i'm gonna kick your butt re: salad opinions

I'm not a salad aficionado but there's like, two kinds of salads that are good. Savory and sweet.

Savory should have a spinach base, plus pickled red onions, roast chicken/tofu, banana peppers, diced off-the-vine tomato (NOT CHERRY TOMATOS OR A SOGGY VARIETY, WE LIKE FIRMNESS HERE), maybe some fresh garlic. Maybe some kinda light Italian dressing but not much. Olives only should be eaten whole from the jar/can like a goblin

Sweet should be like. A mixed green base, plus candied pecans (or plain peanuts), some fruits such as strawberry, mandarin orange (the type with no pith), and apple slices, feta cheese, plus lemon juice overtop and/or raspberry vinaigrette.

Every time i tell ppl i cant eat bread theyre like oh is it a celiac thing? And im like idk how would i know that jfjdj im supposed to recognize patterns of sensations in my body and be able to identify them? Sounds fake. I just know that 95% of types of bread seem like theyd be an ambiguously bad experience when i think abt eating them hfhdh even the ones i like

Courgette & butterbean bowl

INGREDIENTS

2 × large courgettes, cut in half and then into wonky triangles

8-10 cloves garlic

5 tbsp good quality extra virgin olive oil

Salt and pepper

2 × 400g tins of pre cooked organic butterbeans + their stock (the water in the can)

For the cashew cream, blend:

1 cup of soaked cashews or sunflower seeds

3 tbsp nooch

Juice of one lemon

1/2 tsp salt

Ground black pepper

2 garlic cloves

Around 60-80ml of water for blending consistency

To serve:

Crunchy nutty breadcrumbs (1 slice of bread and 1 handful of almonds whizzed up in a blender, fried in olive oil, salt and garlic powder until crispy. Let rest on a plate lined with kitchen roll until ready to use)

Fresh basil

Lemon zest
