#positiveliving in #Malaysia wishes yall God blesses Monday evening rest as we count down to New Year 2022. Presents here my simple kitchen wares plus necessity to get me into the mood of simple home cooking, and cleanliness is utmost important @ the kitchen table top which is currently my work station in between lazing @ home and watching Astro movies with my hubby dearest. Since thereβs nothing much raw ingredients @ home these are the few simple dishes that I can cook up with room for improvement, of course. As those who are aware that besides fresh raw ingredients are necessary for any cooking plus seasoning used, fresh clean and safe to use water from our home tap is equally important. This is why we have a unit of @amwaymy @espringwatertreatment @ home, so as I can cook in peace of mind as we wonβt know whether our water supply to the neighbourhood is 100% safe for our household usages. 23.1.2018 : Tuesday : Lunch : Homecook β’ Shrimp π€ and Mushroom π Risoni π β’ Very similar to risotto minus the alcohol. β’ Shrimp and Mushroom Risoni #lifeasmrsyeocooksrecipe ππΌ Ingredients: 1/2 cup of risoni 2 cloves garlic (minced) 1 pack brown shimeiji mushroom (roots removed) 18 shrimps (devein and rinsed) 3 tbsp marinara sauce Chicken stock ____________________________________________ Method: 1. Heat oil on a pan, add garlic and stir fry until fragrant then add mushroom. Continue to stir until the mushroom reduced in size. 2. Add risoni and give it a quick stir before adding chicken stock one laddle at a time. Continue to stir. When stock gets dried up add another laddle. Repeat for for about 10 minutes. 3. Test to see if the risoni is soft and cooked. 4. Turn off heat, cover with lid and let it for 5 minutes. 5. β’ π¨π»π©π»π¦π»+π©π» β’ 13.11.2017 : Monday : Dinner : Homecook β’ Chicken π Lap Cheong π· Claypot Rice π Lotus Root π₯ Peanut π² Soup β’ Super easy claypot rice made with rice cooker #lifeasmrsyeocooksrecipe ππΌ Chicken π Lap Cheong π· Claypot Rice π Ingredients: 1 1/2 cups of rice (rinse a few rounds until water is clear) 1 boneless chicken leg (cut into bite sized pieces) 3 cloves of garlic (minced) 3 shallots (chopped) 1 lap cheong (outer layer removed and sliced thinly) 3 dried shiitake mushroom (soaked and sliced thinly, reserve soaking water) Dark caramel sauce Fried shallot Spring onion Sambal chilli sauce (A) 1 tbsp oyster sauce 1 tbsp soy sauce 1/2 tbsp hua diao wine Dashes of pepper Dashes of sesame oil 1/2 tsp corn flour .................................................................... Method: 1. Heat oil in pan, stir fry garlic and onion until fragrant.Add lap cheong and mushroom. Continue to stir fry for another 5 minutes. Set aside. 2. Add rice to rice cooker. Fill water from soaking mushroom up until 1 cup indicator. Add stir fried garlic, onion, lap cheong, mushroom and chicken. 3. Choose white rice function and press start. 4. When rice is ready, let it steep in warm function for a further 5-10 minutes. 5. Drizzle dark caramel sauce over cooked rice, mix everything evenly. Tomato Chilled βοΈ Beansprout π± β’ #lifeasmrsyeocooksrecipe ππΌ Chilled Beansprout Ingredients: 300g beansprouts (roots removed) 1 tbsp premium soy sauce** 1/2 tsp sesame oil 1/2 tsp shallot oil ____________________________________________ Method: 1. Bring a big pot of water to boil. Blanched beansprout for 1.5 minutes. 2. Drain well on colander and set aside to cool down. 3. Add soy sauce, shallot oil and sesame oil in a mixing bowl. Transfer drained beansprout to mixing bowl and toss well. β’ One of the many versions of my homemade stock β’ lifeasmrsyeocooksrecipe ππΌ What went in the pressure cooker: 1 1.7kg chicken (fats removed) 3 tbsp sea salt 6 cloves garlic A bunch of spring onion 3 ribs of celery (cut into sections to fit in pot) 2l water ____________________________________________ Method: 1. Remove and discard chicken head. Scrub the whole chicken with sea salt. Rinse thoroughly. 2. Add all ingredients into pressure cooker. Make sure water don't go above the maximum water level indicator (depending on size of your chicken, mine required 2l of water exactly. Adjust accordingly) 3. Close lid, put vent to seal, select pressure mode to soup. Increase time to 00:59 and press start. 4. The cooker will now heat up the content, start and maintain pressure. By now you should be able to smell the fragrant aroma coming out. 5. Wait patiently and do not touch the vent. 6. When time is up, cooker will beep. You may now release pressure by turning the vent to vent. **IMPORTANT: DO NOT do this step with your bare hands. Use a clean damp cloth, cover the vent, and use a chopstick to slowly push the vent with the cloth over the vent. If you don't do this, soup will splatter all over the kitchen. OR If time permits, wait for 30 minutes after the time is up, before releasing the vent. Wait for the pressure knob to drop before doing so. After the pressure knob drop, there should not be any splattering mess and there is no more pressure inside the pot forcing the content out. 7. Open lid. Remove chicken, spring onion, celery and garlic cloves form pot. Discard everything*. Sieve oil. 8. With the lid open, select sautΓ©/sear/high temp mode. Boil for 10 minutes uncovered. 9. Off cooker and let stock cool before portioning. *you may still keep the chicken for other dishes like porridge or egg drop soup or hot and sour soup. The chicken will be tasteless after cooking but I dip the chicken in chilli soy sauce.
