I want everyone to be able to have a comforting meal when things are tough so I am making a simplified version of the congee that I eat each morning available for all the stomachache havers and breakfast skippers <3 trust your gut!!! Recipe:
In a medium to large pot bring 7 cups of water or broth to a gentle boil, then add 1 cup to rinsed short grain or jasmine rice.
Add in a teaspoon of ground ginger and a big pinch of salt.
Bring back to a simmer then partially cover and let cook on medium low heat for 24 minutes without touching.
Turn off the heat and whisk rapidly for 5 minutes or until the rice grains are broken up and the gooey texture is formed!
Finish with finely chopped scallion, toasted sesame oil, and I like to add cooked shrimp or bacon!
If you struggle to get in your fiber you can add a cup of adzuki beans too and it goes together beautifully

Late breakfast came packed from the coffee shop near to our house. Mum had the Braised Duck Porridge (卤鸭粥) with braised peanuts, extra duck meat and no skin. The plain congee had a ladle of the dark fragrant braising sauce added to give it flavours.
My Economy Rice (菜饭) box had a large braised pork belly taking up half the space with stewed eggplant (aubergine / brinjal) and sweet & sour pork taking up the rest of the box.

For dinner tonight, homemade congee -- savory rice porridge -- that sticks to the bone.
Homemade Congee
For 4 servings:
Congee:
1 cup [uncooked] long grain rice
4 cups bone broth [chicken or beef]
3 cups water
1 tsp. Kosher salt
Combine all the ingredients together in a small pot. Bring to a boil; simmer on the stove for at least 1-hour and cooked down to desired texture. (I don’t like my rice too broken down.)
Common congee seasonings include green onions, ginger, roasted peanuts, egg, pork floss and so much more. But for this recipe, I added duck to mine!
Duck Breast (the lazy air-fryer version) -- Optional:
12-ounces Moulard duck breast
1/2 teaspoon five spice
1/4 teaspoon kosher salt
1 tbsp. vegetable oil
Pat dry the skin on the duck breast with a clean paper towel. Score the skin with a crosshatch pattern. Add seasonings and oil on the skin, spreading evenly. Cook in an air fryer at 400F for 15 minutes -- the internal temperature should be around 130F. Slice before serving with congee.

Ginger scallion congee with goji berries, seaweed, bonito flakes, shrimp, egg, chili sauce, taiwanese salt, and toasted sesame oil
Cooking can be really hard when I'm feeling sick but my husband rubbed tiger balm on my back, I ate a clementine, and it gave me enough energy to still make a nourishing meal that would satisfy how extra picky I get when I'm not feeling well <3

There was a congee recipe on my dash a week or so ago and I've been fiddling with it to shrink it down because I'm the only person in the house who'll eat it and I think I've cracked it this morning!
1/4 cup rice (I've used pudding rice and jasmine rice, and liked the pudding rice texture best)
1 + 3/4 cups water
Pinch salt, adjusted to taste
1/2 teaspoon dried ginger / 1 teaspoon minced ginger
Dried shrimp, diced (I didn't measure but it looked like maybe 1/2 tablespoon worth idk)
Topped with crispy dried onion
(other nice toppings are soya sauce, sesame seed oil, fresh Chinese chives or scallion)
Boil the water, then add the rice, ginger, shrimp and a pinch of salt. Cover, reduce heat, and simmer for 25–30 minutes.
Remove from heat and whisk quickly until the rice is all broken down and the mixture thickens.
Sprinkle with chosen toppings and enjoy
Tip: if you rinse then freeze rice overnight and use straight from the freezer it halves the cooking time, according to this Woks of Life recipe. Haven't tried that recipe myself yet but I really want to
