick and I ran in April for Autism awareness. I love that he likes to say active with me.
I can’t wait to tell you guys and get all the pics from my half. I will posting about it soon so keep watch for it! I can’t to start posting regularly again! Talk to you guys again soon!

Where Have I Been?
Wow guys, it’s been a long long long time since I have posted. For that I am truly sorry. As you guys know I started nursing school this August. I just finished my first semester and let me tell you it was a roller coaster ride. I have had so much going on. I am currently on my Christmas break and I find myself constantly checking my email and looking for school things to do. This weekend I have been trying to distance myself from school so I can enjoy my break before I start my second semester in January.
As you may have heard nursing school take a lot of studying. When I started I had many people tell me that without realizing what was actually coming. My first 6 weeks of class I had an exam every monday. I literally studied every single day. It took so much to make it through those 6 weeks. But here I am and i finished my first semester with a 88%. I really wanted an A but I very proud of myself for making a B.
Along with classes we also had a 12 hour clinical day once a week. This was exhausting at times but it was so much fun and eye opening. I had clinicals on a med-surg floor, the ER, and I had one day in surgery. In my experience so far the ER has been my favorite place to be. I loved see something different with every room and how fast paced it was. Med-surg wasn’t bad at all and it could be an option for me, but I wont say anything for sure yet. Next semester I have clinical on a cardio vascular floor so we will see how it goes.
I’m planning on keeping you guys updated as I keep going through my journey and I will be posting recipes and how I study posts. I hope everyone is doing well and I’ll talk to you guys soon.

Our Big Day
Wow Guys! Its been such a long few weeks and I am just now starting to get back into the swing of everything. But on a bright note, I’m now a married woman! Its crazy to me! All of the weeks of planning and getting things together and I feel like it all jus went by in a blur. Our wedding was crazy because we had to change our location last minute because we had an awful storm move in. So I didn’t get to have the barn wedding I had always wanted but everything still turned out perfect. Nothing ever goes as planned does it? I don’t have all of our pictures back yet but once I do I will be sure to share them with you guys.

Wedding planning is fun but it is also so stressful! We are 9 days out and I still feel like there is so much to get done before our big day! I know that these next few days will be the last few days of calm that we have before everything has to starts getting crazy. I know it is all going to be worth it when its over but I feel like getting there has been crazy. I wanted to share one of my new found loves with you guys which happens to be, rosemary! I had never tried it before last week and now I love it! we made this chicken and then Garrick made some amazing rosemary mashed potatoes I’ll have to share that recipe soon.
For this recipe you will need:
- 4 chicken breast
-1/2 cup of olive oil
- two tablespoons of minced garlic or two fresh garlic cloves
- 1 stem of rosemary
It’s such a simple recipe but that is the one thing I love about it, it’s so easy and there is so much you can do with it.
First place your chicken in plastic bags. I had to use two separate bags because I was out of gallon ones.
Next take one stem of rosemary and pull the leaves off. Don’t chop the stem you just want the leaves, and dice the leave up. One stem was enough to do all four of the chicken breast.
Next measure out 1/2 a cup of olive oil, then add in the rosemary and garlic. I was out of fresh garlic so I used minced garlic and the mix it up.
Now add half of the mixture to each bag and let it marinade in the fridge or at least a few hours but the longer the better. I put mine together in the morning and then cooked them in the evening. Now I don’t have any picture of the final product because Went Garrick grilled the chicken I was at my workout class and went I got home I was so hungry I ate before I took picture, (terrible blogger moment I know). Just grill the chicken like you would any other. Just be sure to watch for flames though because the olive oil can cause small flames to shoot up so just be cautious. Happenings of Late! Guys we are in the final stretch! Exactly 14 Days until the Wedding! I can’t believe that our wedding is almost here! We are in the last days of preparations so we are running here and there like crazy trying to get all the last minute details. Tomorrow we have our household shower to look forward to and then the coming week I have my final dress fitting, an eye doctor appointment, final details for decorations, and finalizing bouquets. So much to do but I cant’t wait for the day to be here. I am marring my best friend and we have an amazing honey moon to look forward to after all this craziness. I just wanted to share a few things that we have been doing.
Project wedding body is still in full swing. This is Garrick and I after one of our nightly runs. He has been a huge support for me and that is one of the many reasons I love him so.
I know this doesn’t look appealing but it is absolutely delicious. We have been putting eggs and avocado in our ninja and then scrambling them. I post the full recipe soon.
Another favorite has been lemon water. I have been drinking it every day. The other day I asked Garrick for lemon water and he brought me this. He always has to be so creative and add his own touch to everything. I have to love him for that.
My last favorite has been making homemade croutons. I’ll also post this recipe soon as well.
My baby sister also just graduated high school. I can’t believe she is graduating and that I’ll be sending her to college soon. I just love her and I couldn’t be more proud of her.
I just thought I would show a few things that I have gotten for the wedding to give you some insight. These are the flower girl dresses, I’m going to replace the ribbon with a yellow one to match our colors.
I got these for the flower girl “baskets.” I thought they were so cute and the match every thing else.
Sunflowers are also everywhere. I just love them. I hope you guys are enjoying your summer. I promise once the wedding is over I will be back on a normal posting schedule and sharing recipes once again.

