Low Carb Spiced Honey Cake With Cream Cheese Icing

My first Litha since my type 1 diabetes diagnoses is soon to be here, and in my opinion you just can’t celebrate the sabbat without something like a spiced honey cake. So I was determined to translate a typical recipe into something low carb so as to not need 50 units of insulin for the amount of slices I’m used to eating in one sitting. Hope this helps anyone looking else looking for a good low carb spiced honey cake!
INGREDIENTS
Cake
Nonstick vegetable oil spray
1½ cups all-purpose baking flour 
½ cup of blanched (finely ground) almond flour
1½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1½ teaspoons ground cinnamon
½ teaspoon ground ginger
⅛ teaspoon freshly grated nutmeg
½ cup vegetable oil
½ cup honey substitute
1 large egg
1 large egg yolk
½ vanilla bean, split lengthwise (or 2 teaspoons vanilla essence)
½ cup freshly squeezed orange juice (or 1 teaspoon orange extract)
½ cup whey or buttermilk
your choice of artificial sweetener, i recommend one of either:
18 teaspoons (or 18 packets) sucralose (e.g. splenda)
⅔ cup + 2 tbsp erythritol (e.g. nectresse)
8 teaspoons neotame (e.g. nutrasweet)
your choice of artificial brown sugar, i recommend one of either:
2 tablespoons Splenda brown sugar blend
¼ cup (packed) Sukrin gold brown sugar alternative
2 tablespoons Truvia brown sugar blend
Honey Substitute Using a honey substitute is the real key to making this low carb- aside from the artificial sweeteners instead of real sugar. Best of all, It’s incredibly simple. I found this recipe here.
2 tbsp bee pollen (18 g/ 0.6 oz)
1-2 tbsp warm water
½  cup Sukrin Fiber Syrup Clear (170 g/ 6 oz)
Blend the bee pollen with the warm water and pulse until creamy. Add the syrup and pulse until combined. Done! You just made honey, you smart little bee! Make sure to store in a tightly sealed jar to avoid it drying out.
Frosting and Assembly
3 ounces cream cheese, room temperature
3 tablespoons unsalted butter, room temperature
half a cup powdered sugar substitute of your choice (you can simply blend/stick in the food processor the sugar substitute of your choice to powder it.) note: this is typically equal to 8 packets. you should try your icing before serving, you know, just a few spoonfuls to make sure its sweet enough...
1 teaspoon finely grated lemon zest
Pinch of salt
½ vanilla bean, split lengthwise- or 1 teaspoon vanilla essence/extract
1 13.5-ounce can unsweetened coconut milk, cream separated from milk, room temperature
Bee pollen, fennel fronds, edible flowers, and berries (for serving/decoration; optional)
INSTRUCTIONS
Cake
Preheat oven to 350°. Coat a 9" cake pan with nonstick spray and line bottom with a parchment paper round. Whisk the flours, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg in a large bowl to combine.
Combine granulated sugar, brown sugar, oil, honey, egg, and egg yolk in another large bowl. Scrape in seeds from vanilla bean; discard pod. Using an electric mixer on medium speed, beat mixture until pale and thickened, about 4 minutes. Reduce speed to medium-low and gradually pour in orange juice and whey (or buttermilk). Beat until frothy, about 2 minutes. Reduce speed to low and gradually add dry ingredients; beat just until smooth and homogenous (it will be thin, like pancake batter).
Pour into prepared pan and bake until cake is golden brown and center springs back when gently pressed (a cake tester will not come out clean), 45–55 minutes. Transfer to a wire rack and let cool in pan, 20 minutes. Run a knife around edges of cake to loosen and invert onto rack; let cool completely.
Do Ahead: Cake can be baked 3 days ahead. Store tightly wrapped at room temperature.
Frosting and Assembly
Using an electric mixer on medium-high speed, beat cream cheese and butter in a medium bowl until smooth. Add powdered sugar, lemon zest, and salt and scrape in seeds from vanilla bean; discard pod. Beat on low speed until mixture is very light and thickened, about 2 minutes; scrape down sides of bowl. With motor running, add coconut cream by the tablespoonful and beat until very soft peaks form (save coconut milk for another use).
Pile frosting on top of cake and spread to edges (it’s okay if it cascades over the sides). Decorate with bee pollen, fennel fronds, flowers, and berries, if desired.
Slice into 8 equal pieces when ready to serve.

January Weigh-in 2019

In December I was at 286.4 so that means I’m down 4.2lbs!
I’m back into Keto normalcy, and in general I’m feeling better. I’ve got my medicine under control so my anxiety and depression are better and I’m fasting regularly.
This week I made a couple things, Cinnamon Rolls and Granola. The Cinnamon Rolls were pretty good! They use a very basic fathead dough. The icing was not quite there, I’ll have to experiment a little more to find a good icing recipe.
The Granola was made with Almonds, Macadamia Nuts, Hazelnuts, and Hemp Hearts. You crush up the nuts melt some butter and add in Cinnamon, a little bit of Brown sugar substitute, I used Sukrin Gold? And maybe another sweetener if needed. You layout the nut mixture on a pan and cover it in the melted butter mixture then roast it in the oven for awhile until it’s a nice golden brown. Mine looked really dark because I accidentally pour a lot more cinnamon in it! But it tasted good. I’m always looking for good recipes for my husband since he’s a truck driver, he needs to be able to grab snacks as he’s driving and eat on the go. Plus something relatively mess free, is ideal.
I haven’t figured out the exact macros on the granola but since my husband is more low carb he doesn’t worry about that stuff the way I do.
February is going to be interesting, it’s my birthday month and I have one party planned. My husband wanted to eat out as well, and... I’m not sure I want to do that after just getting back into a good Keto place. I really want to continue losing weight I’ve finally got some momentum buildt up, I really want to keep making progress as long as possible.

OPPSKRIFT -GROVE VAFLER
Som sagt lagde jeg grove vafler til de som kom på foredraget på mandag. Absolutt alt forsvant, alle synes de var gode og ønska oppskrift. Jeg hadde skrevet ut oppskriften sånn at alle fikk oppskriften på slutten av foredraget. 
Denne oppskriften er 2 porsjoner, 1 porsjon gir ca. 10-12 plater. 
3 dl sammalt hvetemel, grovmalt 
3 dl havremel, tok å knuste havregryn med stavmikser
2 dl hvetemel
1 ts bakepulver
1 ts salt
8-10 dl lettmelk
4 egg
4 ss flytende margarin/smeltet smør
Eventuelt søtning hvis en ønsker det, jeg brukte 2-3 ts med sukrin gold. 
Smelt smøret. Bland alle ingrediensene i en bolle og rør til en jevn røre. La den svelle i 3-5 minutter. 
Server med ønsket pålegg. Jeg serverte med rømme og syltetøy uten sukker!

Turned out good.. happy I have a new meal using ground beef. I used sukrin gold in place of the brown sugar. I also doubled the recipe but it still could’ve used more sauce so I’ll have to triple the sauce next time.

I use a silicone loaf pan but if you have a metal tin then it may be best to line it with wax or greaseproof paper to ensure that it is easy to remove from the pan when baked. Turn the batter into a loaf pan (2-pound size) and then sprinkle the sliced almonds on top. Bake for 40 minutes or until the top is golden and a toothpick inserted into the centre comes out clean. Cool and then serve warm, or store in an airtight container for up to 3 days. Note: The water is needed since coconut flour can be dryer than plain flour.
