Weekly menu week 22:
Monday: salmon with kale, mushrooms, tomato, cauliflower, pepper and onion, served over rice
Tuesday: chicken thighs with broccoli and rice
Wednesday: chicken breast with potato wedges, broccoli and peas
Thursday: chili con carne with garlic bread
Friday: salmon with bearnaise, mashed potato and green beans
Saturday: roasted vegetables with garlic and herbs
Sunday: steak with salad, fries and onion rings
For bread I’m making rosemary bread and for dessert there will be cinnamon crunch knots

Sometimes I feel like it helps me to outline what meals I want to eat this week just so that I don't waste any food/money (which is crucial for a broke college student haha)
Meal options for this week:
Breakfast (in cafeteria)
scrambled eggs (estimate two eggs)
fruit or 1 slice toast
Coffee! aka life
multivitamins or die
Lunch or dinner (in cafeteria)
salad from the cafeteria with random veggies with either vinegar or to go with bolthouse farms ranch in room
bring fruit/apple/banana to go for later
Other lunch or dinner (not at the cafeteria)
oikos protein yogurt cup with chia/hemp seeds and fruit
power crunch protein bar with almonds or fruit
progresso protein soup
rice cake pizzas
Tasty Bite madras lentils microwavable pouch
SNACKS
lesser evil popcorn
go-go squeeze pouches
fruit stolen from cafeteria
energy drink
chocolate rice cake with tea (for sweet cravings)
almond pouches
trader joe's fruit leather bars
tea
gum
For context, I get two meals from the cafeteria each day, I try to make the most of my meal plan by taking food (like fruit) to-go just since I'm not eating a lot of food there anyway

typical monday meal prep. made seasoned rice, bok choy, and chicken. later in the week i’ll make some fried rice w high protein tofu from trader joe’s. also got 3lbs of kiwi for lunches this week 😋
feeling beefy today, weighed in at 142.2 lbs. not gaining as much as I want but also not losing so that’s great. plus my lifts have been going well and my muscles are growing so I know I’m on the right track 😊

I always check what i have in the freezers and cupboards first to see what needs using up. You can adapt your meal plan to your week and in holidays I swap days around to make it easier. Cooking is art......an inspiring experiment (well, that's just my perspective) but it'll really help if you see it that way. Sure, you'll get tips to level up your kitchen game, but I want you to hit that sweet spot where, as you’re thinking about tonight’s dinner, you suddenly know what you’ll be whipping up two or three days from now effortlessly (yeah, I'm serious.....no kidding)
Mix and Match
Lightly steam or roast a bunch of veggies, cook some grains like rice or couscous, and prep proteins like chicken, tofu, or beans. Now, you’ve got a set of ingredients for endless possibilities!
Change the game by switching up sauces, spices, or combinations. Monday can be a plain rice bowl with veggie or chicken sauce, then maybe beans with a bit of couscous and sauce on Tuesday. Next, you can toss everything into a stir-fry for a whole new flavor adventure.
Later you can use carrots, peas, fresh chili or ground nuts for your sauce instead of veggies like spinach, celery, or broccoli. Tubers like sweet or Irish potatoes can accompany those sauces.
The trick is to first get those basics boiled, steamed, roasted, or fried and stashed in your fridge or somewhere….anywhere….lol…. just preserve them properly. (Get what I mean?)

Saturday: leek and minced beef bake
Sunday: creamy pasta with leek and bacon
Using up the veggies to make leek soup, vegetable soup and the rest of the minced beef to make tomato soup with soup balls, we’ll be eating those for lunch each day.
