Friday night treat before a busy weekend coming up. Eggplant rolls stuffed with mozzarella and veal and with a simple tomato sauce. I think that the aroma of these ingredients straight out of the oven is one of the most amazing in Italian cuisine. I love the combination which is of course very close to the amazing Parmigiana di melanzane. This is a Sicilian recipe from one of the many books I have on the food of this region, a great combination, which I will have to try again, next time with more eggplant and less meat. I was happy with the flavor but no so much with the balance of ingredients. Managed to find some time this week to do a final retest of this old recipe of mine, and it came out better than ever with the last of the yellow tomatoes. These are cannelloni di scrippelle or no pasta cannelloni, made with very light crepes typical of Abruzzo turned green with parsley water and stuffed with a mix of Parmesan cheese, burrata and buffalo ricotta from @thatsamorecheese of course.β € Unbelievably good, and a true example of tradition with innovation. Love cooking this way!!β € Forgot to say, this will be the entree at Saturday's bespoke lunch. What do you think, will my guests like it? And will they like to learn how to make them?
