Doing my bit as a true Abruzzese, I made "fiadoni" this week. I was not too happy with the way they looked as my oven took me by surprise, but let me say that the taste was just perfect. I am so glad I can make them just like my nonna did. The egg yolk rich pappardelle yesterday, ready to be paired with an amazing lamb ragu' Abruzzo style.⠀ The pappardelle were really hard work, the pasta dough was very hard to work with but worth it in the end.
