One of my most vulnerable periods came from culinary school. Although I didn't enter with this fist full of arrogance, it was hard to digest the notion that you have to throw away most of your home cooking practices to cook for the masses. Ever dab a little bit of salt and drink water to clear off your palate? That was my culinary experience. I had to learn the proper way of holding a knife, whipping something with a different hand placement and took away old practices that stemmed from nostalgia that served no timely purpose. There were things that school enhanced that was engrained in me: If you love what you do, it permeate through your cooking. Even when you feel overwhelmed, you always have control. Don't be afraid to experiment, ask questions or learn from others (unless it's going to kill someone). Your confidence can show through your 'art', even when you're doubtful. Food can make you feel; a connection can make you love. Whenever I have the opportunity to make a dish - big or small - I want to always let my guest know that I put love into it from the moment that I knew I was making it for them. I'm grateful for the opportunity that I had for several days to cook for 22 incredible women. While cooking, I learned what made each person unique. I hope that I left a good taste in your mouths as well. And if you didn't get anything from my tutorial: "If you burn anything, it's Cajun..."😂😂😂. I borrowed this advice from a former instructor. • One of the many versions of my homemade stock • lifeasmrsyeocooksrecipe 👇🏼 What went in the pressure cooker: 1 1.7kg chicken (fats removed) 3 tbsp sea salt 6 cloves garlic A bunch of spring onion 3 ribs of celery (cut into sections to fit in pot) 2l water ____________________________________________ Method: 1. Remove and discard chicken head. Scrub the whole chicken with sea salt. Rinse thoroughly. 2. Add all ingredients into pressure cooker. Make sure water don't go above the maximum water level indicator (depending on size of your chicken, mine required 2l of water exactly. Adjust accordingly) 3. Close lid, put vent to seal, select pressure mode to soup. Increase time to 00:59 and press start. 4. The cooker will now heat up the content, start and maintain pressure. By now you should be able to smell the fragrant aroma coming out. 5. Wait patiently and do not touch the vent. 6. When time is up, cooker will beep. You may now release pressure by turning the vent to vent. **IMPORTANT: DO NOT do this step with your bare hands. Use a clean damp cloth, cover the vent, and use a chopstick to slowly push the vent with the cloth over the vent. If you don't do this, soup will splatter all over the kitchen. OR If time permits, wait for 30 minutes after the time is up, before releasing the vent. Wait for the pressure knob to drop before doing so. After the pressure knob drop, there should not be any splattering mess and there is no more pressure inside the pot forcing the content out. 7. Open lid. Remove chicken, spring onion, celery and garlic cloves form pot. Discard everything*. Sieve oil. 8. With the lid open, select sauté/sear/high temp mode. Boil for 10 minutes uncovered. 9. Off cooker and let stock cool before portioning. *you may still keep the chicken for other dishes like porridge or egg drop soup or hot and sour soup. The chicken will be tasteless after cooking but I dip the chicken in chilli soy sauce. Rest day today. I fought exceptionally hard not to go outside for a run. I tend to feel off when I don't workout, especially when my mind is heavy. I threw my energy into other areas today: Recording the podcast with @300poundsandrunning, emails, cleaning and cooking. Cooking is therapeutic for me. I use these moments to make peace with things outside of my control. When I am in the kitchen, it's the closest to having a conversation with my father that I can have. Tonight I pretended to make a meal for my babies. This grieving shit is hard. Today marks a year since I found out I had a vanishing twin; tomorrow is the anniversary of losing them both. I remember shutting out the world at this very moment. I vowed to quit running. I hated everything and everyone for circumstances beyond my control. And then I found myself in my kitchen, playing music that allowed me to have a conversation with my father. I thought about what he would say and just like a year ago, I knew there's work left to do. And so, I moved. When I lost him back in '09, a friend told me to make a plate at the head of the table and tell everyone not to touch it. Tonight, I made a meal to honor them. I wanted to make it extra special to celebrate the life that's still here. My babies may not be here on earth but I am reminded that life is a gift through them; this is how I know my dad is still talking and protecting me. I hope he's watching over my angels too.
