Quale momento migliore se non quello estivo per raccogliersi intorno alle rilassanti braci… di un BBQ?
Sempre più oggi alla classica grigliata si affianca il BBQ tanto che lo scorso aprile presso il Brixia Forum di Brescia si è svolta con successo BBQ Expo, l’unica manifestazione in Italia interamente dedicata alla cultura del barbecue che ha fatto il pienone e guarda già al 2025.
Tantissimi gli espositori di attrezzature professionali e semiprofessionali, bracieri, gabbie argentine per la cottura indiretta, girarrosti, griglie ma anche affumicatori e accessori per la cucina. Fondamentale per la grigliata perfetta è anche il combustibile utilizzato e, ovviamente i rub e le infinite combinazioni di spezie che danno alla pietanza un sapore unico e inconfondibile.
BBQ Expo è stata un’occasione unica per incontrare gli esperti italiani e internazionali che si sono cimentati in corsi, workshop e momenti di showcooking per permettere al pubblico di scoprire tutti i segreti del barbecue così da poterlo realizzare anche a casa in modo professionale.
Durante l’evento bresciano si è svolto anche il Campionato internazionale Smokin’ ribs showdown sanzionato da KCBS. La competizione di BBQ made in USA è stata un’occasione per immergersi nella cultura e nelle tecniche di cottura del barbecue statunitense, tra cui spicca il metodo del low and slow.
Ma il barbecue non è solo una prerogativa americana: la fiera si è infatti aperta anche alle tradizioni culinarie di altre parti del mondo. Il barbecue giapponese, ad esempio, poco conosciuto ma altrettanto affascinante con il teppanyaki, che prevede l’impiego di una piastra a vista che permette un’interpretazione scenografica ma anche l’infinita varietà di yakitori, spiedini di pollo con marinature diverse. E poi lo yakiniku, con la classica crosticina che rende la carne particolarmente saporita, o il teriyaki, che non è solo una salsa ma una tecnica di cottura dove il cibo viene continuamente rivoltato sulla fonte di calore.

A relative feast prepared, though may be slightly more potent than expected for those not magically resistant. Not that Laios would care.

WAGAMAMA, NUOVO LOCALE ALL’INTERNO DEL BICOCCA VILLAGE
Wagamama amplia la propria offerta nel capoluogo lombardo con uno spazio all’interno della Food Court del Bicocca Village, un “entertainment center” che accoglie il brand nell’area esterna di fronte all’ingresso del centro commerciale. Per Wagamama questa è la settima sede italiana, la terza a Milano dopo quelle in Via S. Pietro all’Orto e nello Shopping District di CityLife: un nuovo locale con uno spazio interno per 168 coperti e 20 dipendenti. Il concept, gestito in Italia dalla società C&P (Chef Express e Percassi), è una catena di ristorazione specializzata nel segmento del casual dining.
Il locale offre un menù di oltre 50 piatti, spaziando dalle bowls di ramen alle profumate zuppe di noodles, proposte vegane e versioni mini per i bambini, il tradizionale donburi, una grande ciotola di riso cotto a vapore e servito con carne e/o verdure, il teppanyaki, noodles saltati sulla griglia con carne, verdure e/o pesce, i bao al vapore e i gyoza, ravioli ripieni di pollo o gamberi, verdure, maiale, anatra, fino ai piatti iconici come il pollo katsu curry. Per finire, un’ampia selezione di fresche centrifughe preparate al momento e una piccola selezione di dessert ispirati ai sapori asiatici. Oltre alla proposta del ristorante e all’ingresso dedicato per ordinare e ritirare take away in sicurezza, sarà presto disponibile l’opzione delivery, per la quale è stata creata un’apposita entrata con sala d’attesa per i rider.
