having the most delicious dinner rn i buy this shahi paneer mix and eat it over basmati but there's always extra sauce left, so today i did red bell peppers and fried them with a little cumin and fennel seed (overkill, but i like when the little toasted seeds burst between your teeth) and then scrambled two eggs into the sauteed peppers and THEN just as the eggs were done cooking i put the leftover sauce and some feta on them and mixed it around so the feta would melt a bit and stuck it all in a bowl with the last of the basmati and oh my god dude . there's STILL sauce left over too so i could do it all over again tomorrow
#you better believe im eating it all with a good old pair of chopped stick too . not a traditionally indian food utensil but who gives a shit#absolutely nothing missing but maybe a few fresh cilantro leaves for garnish but i didnt have any . not even parsley#highly recommend esp with a g&t which is what im drinking to wash down the sauce . nice n cooling to offset the chili

Deciphering the Enigmatic Delights of Sevai and Shahi Kheer Packets
This sweet reverie sways taste buds with an equilibrium of saccharine seduction and cardamom’s sotto voce serenades. Yet, its painstaking preparation from scratch can beguile the hours of one’s day. Enter sevai kheer packet, the modern saviors of Epicurean time. These parcels often house pre-toasted vermicelli, masterfully pruning the cooking chronicle.

recipe is from The Nutmeg Trail by Eleanor Ford!
Royal Saffron Paneer (Shahi Paneer)
Serves 4
Ingredients:
1 tablespoon neutral oil
1 onion, finely chopped
400g ripe tomatoes finely chopped, or one 14oz can
4 green cardamom pods, bruised
2 cloves
1 teaspoon ground turmeric
1 teaspoon Kashmiri chili powder, plus extra to serve
1 teaspoon grated jaggery or sugar
1 teaspoon fine sea salt
450g/1lb paneer
1/4 teaspoon saffron strands
1 teaspoon rose water or kewra water
125ml (1/2 cup) thick cream
Instructions:
Heat oil in a pan and cook the onion until soft and golden. Add the tomatoes, cardamom, cloves, turmeric and chili powder. Season with jaggery and salt. Bring to a simmer and cook for 15 minutes.
Meanwhile, cut the paneer into bite sized cubes and put in a bowl. Pour over boiling water, cover and set aside for 10 minutes to soften. (There is no need to soak if you are using homemade paneer).
Toast the saffron in a dry pan for just a few moments, you want to wake it up not scorch it. Tip into a small bowl and crush to a powder with the back of a spoon. Add a tablespoon of hot water and leave to infuse.
When you are ready to serve, drain the paneer and add it to the hot pan of spiced tomato. Simmer for 2 minutes. Stir in the saffron infusion, rose water and all but a dribble of the cream. Warm through.
Serve with the reserved cream, white dropped lacily on saffron yellow, and a red dusting of chili powder.
My notes: --Add the tomatoes last in the first step if doing a tarka. Start with the oil, then add whole spices, then the onion, then the ground spices. The tomatoes will add lots of moisture and bring down the overall temperature, so they need to go in last. --You can also blend the tomato/spice/onion mixture before adding the paneer if you would rather it be smooth. Remove the cloves and cardamom first. --You can find various substitutes for double cream in the US; I used a coconut milk based heavy cream substitute. --Taste at the end; if too acidic due to the tomatoes, add a bit more sugar. --I served this with basmati rice cooked with ghee, onion, clove, cumin seeds, cardamom pods, and a cinnamon stick.
I made shahi paneer with saffron threads and rose water and it's sooooo good.

Paneer in Diet is the most Trending, But Why?
Introduction – First, we start by knowing about history and facts about the evolution and history of Paneer. The name paneer comes from the word “peynir,” which means cheese in the Turkish Persian language. It is originated from the Indian subcontinent and introduced in India by Persians and Afghans in the 16th century. I know that we all Indians are very confident that Indian people originate Paneer. Still, it is all myth, I also think similarly, but I came to know about the fact while reading a magazine that was on dairy products. If we went to a few years back, Paneer was very special, and whenever we went to any parties and marriage, we find various dishes of Paneer with mind-blowing tastes. But with time everything changed, nowadays you will find Paneer in every home, and it has become very trendy in our Diet. Technology makes everything simple and handy, which means without making any efforts; one can easily buy online Paneer at the best price from milk delivery apps.
Nutritional facts of Paneer – Let’s learn about the nutritional facts of Paneer available per 100 g, as we all are aware that it is good for maintaining good health.
Calories – 265 kcal fat – 21 g
Protein – 18 g
Carbohydrate – 1.2g
Calcium - 208 mg
Zinc - 2.7 mg
Magnesium - 26.6 mg
Benefits of Paneer
While reading an article that was completely on Paneer, I learned about the different types of Paneer. I like to mention the different types of Paneer such as low-fat Paneer, soy paneer, filled Paneer, fiber-enriched low fat paneer, and conventional Paneer (made of buffalo milk in old times by halwais), etc. Apart from all that, I believe in consuming homemade and fresh Paneer that satisfies my hungry tummy. Some benefits of Paneer I would like to list out here are:-
· Paneer contains minerals, proteins, zinc, calcium, magnesium, and vitamins like B12, D, C, A, and folic acid.
· Eating Paneer is good for the health of pregnant women, kids, babies, and adults.
· Paneer has healthy fats, which play a great role in losing fat from the body.
· Paneer is also good development of healthy bones because of nutrients like vitamin D and Calcium.
· Paneer is also best for folks suffering from diabetes; it helps improve the digestive system and save your body from problems like constipation.
· Nutrients in Paneer promote good bone health, lower blood pressure, reduce the risk of cancer, boost immunity, and manage blood sugar levels.
Healthy Paneer Recipes
Paneer is one of the favorite dairy products in India, used in preparing various mouth-watering dishes for our upset stomach. We Indians love to eat different types of food which tastes awesome. Different types of recipes made from Paneer loved by people such as Matar paneer, Methi Malai Matar, kadhai Paneer, Shahi Paneer, Paneer chilly, Paneer roll, Paneer 65, and many more.
I would like to list out some healthy versions of paneer recipes like:-
Saute Paneer with Broccoli and Carrot, Paneer Tikka, Paneer Toast, Paneer roasted in a spoon of ghee, Paneer Bhurji, and paneer paratha.
Desserts made of Paneer: - Rasgulla, Ras Malai, Malai Chap, Cham Cham, Sandesh (Bengali Sweet), Paneer Burfi, and Paneer Kheer etc.
Conclusion – Paneer is the most health by-product of milk; it assists the overall development of our body like good for bones, immunity, and weight loss. We can consume Paneer in moderation to keep our body healthy and functioning properly without any problem. But the main point is to eat fresh and pure Paneer prepared from 100% pure milk. So always buy your dairy products from genuine and reputed brands. One health suggestion I would like to add here is don’t overeat anything and try to eat everything in moderation which is helpful to maintain good health and save you from digestion-related problems that lead to lifestyle diseases.

Big Ohio Trip Day 1/13
Breakfast - At Home —> omelet, potatos, and toast (>30 carbs)
Lunch - At Home —> Taco Bell (>30 carbs)
Snack - half of my favorite candy (15 carbs)
Dinner - frozen shahi paneer and a bag of Doritos (25 carbs)
Snack - included photo (11 carbs) —really yummy—
Not bad at all! All safe foods. Didn’t exercise today but I did carry a 20-30 pound bag around an airport so that’s good. Weigh in tomorrow. In the meanwhile I’m exhausted. Traveling is soooo exhausting.
