It's been raining for so long... We had a gorgeous day on Saturday and I mulched the chicken yard only to have it rain all day Sunday, Monday evening and most of yesterday. Unfortunately, that leads to muddy eggs. POGGIO DIAVOLINO, GALLINE DI RAZZE ANTICHE E UOVA COLORATE

Poggio Diavolino (poggiodiavolino.it) è una bella realtà agricola a due passi da Suvereto, in provincia di Livorno, territorio noto alle cronache gastronomiche per i vini di qualità e la presenza di cantine importanti. E infatti l’azienda produce olio evo, coltiva farine da grani antichi, ha un piccolo allevamento di suini e trasforma le carni di Cinta Senese e Landrace in salumi: guanciale, capicollo, salsicce, lombetto, porchetta, ecc…

L’agricoltore Fabiano Busdraghi, però, ex fotografo laureato in Fisica e Oceanografia, ha deciso di fare anche qualcosa di più originale: allevare razze di galline antiche ornamentali che fanno uova colorate. APoggio Diavolino troviamo 8 razze di polli, galline e galli antichi ornamentali, razze un tempo abbandonate perché poco redditizie. Tra queste si aggirano in pollaio la Ayan Cemani, una razza indonesiana completamente nera, anche nella carne e nelle ossa, poiché accumula continuamente melanina nei tessuti. Considerata sacra, questa razza arriva a costare 3-4.000 euro a capo. C’è la Araucana, razza precolombiana senza coda, che “sforna” uova azzurre, dal tuorlo azzurro e ceruleo; la Olive Egger, razza nata da un incrocio tra la Marans e la Araucana, che fa uova color cioccolato fondente grazie alle ghiandole coloranti presenti nell’ovodotto; la Moroseta dell’estremo Oriente, graziosa, delicata e dal piumaggio setoso; la razza turca Denizli, la più artistica di tutte, allevata per la sua bellezza e soprattutto per la lunghezza del canto. Quando il gallo si schiarisce l’ugola arriva a cantare senza pausa fino a 20 secondi.
