Tonight's relatively low-effort delight: some easy red curry with mainly frozen "stir fry" mixed veggies which seem to be aimed at Thai curries, and some also frozen little chicken meatballs to avoid having to thaw and cut up other meat. I also threw in some of our Thai basil chopped for the last couple of minutes.

Tonight I also decided to work past some of my reflexive mental protests, and for my first bowl here used about half rice and half micro-steamed zucchini. That still feels too much like one of those terrible diet culture tips, but (a) I really like squash, (b) I had half a big one left in the fridge to use up, and (c) that yummy yummy jasmine rice is always hell on my blood sugar. Better to get some extra delicious vegetables, and hopefully avoid part of the rice spike.

Thai food is absolutely everywhere here, to the point that I decided to try one of these little jars of basic Swedish house-brand curry paste:

Obviously intended as one jar per single can of coconut milk-sized dish. It's Thai produced and actually not too bad on flavor, if (unsurprisingly) a little mild on the chiles. Which is easily enough adjusted if you need to. I will probably try some of their green version too. Though I may just go for one of the bigger tubs of Mae Ploy the next time I buy more red.

Mike is sick so chicken noodle soup seemed like a good idea. And a Thai-inspired one sounded even better to me. 

I made several modifications of this recipe:

I didn’t have any curry paste (I know, I know! That’s the main thing! But I was also feeling too lazy to go to the grocery store, so I subbed a teaspoon of curry powder instead. Totally different flavor but still good.)

I used red, orange, and yellow bell peppers, since that’s what I had.

I used stir-fry rice noodles, which I cooked separately as the recipe suggested.

I used a block of tofu instead of chicken.

I used more ginger than was called for (probably 1.5 or 2 tablespoons), and more garlic.

I topped it with cilantro and extra lime juice; Mike added sriracha to his, Michaela added soy sauce (don’t ask me why).

I wish I’d bought peanuts to chop and put on top. But otherwise, I would say this came out really well. Michaela asked for seconds, which doesn’t often happen when I cook. (LAME.)

Today, when I warmed some soup up for Mike’s lunch, I added crispy jalapenos to it (like the French fried onions used in green bean casserole, but jalapenos) and that added a delicious crunch and extra spice.
