The #prepared #gardener has a #plethora of #sunchokes aka #jerusalemartichoke available, once the soil can be accessed from the harsh #winter and before they start to sprout again. These #tubers are #fullofgoodness & #nourishment - and can be used just as you would potatoes cooked. Plus, they can be eaten raw! #delicious #nutritious #permaculture #gardening - just my style! I will continue to champion these to others in the pursuit of #selfsuffuciency ! Literally, I have bushels of these available to me underground I didn't have to store or process in my home for winter. They have a shelf life much shorter than other tubers. Let the dirt dry on them as best you can when you first bring them in. Brush them off as best you can & get them in the fridge within a day. They will keep a week or 2, depending on how they are stored. Use them up & enjoy them.