Wedding Planning in Full Swing
I have been a terrible blogger lately. As soon as finals were over with we started wedding planning. It takes so much more to put a wedding together than I ever realized. But I’ve finally gotten into the swing of things and we have most of the major stuff out of the way so now it just mostly decorations and little details that we are having to manage and get together.
Project wedding body is still going on although last week was a super tough week for me. We had to travel to the next town over 4 times and it is a 45 minute drive there and back to pick up wedding stuff. We are back on track thsi week. I have been loving oatmeal lately. This has rolled oats, banana, almond milk, raspberries, and cinnamon.
These are some of the decorations that we have so far. We are doing a rustic country theme. I am so happy with the way everything has turned out so far.
This is the barn that we are getting married in. It need a little work but it is in the process of being fixed. the boards and everything are being taken down.
I just thought these honey suckle were beautiful and I thought you guys would enjoy them. They are one of my favorite flowers. Project Wedding Body 10 (Hiking and workouts)
I know it has been a long time since I’ve posted and I am so sorry for that guys. I know that you know Garrick has been in Germany and I literally haven’t stopped since he’s been gone. Just to give you guys an idea, I’ve put almost 3,000 miles on my car and by the time he comes home Thursday I’m sure it will be that many. But on a happy note Garrick comes home on Thursday, I’m finished with classes for the summer next Tuesday and my orientation for nursing school is the following week and then I get to start my summer so I’m super excited!!!
I have been keeping up with all of my healthy eating and workouts. This weekend was a little harder because everything has been crazy but we are cleaning it up and fixing it today.
Last week was crazy so there were a few days when I didn’t have time for the gym. So on Wednesday it was a gorgeous day and I decided to take my matt outside and do some interval workouts. I did strength training and cardio.
I took my big boy outside and he loved it. His knee injury is still bothering him. But he is getting better.
Even though it looked warm, it was kind of chilly outside so I made a huge pot of chili and it was so good!
I also treated myself to some froyo. Everything in moderation.
On Thursday I wanted to take a hike to watch the sunrise instead of going to the gym.
I’m so glad I did because it was just beautiful.
I can’t get over how green everything is becoming.
I thought the cows were pretty cute.
We had just made it to the top when the sun made it over the mountains. The fog was lifting too so that just added to the beauty of the sunrise
I wish I had a better camera because my phone just doesn’t do this justice.

