Waffles with yogurt
80kcal per 60g. 5 waffles.

1,5dl low fat yogurt
1 egg
120g flour
1 tsp baking powder
1 tsp cinnamon
5g sugar free sugar (Natreen, sukrin, those)
1,5dl unsweetened almond milk
(optional: 1 tsp vanilla powder or chocolate powder)
wisp everything smooth in a bowl. 1/2 ladle scoop in the waffle iron. Wait until cooked. If ur beeps when itâs done, itâs done! Tada! Itâs done!

MÄ ikke smeltes! 1/2 dl FiberSirup, ahornsirup eller honning 1/4 - 1/2 plade mÞrk 70% chokolade, hakket SÊt ovnen pÄ 180 grader. Bland nÞddemel, bagepulver, vaniljepulver og salt i en skÄl. TilsÊt kokosolie og sirup. RÞr godt sammen. RÞr hakket chokolade i. SÊt kugler pÄ ca 1 spsk pÄ en bageplade med bagepapir. Bag i ovnen i 8-10 minutter. They are extremely soft which is a little bummer but hopefully that will change with time?
I doubled the sukrin instead of two separate sweeteners.. and cooked for 13min. Other than that I followed the recipe.

BEST KETO CHOCOLATE CAKEâ€ïž
1 cup coconut flour
1 cup unsweetened cocoa powder
1 1/2 cup low carb sweetener 1:1 sugar replacement
1/4 teaspoon monk fruit powder see note for alternative
1 teaspoon cinnamon
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon sea salt
1/2 cup coconut oil melted
8 large eggs beaten
2 teaspoons vanilla extract
4 cups zucchini shredded
Directions:
In large mixing bowl, combine coconut flour, cocoa, Sukrin+, monk fruit, cinnamon, baking soda, baking powder, and sea salt.
Mix in eggs, coconut oil, and vanilla until well combined.
Stir in zucchini (and optional chocolate chips if using).
Spread out into greased 9Ă13-inch pan (or two round 9-inch pans).
Bake at 350°F for about 30-40 minutes or until toothpick inserted in center comes out clean.
NOTE: smaller pans, such as 9-inch round pans should be checked around the 15 minute mark.
Cool on wire rack. Once cool, frost with chocolate buttercream frosting if desired.

Low Carb Spiced Honey Cake With Cream Cheese Icing

My first Litha since my type 1 diabetes diagnoses is soon to be here, and in my opinion you just canât celebrate the sabbat without something like a spiced honey cake. So I was determined to translate a typical recipe into something low carb so as to not need 50 units of insulin for the amount of slices Iâm used to eating in one sitting. Hope this helps anyone looking else looking for a good low carb spiced honey cake!
INGREDIENTS
Cake
Nonstick vegetable oil spray
1Âœ cups all-purpose baking flourÂ
œ cup of blanched (finely ground) almond flour
1œ teaspoons baking powder
œ teaspoon baking soda
œ teaspoon salt
1œ teaspoons ground cinnamon
œ teaspoon ground ginger
â
teaspoon freshly grated nutmeg
œ cup vegetable oil
œ cup honey substitute
1 large egg
1 large egg yolk
œ vanilla bean, split lengthwise (or 2 teaspoons vanilla essence)
œ cup freshly squeezed orange juice (or 1 teaspoon orange extract)
œ cup whey or buttermilk
your choice of artificial sweetener, i recommend one of either:
18 teaspoons (or 18 packets) sucralose (e.g. splenda)
â
cup + 2 tbsp erythritol (e.g. nectresse)
8 teaspoons neotame (e.g. nutrasweet)
your choice of artificial brown sugar, i recommend one of either:
2 tablespoons Splenda brown sugar blend
Œ cup (packed) Sukrin gold brown sugar alternative
2 tablespoons Truvia brown sugar blend
Honey Substitute Using a honey substitute is the real key to making this low carb- aside from the artificial sweeteners instead of real sugar. Best of all, Itâs incredibly simple. I found this recipe here.
2 tbsp bee pollen (18 g/ 0.6 oz)
1-2 tbsp warm water
œ  cup Sukrin Fiber Syrup Clear (170 g/ 6 oz)
Blend the bee pollen with the warm water and pulse until creamy. Add the syrup and pulse until combined. Done! You just made honey, you smart little bee! Make sure to store in a tightly sealed jar to avoid it drying out.
Frosting and Assembly
3 ounces cream cheese, room temperature
3 tablespoons unsalted butter, room temperature
half a cup powdered sugar substitute of your choice (you can simply blend/stick in the food processor the sugar substitute of your choice to powder it.) note: this is typically equal to 8 packets. you should try your icing before serving, you know, just a few spoonfuls to make sure its sweet enough...
1 teaspoon finely grated lemon zest
Pinch of salt
œ vanilla bean, split lengthwise- or 1 teaspoon vanilla essence/extract
1 13.5-ounce can unsweetened coconut milk, cream separated from milk, room temperature
Bee pollen, fennel fronds, edible flowers, and berries (for serving/decoration; optional)
INSTRUCTIONS
Cake
Preheat oven to 350°. Coat a 9" cake pan with nonstick spray and line bottom with a parchment paper round. Whisk the flours, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg in a large bowl to combine.
Combine granulated sugar, brown sugar, oil, honey, egg, and egg yolk in another large bowl. Scrape in seeds from vanilla bean; discard pod. Using an electric mixer on medium speed, beat mixture until pale and thickened, about 4 minutes. Reduce speed to medium-low and gradually pour in orange juice and whey (or buttermilk). Beat until frothy, about 2 minutes. Reduce speed to low and gradually add dry ingredients; beat just until smooth and homogenous (it will be thin, like pancake batter).
Pour into prepared pan and bake until cake is golden brown and center springs back when gently pressed (a cake tester will not come out clean), 45â55 minutes. Transfer to a wire rack and let cool in pan, 20 minutes. Run a knife around edges of cake to loosen and invert onto rack; let cool completely.
Do Ahead: Cake can be baked 3 days ahead. Store tightly wrapped at room temperature.
Frosting and Assembly
Using an electric mixer on medium-high speed, beat cream cheese and butter in a medium bowl until smooth. Add powdered sugar, lemon zest, and salt and scrape in seeds from vanilla bean; discard pod. Beat on low speed until mixture is very light and thickened, about 2 minutes; scrape down sides of bowl. With motor running, add coconut cream by the tablespoonful and beat until very soft peaks form (save coconut milk for another use).
Pile frosting on top of cake and spread to edges (itâs okay if it cascades over the sides). Decorate with bee pollen, fennel fronds, flowers, and berries, if desired.
Slice into 8 equal pieces when ready to serve.
Note: Nutrition facts may vary slightly depending on which sugar substitutes are used. This calculation uses Splenda for itâs sugars. - Again, the original recipe and the above image for this cake was found on bonappetit.