Tips for Staying on Track When traveling or staying busy.
With Garrick being gone I have been running around like a crazy person! Doing this and that paying bills, working, working out, and even more. But with all I have going on I am determined to stay on track. So I thought I would share some tips on how I stay on track when I stay busy.
1. Preparation, Preparation, Preparation! Preparation is the key to success! Even if you aren’t always busy. Today I knew I was going to be busy all day so I threw all of the above snacks in my purse. I always keep a meal replacement shake and almond in my car for emergencies.
2. Make a plan. This goes hand in hand with being prepared. If you plan what you are having then you wont go through the whole I don’t know what I want so I’ll take the easy way out. I pack the night before and have cut up strawberries and fruit on hand.
3. Keep your goal in mind at all times. The other day at work I had to bake cookies. I really wanted one but I told myself that my goal what more important to me than that cookie.
4. Everyone is human and nobody is perfect. No matter how hard you try you will never be perfect. Everyone messes up and gets off track. If you have one mess up don’t let the totally derail you. Just pick back up with your next meal or snack and push through.

Project Wedding Body 9 (Healthy meals and more)
I think this picture is absolutely beautiful. I think that everyone need to take time and enjoy nature. The world is so beautiful and some time we are so busy with life that we don’t take the time to enjoy it. I think I just stood there for like 10 minutes and just took all the scenery.
I’m such a repetitive eater. Once I find something that I like I stick with it. Even more so now that I am determined to reach my goal. I have stuck to my plan and I feel so good. I plan on keeping up with it. You guys are part of my motivation to to stick with this.
This this another dinner I’ve in the past few days.
Since I have done so well with everything I decided to treat myself to so froyo. Our local one just opened back up for the summer. It was nice to enjoy myself but It was a treat and I am back on track for dinner.

Project Wedding Body 8
Project Wedding Body is in full swing now and I am so proud of myself for sticking through this. I haven’t cheated on my eating and I have kept to my workout plans. Today is the last day of my cleanse and I’m excited to weigh and measure tomorrow to see my progress so far. I’m doing ok with Garrick being gone, it’s still hard but we are managing. I can’t weight to see if Garrick can see a difference in me. For me it isn’t about just losing weight it is about feeling better and toning up so I’m looking more for losing inches rather than just weight.
Berries and almonds have still been one of my favorite snacks. I have become a little obsessed with almonds.
This has been my other best friend. It’s a plain unsalted rice cake with coconut oil spread on it topped with cinnamon and a little stevia. I love these so much! I’m so excited to be able to add peanut butter back tomorrow with banana.
I have been loving fish and veggies for lunch its easy, quick and delicious.
When I get tired of just scrambled or fried eggs I make these breakfast sandwiches. It’s a natures own bagel thin with turkey bacon, spinach, and a baked egg.
I had my zucchini dish for dinner again one day this week the recipe is here.
This was my our dinner last night. we back turkey burgers, roasted brussel sprouts, and sweet potato fries. I’ve been having brussel sprouts and sweet potato fries a lot lately but I love them. I’ve been keeping up with my works this week and I have been totally committed to them. On monday I went to pound class and I didn’t let myself slack off like I normally do. I was surprised at what I could actually do with pushing myself. Tuesday I went to the gym and I worked arms and back. Today I went and I did cardio and abs. Tomorrow I will be going to pound class again and Friday I’m going to the gym and doing cardio and legs. I hope you guys are doing everything you can to reach your goals. You are the only person who can reach your goals. No one can do it for you, you have to be willing to do it for yourself. I hope you guys have a great rest of the week!

Project Wedding Body 7
Sorry its been so long guys. It’s been crazy adjusting to Garrick being gone, you don’t realize how much you depend on and how much you are use to a person being there until they aren’t there. Time apart definitely make you appreciate that person even more. Since Garrick has been gone Project Wedding body is in full swing and I am so proud of myself. On my other cleanse I didn’t I am sad to say that I cheated at least once. This one though I am proud to day that I haven’t cheated at all. This time I have a huge goal and I really want to reach. I want to be able to walk down the isle on my wedding day and be confident. I want to be able to walk out on the beach at my honey moon and not worry about what others are thinking of me. I know that most of this transformation is going to be mental and I am also working on that. One of my favorite youtubers, her name is Dani Spies you guys can check her out here. She posted a video the other day that really hit home for me on the emotional side of losing weight. She said to take a journal and write down the things that you think about your body and do this all day. So yesterday I did this and she said at the end of the day read them to someone you care about. I started reading them to my sister and I realized that I was thinking all of these negative awful things about myself. I realized that I wasn’t giving myself enough credit for the things I have accomplished so far. So now I am working on saying positive things about my body and I hope you guys will do the same. You will never get anywhere if you have tons of negativity in your mind because then you will let yourself think that you can’t accomplish your goal. I promise you are capable of more than you know! Sorry I didn’t mean to go off writing on that but I feel like other people probably go through the same thing and I really want to help everyone reach their goals. If I can help you guys with my experiences then I will do whatever I can.
Eggs have been some of my go to breakfasts. They are easy quick and help to get some protein in. I also have fruit with my breakfasts, I’ve been eating a lot of pineapples and bananas with breakfast.
Berries and almonds have been my go to morning snacks. I’m eating strawberries and almonds while typing this.
When I’m home and have time to cook I have lunches like this. I have been loving tilapia and brussel sprouts, and who doesn’t love sweet potato fries?
When I’m on the go this has been my go to lunch its a little bit of a smaller lunch but it still does the trick. The tuna creation packets are a staple in our house. Garrick loves the ranch and the hickory smoked is my favorite one.
This has been a new favorite snack of mine. It helps with my sweet cravings, I have been toasting bread or just getting a plain rice cake and spreading coconut oil on it then sprinkling it with cinnamon. I know it sounds kinda weird but it is delicious! Before Garrick left he made me a huge batch of his salsa so I have been having that for snacks as well.
Dinners I have just been trying to mix up and this is one of my favorites for sure. I fried some turkey burger and then chopped up zucchini and fried it with some all natural spaghetti sauce until it was soft, then mixed it with the turkey burger. Simple and delicious.
One night I fried up some organic turkey sausage and make a broccoli steamer on the side it was super easy and also a really good dinner.
My sister has came to stay with my while Garrick is away and she has been very encouraging to me. I have been keeping up with my workouts and going to pound class. I have also been making sure to get my water in each day. My goal is 91oz a day and I downloaded a water tracker app on my phone to help me keep up with it. Sorry I've been MIA guys. Its been a crazy week. Garrick flew out to Germany so this week has filled with getting Garrick ready to go. I know this is kinda sad but I miss him already. He's my best friend and I'm use to being around him all the time. It's so weird knowing that he's going to be gone, and nevertheless in another country. I know it's only 3 weeks and a few days and that people do it for longer but I'm so use to Garrick being around. It's going to be hard but it motivates me even more to reach my fitness goals while I'm gone and I'm so happy to have you guys to help keep me motivated. I promise I'll have a new project wedding body post and even a new recipe up tomorrow. Project Wedding Body 6
It was such a crazy week last week. With doing wedding stuff and getting everything ready for Garrick to leave for Germany I felt like I barley had time to turn around. My eating habits weren’t the best last week but with Garrick leaving Thursday Project Wedding Body is in full swing now. I started another AdvoCare cleanse today and I’m ready to make this happen. Today I placed an order and got a few new products to try out so I’ll be sure to let you guys know how that goes.
Garrick and I have made a promise to do something active everyday until he leaves. I’m continuing after he leaves but we are doing it together until then Thursday we went to the lake to walk some of the trails.
Nothing was bloomed out like I expected but I’m sure it will be soon enough, then we have to deal with allergies (ugh).
Even though nothing is bloomed out yet nature is still so pretty. I just love this picture.
Thursday Garrick made me a breakfast on the go, I was running late and I thought it was so sweet that he took the time and thought of this and did this while I was getting ready. I’m gonna miss that when he’s in Germany.
Garrick bought a new grill this week so we decided to try it out and my have a missed grill food. We have been a little crazy about it.
I just wanted to share a pic of my boy. I just love him so much.
I went to whole foods and Trader Joe’s on Friday and I have to say this was one of my favorite purchases it was so good!
Friday evening we were hit with a huge rain storm. We weren’t able to get out of our holler for a while. We had to go pick up my mother from work because my dad was stuck in their holler and we got her just before it got up like this. (Yes holler because I am from Kentucky and that is what we call them).
Saturday Garrick and I had a date day. We went to watch Fast and Furious 7 and had lunch at Moe’s. I got a burrito bowel.
They had this pineapple cucumber salsa that was so good. I am inspired now so I think I may try to make my own version of it.
We ran in to Walmart in the town we were in and I always look at power crunch bars. I’m not sure if this is a new flavor but I have never seen it before and it is so good! I think I may to host a giveaway of these since I like them so much! What do ya’ll think?
We had a great Easter This was Easter brunch, after all of the food I ate yesterday I’d say my body is definitely ready for this cleanse. Project Wedding Body 5
Yesterday was a weird day for me my routine was weird so that just made my day all weird. I’m not sure why but I got really down on myself yesterday morning but then my mom and sister cheered me up with some wedding shopping. Plus a dear friend gave me a good motivational speech which really helped.
I got these super cute cake slicers. I’m using a lot of burlap in my wedding so these were perfect.
While we were shopping I also found a new great sweet treat. I didn’t like the old Arctic Zero flavors but the new ones are so good! The chocolate chip cookie dough has to be my favorite. My sister was also so excited we found her ice cream in different flavors. She’s lactose intolerant so before we had only seen chocolate and vanilla, yesterday we were both super excited and happy with our ice cream finds.
For dinner Garrick and I grilled out. We had steak and grilled peppers. I just think peppers are so pretty when you have different colors.
To make my day even better Garrick surprised me with new shoes, I have been needing new shoes for a while I just hadn’t got around to getting any so these were perfect. I just love them!
With all the excitement and motivation I went to pound class. I forgot how much fun it was but also how good of a workout it is because I am feeling it today. Now I’m just trying to stay out of the sweets for tonight. I’m a night muncher that my biggest down fall so I’m working on it. My other down fall is I’m a stress eater, and I’ve been really stressed out lately with the wedding and then Garrick leaving next week to go to Germany. So I’ve been working really hard with that to. I hope you guys are having a great Tuesday.

Project Wedding Body 4
Yesterday was kind of a lazy day for me. Me mom and I went to a town about 30 minutes away and looked at some wedding decorations to get some ideas and a see what was out there.
This was my breakfast yesterday. My eggs have spinach and almond milk in them.
I only eat hash browns on the weekends as a treat to myself. Normally I eat Trader Joe’s hash browns and they are my favorite but I ran out so I tried these. They are pretty good not as good as the Trader Joe’s brand but still they will do. I also had 3 pieces of turkey bacon.
I got home around 1 from going out with my mother. I had a salad that I forgot to snap a picture of before I ate it it had half spinach half spring mix, turkey, crutons, and cherry tomatoes, I used a tomato and onion dressing that I got at Kroger. When I got home I put a pork tenderloin in the crock pot to cook for when Garrick got home, I added some low sugar barbecue sauce . He had drill this weekend so I had no idea when he would be home. I fixed green beans with the pork.
All I wanted to do when I got home was be lazy but I decided that I needed to get out of the house and get moving so I took my dogs on a walk. Loki and Arizona loved it of course and they walk so fast they force you to get your heart rate up.
They had a good time and we got in a good 3 miles.
Here is the pond again this time overflowing and gross from all the rain and snow.
I woke up this morning with my allergies rearing there ugly heads so I’m drinking some throat comfort tea and some vitamin C. I had a yogurt with granola and raspberries. I’m determined to not let my allergies be an excuse for me to not reach my goals. I’m going to get a light workout in and eat clean all day. Don’t let a bad morning ruin your whole day. Life will go on and there is no use in being unhappy. I hope you guys are have a great start tour week.
